¾ cup natural, unsalted creamy peanut butter
¼ cup + 2 tablespoons pure maple syrup
1 ¼ cups rolled oats
2 ½ tablespoons unsweetened cocoa powder or raw cacao powder

Steps:

  • Line an 8-inch square baking pan with parchment paper or wax paper. Set aside.
  • In a large, microwave-safe bowl, add peanut butter and maple syrup. Whisk together until well mixed.
  • Heat in 20-second increments in the microwave until warm and fragrant, and the mixture begins to dry out and become fluffy (about 4-7 rounds). Whisk in between heating increments. *Stovetop Instructions in Notes.
  • Add oats and cocoa powder to the peanut butter mixture. Stir and fold until thoroughly combined.
  • Pour this mixture into the prepared baking pan. Using the rubber spatula, smooth into an even, tightly packed layer.

1 cup regular rolled oats
0.25 cup light-color corn syrup
0.25 cup peanut butter
3 tablespoon packed brown sugar
2 tablespoon butter
2 tablespoon honey
1 tablespoon vanilla
0.5 teaspoon salt
2 cup crisp rice cereal
0.75 cup coarsely broken pretzel sticks
0.25 cup toasted wheat germ
2 tablespoon chia seeds
0.25 cup miniature semisweet chocolate pieces

Steps:

  • Preheat oven to 350°F. Line a 13x9x2-inch baking pan with foil. Coat foil with cooking spray; set aside. Spread oats in a 15x10x1-inch baking pan. Bake for 10 to 15 minutes or until toasted, stirring twice. Remove from oven; let cool. Reduce oven temperature to 300°F.
  • Meanwhile in a small saucepan combine the corn syrup, peanut butter, brown sugar, butter, and honey. Heat and stir over medium heat just until peanut butter and brown sugar are melted. Remove from heat. Stir in vanilla and salt.
  • In a large bowl combine the toasted oats, rice cereal, pretzels, wheat germ, and chia seeds. Stir to combine. Pour corn syrup mixture over oat mixture. Stir to combine.
  • Press oat mixture into the prepared baking dish. Sprinkle chocolate pieces evenly over the top. Press chocolate pieces firmly into oat mixture. Bake for 12 to 15 minutes or until firm. Cool completely in pan on a wire rack.

These easy no bake chocolate peanut butter granola bars are the perfect make ahead healthy snack or on-the-go breakfast that kids will love!

¼ cup honey
¼ cup unsalted butter
⅓ cup brown sugar
1 teaspoon vanilla extract
¼ teaspoon Kosher salt
½ cup creamy peanut butter
2 ½ cups old-fashioned rolled oats
½ cup roasted salted peanuts
¼ cup mini chocolate chips

Steps:

  • Line a 9x9-inch baking dish with parchment paper so that some of the parchment hangs over two sides. Spray with cooking spray.
  • Add the honey, butter, and brown sugar to a medium saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring occasionally. Let the mixture come to a light bubble for 1 minute while stirring.
  • When the butter mixture is ready, remove it from the heat, and stir in the vanilla, salt, and peanut butter.
  • Add the oats and the peanuts to the saucepan, and stir to combine. Make sure none of the oats are dry.
  • Place all of the oat mixture in the prepared pan. Use a rubber spatula or the bottom of a greased measuring cup to press firmly the mixture into the pan very well.
  • Let this cool for about 10 minutes before sprinkling the mini chocolate chips over the top. Press the chocolate chips into the granola bars with the bottom of a measuring cup.
  • Let the granola bars cool for at least 2 hours. Lift the bars from the pan using the edges of the parchment, and place them on a cutting board. Cut into desired shape and size and serve.

2 1/2 cups old fashioned rolled oats
1/2 cup raw sunflower seeds
1 cup sliced almonds
1/2 cup light brown sugar ((loosely packed))
1/2 cup peanut butter ((I used natural peanut butter with no sugar added))
1/4 cup coconut oil ((I used refined so it doesn't taste like coconut))
2 teaspoons vanilla
1/2 cup powdered stevia for baking
1/2 teaspoon salt
1/4 cup chocolate chips ((I used stevia sweetened chips))
1/2 teaspoon coconut oil

Steps:

  • Spray a 7x11-inch baking pan with cooking spray and set aside. Preheat the oven to 350 degrees F.
  • Spread the oats, sunflower seeds, and almonds onto a half-sheet pan. Place in the oven and toast for 15-20 minutes or until the almonds are a light golden brown. Check the pan at 15 minutes. Watch closely, so the nuts don't burn.
  • In the meantime, combine the brown sugar, peanut butter, coconut oil, extract and salt in a medium saucepan and place over medium heat. Cook until the peanut butter is melted and sugar is dissolved. Remove from heat and stir in the stevia.
  • Once the oat mixture is done, remove it from the oven and reduce the heat to 300 degrees F. Immediately add the oat mixture to the liquid mixture, and stir to combine. Turn mixture out into the prepared baking pan and press down, evenly distributing the mixture in the pan and place in the oven to bake for 25 minutes. Remove from the oven and allow to cool completely. Cut into 12 rectangular bars and add topping.
  • For the topping, microwave the chocolate chips and coconut oil in a microwave safe bowl for 30 seconds on high. Stir until completely smooth. Heat for 15 more seconds, if needed. Drizzle over bars. They're ready to eat. If you want the chocolate to set, place in refrigerator for about 30 minutes. Store in an airtight container for up to a week.

  • Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray. Combine oats and cereal.

3/4 cup lightly salted dry roasted peanuts, coarsely chopped
3/4 cup wheat germ
3/4 cup sunflower kernels
