1-1/2 cups cold fat-free milk
1 package (1.4 ounces) sugar-free instant chocolate pudding mix
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1 cup miniature marshmallows
2 packages (9 ounces each) chocolate wafers

Steps:

  • For filling, whisk milk and pudding mix 2 minutes; let stand 2 minutes. Fold in whipped topping, then marshmallows. , For each sandwich, spread about 2 tablespoons filling onto bottom of a wafer; top with another wafer. Stack sandwiches in covered containers., Freeze until firm, about 3 hours. Remove from freezer 5 minutes before serving.

2 large egg yolks
1/2 cup sugar
3 tablespoons cornstarch
3 cups whole milk
5 ounces bittersweet or semisweet chocolate, chopped
Pinch of salt
1 tablespoon vanilla extract
1 cup heavy cream
1 tablespoon sugar
1/4 teaspoon ground cinnamon

Steps:

  • Make the pudding: Whisk the egg yolks, sugar and cornstarch in a large bowl.
  • Combine the milk, chocolate and salt in a saucepan over medium heat and stir until the chocolate melts. Gradually pour the hot chocolate mixture into the egg mixture, whisking constantly. Pour back into the saucepan and stir until thick, 12 to 15 minutes. Remove from the heat and stir in the vanilla, then divide among 6 to 8 dessert cups or dishes. Cover with plastic wrap and refrigerate until set, about 2 hours.
  • Meanwhile, make the cinnamon cream: Whip the cream with the sugar in a bowl until it just holds soft peaks; fold in the cinnamon. Serve with the pudding.

  • In a bowl, whisk milk and pudding mix for 2 minutes or until slightly thickened. Fold in whipped topping and marshmallows. For each sandwich, spread about 2 tablespoons of pudding mixture on a chocolate wafer; top with another wafer. Stack sandwiches in an airtight container. Freeze until firm, about 3 hours. Remove from the freezer 5 minutes before serving.

1 (8 ounce) package cream cheese, softened
2 cups cold milk
1 (3 1/2 ounce) package instant pudding mix, any flavor
1 cup non-dairy whipped topping, thawed
36 graham crackers, squares

Steps:

  • Beat cream cheese with mixer in large bowl until smooth (you really need an electric mixer to get this fluffy enough).
  • Gradually blend milk into cream cheese.
  • Add pudding powder and beat 2 minutes.
  • Fold whipped topping in gently.
  • On each of 18 graham squares, spoon approx 1/4 c pudding mixture and top with second graham square.
  • Wrap each sandwich individually in plastic wrap.
  • Freeze at least 4 hrs or until firm.

1 package chocolate flavor instant pudding and pie filling mix (4 serving size)
1 (8 ounce) container Cool Whip, thawed
1 cup miniature marshmallow
1 (9 ounce) package chocolate wafer cookies (about 44 cookies)

Steps:

  • Pour milk into lge bowl and add pudding mix.
  • Beat with wire whisk until well blended, 1 to 2 minutes, then gently stir in whipped topping and marshmallows.
  • For each sandwich, spread about 2 tbs pudding mixture onto each of 2 cookies.
  • Lightly press together to form sandwich and wrap each sandwich with plastic wrap.
  • Repeat with remaining cookies and pudding mixture.
  • Freeze until firm, about 6 hrs or overnight.
  • Remove sandwiches from freezer about 5 minutes before serving.
  • Let stand at room temperture to soften lightly.
  • Store any leftover sandwiches in freezer in plastic bag or airtight container.
  • The cooking time is the freezing time.
