Number Of Ingredients 8

1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture (mixture will be thick)., Drop dough in batches by tablespoonfuls 3-4 in. apart onto a greased preheated waffle iron. Bake until dark brown, 2-3 minutes., Remove to wire racks to cool completely. Sprinkle with confectioners' sugar.

1 cup packed brown sugar
½ cup butter
2 eggs
2 (1 ounce) squares unsweetened chocolate
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Melt chocolate over low heat. Cream together sugar and butter or margarine. Add chocolate and mix well.
  • Add eggs and dry ingredients. Mix well.
  • Heat waffle iorn. Non stick spray can be used to prepare iron.
  • Drop about 1 Tablespoon of dough in each section of preheated iron.
  • Bake until cookies start to turn brown. Be careful because they can burn easily.
  • Cool and frost with a white powdered sugar frosting. (See recipe for Vanilla Glaze.)

Serve these warm chocolate waffle cookies sprinkled with chocolate chips and powdered sugar - a delicious dessert!

1/3 cup semisweet chocolate chips
1/4 cup butter or margarine
1 cup Original Bisquick™ mix
1/4 cup granulated sugar
1/4 cup milk
1 teaspoon vanilla
1 egg
About 1/2 cup semisweet chocolate chips
Powdered sugar, if desired

Steps:

  • Heat waffle iron to medium-high (spray with cooking spray before heating if necessary). Heat 1/3 cup chocolate chips and the butter in 1 1/2-quart saucepan over low heat, stirring constantly, until melted. Stir in remaining ingredients except 1/2 cup chocolate chips and the powdered sugar.
  • Drop 1 tablespoon batter onto each section of ungreased waffle iron. Close lid of waffle iron. Bake 2 to 3 minutes or until steaming stops.
  • Remove from waffle iron to wire rack. Immediately sprinkle each cookie with about 1 teaspoon chocolate chips and powdered sugar. Serve warm.

1/4 cup butter, softened (or margarine)
6 tablespoons sugar
1 egg
1/2 teaspoon vanilla
1 ounce unsweetened chocolate square, melted
1/2 cup flour

Steps:

  • In a bowl, cream butter and sugar.
  • Beat in the egg and vanilla til light.
  • Blend in melted chocolate.
  • Add flour.
  • Mix well.
  • Drop by rounded teaspoonfuls 1 inch apart on a preheated waffle iron.
  • Bake for 1 minute.
  • Remove to a wire rack to cool.
  • Dust with icing sugar.

The best part of these crispy-on-the-outside, soft-in-the-middle- cookies is they're ready in a snap; no oven preheating required. We prefer thicker waffle irons for these cookies, but if your iron is thinner, be sure to adjust your timing so they'll cook faster.

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 stick unsalted butter, at room temperature
1/2 teaspoon pure vanilla extract (see Cook's Note)
1 large egg
1/2 cup semisweet chocolate chips
Nonstick cooking spray

Steps:

  • Whisk together the flour, baking soda and salt in a medium bowl. Beat the sugars and butter with an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the vanilla and egg until incorporated. Adjust the speed to medium-low and add the flour in 2 batches, mixing until incorporated. Mix in the chocolate chips. Refrigerate the dough for at least 30 minutes if time allows.
  • Preheat a waffle iron to medium-low. Generously spray the top and bottom of the waffle iron with cooking spray. Scoop tablespoons of the dough, roll into balls and flatten slightly. Working in batches, place 1 dough round onto each section of the waffle iron, close gently and cook until slightly crisp, 3 to 6 minutes.
  • Serve the cookies warm or store in an airtight container at room temperature for up to 1 day.

I got this recipe from a church friend about 10 years ago. These are different and fun to make. Also GOOD!

Number Of Ingredients 8

1/2 c butter
1/4 c cocoa, unsweetened
3/4 c sugar
2 eggs, beaten
1 tsp vanilla extract
1 c all purpose flour
canned or home made chocolate frosting, optional
whole pecans for garnish, optional

Steps:

  • 1. Melt butter in a medium saucepan. Add cocoa and mix well. Remove from heat. Stir in sugar. Add vanilla, then stir in eggs, being sure mixture has cooled enough so that eggs don't cook, but instead mix in well. Stir in flour.
  • 2. Drop dough by teaspoons-full onto hot waffle iron. You can make 4 at a time. Close waffle iron and let bake for 1 minute. Remove to wire racks to cool. Frost with chocolate frosting and top with a pecan, if desired.
  • 3. If you prefer not to frost cookies you can sprinkle with with powdeed sugar to finish.

I never thought of making cookies in a waffle iron... and it makes for such a neat presentation! (Naturally, I couldn't resist adding more chocolate, so I threw in a few chocolate chips. So good!)

4 Tbsp baking cocoa, heaped
2 eggs
3/4 c white sugar
1 c all purpose flour
1 tsp vanilla extract
1/2 tsp salt

Steps:

  • 1. In medium bowl, melt margarine and cocoa. Stir in eggs, sugar, flour, vanilla and salt. Drop by teaspoonsful onto hot waffle iron, baking several at a time.
  • 2. Bake about 45 seconds. (Each waffle iron temp may vary?) Frost when cool. If you really want to splurge, top a warm cookie with ice cream and fudge topping! Your kids will love it.

75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.
