CHOCOLATE TOFU PUDDING



Chocolate Tofu Pudding image

Silken tofu is one of my favorite secret weapons in this Chocolate Pudding

1 square unsweetened chocolate
⅓ c semi-sweet chocolate chips
12.3 oz package silken tofu - firm
1 tsp vanilla
2 tbs honey
2 tbs cocoa powder
2 packets stevia (or additional honey to taste)
⅛ tsp sea salt
Whipped cream to serve (optional)

Steps:

  • Using a double boiler, gently melt unsweetened chocolate and chocolate chips. (If you don't have a double boiler, simply bring 3 inches of water to a low boil in a small sauce pot and place a metal or glass bowl on top.) It is important for the bowl not to touch the boiling water or you may burn the chocolate.
  • Place tofu, melted chocolate, vanilla, honey, cocoa powder, stevia and sea salt in a food processor or good quality blender. Blend until smooth.
  • Pour in to bowls and chill for an hour or longer.
  • Serve with a dollop of whipped cream.

Not having an oven in my present home made me come up with a twist to an otherwise good - but plain - chocolate pudding. If you are not a big fan of tahini, reduce the amount by half.

3 tablespoons unsweetened cocoa powder
2 tablespoons cornstarch

  • Mix sugar, cocoa powder, cornstarch, and salt together in a saucepan. Stir in milk. Bring to a boil over medium heat and cook, stirring constantly, until mixture thickens and coats the back of a spoon, about 5 minutes. Remove from heat. Add tahini and vanilla extract; stir well.

Vegan Chocolate Pudding With Cinnamon and Chile image

Tofu is not solely the stuff of stir-fries. For example, I can almost guarantee you will be impressed by this dessert, a pudding that takes about as much time to make as hot chocolate. But there are a few qualifiers. Without chocolate, the flavor is unimpressive; it tastes like sweetened tofu. Add chocolate and a few Mexican spices, however, and you have a real winner. And certainly no one I've fed it to had any inkling that it was dairy free. The texture of the pudding, which must be made with silken tofu, is almost unbelievably good. The brand of chocolate you buy is of utmost importance. Without mentioning names, let me just suggest that you use the highest quality chocolate - semisweet or bittersweet, please - you can lay your hands on. After all, it's the flavor of the chocolate, not of the tofu, that will dominate.

I personally think that the Mori Nu Silken (Firm) tofu works beautifully for this recipe. Its Vegan and Gluten Free and is a real treat for those wanting Vegan desserts. For an intense chocolate flavour you can increase the chocolate chips to 3/4 cup but 2/3 cup works best for us. 1 (12 1/3 ounce) packet Mori-Nu firm tofu, drained (or use regular silken tofu)
2/3 cup semi-sweet chocolate chips
1 tablespoon water

Steps:

  • Combine the water and chocolate chips on top of a double boiler.
  • Stir to melt it until smooth. Set aside.
  • Blend the Tofu to puree it until its smooth and lump free.
  • Add the melted chocolate to it and blend it once again to combine it well.
  • IMPORTANT STEP: Refrigerate this for at least 2 hours. The longer you keep it, better for the tofu and chocolate to mingle. It will thicken.
  • You can pipe them into serving bowls/ramekins and serve them plain or with raspberries.

Steps:

  • In a small pot, combine sugar and water. Bring to a boil and cook until sugar is dissolved. Let cool for a few minutes.
  • In a blender, combine syrup, tofu, melted chocolate, vanilla, cinnamon and chili powder. Puree until completely smooth (scrape down sides of container with a rubber spatula if necessary).
  • Divide into 4-6 serving bowls and refrigerate at least 30 minutes. Garnish with chocolate shavings if desired.
