Vegetable oil, for oiling the baking dish
6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large clove garlic, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas or soft tacos, warmed

Steps:

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.
  • Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos.

1 pound ground beef
1 tablespoon minced onion
½ cup pitted black olives
1 (16 ounce) jar picante sauce
2 cups shredded four cheese Mexican blend
chili powder to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a skillet over medium heat, cook and stir the chorizo sausage, ground beef, and onion until evenly brown. Drain, and transfer to a medium baking dish.
  • Arrange the olives over the cooked meat in the baking dish. Top with the picante sauce and cheese, and season with chili powder.
  • Bake 15 minutes in the preheated oven, until bubbly and lightly brown.

2 tablespoons white onion ( , diced)
2 tablespoons green bell pepper ( , diced)

1 jalapeno s ( , seeds removed finely diced)

Steps:

  • Heat medium cast iron skillet or some other over-safe pan over high heat. When hot, add vegetable oil.
  • Add chorizo, white onion, green bell pepper, red bell pepper, cilantro, jalapeno and chili powder. Sauté until soft, approximately 2-3 minutes. Remove from heat.
  • Heat oven broiler to high heat.
  • Sprinkle cheese evenly over chorizo and vegetable mixture. Don't attempt to stir it, it will get clumpy.
  • Place under broiler for 3-4 minutes or until cheese is melted, brown and bubbly.
  • Remove and top with the juice of one fresh lime, diced tomatoes, and additional cilantro, if desired. Serve with tortilla chips!

1 Tablespoon vegetable oil
5 ounces Mexican Chorizo (casings removed.)
12 ounces Monterey or Oaxaca Cheese (grated (2 1/2 cups))
6 Flour tortillas (or)
12 ounces tortilla chips (for serving)
1 1/2 cup of Roasted Salsa

Steps:

  • Preheat oven to 350 degrees. Place a skillet over medium heat, add the oil if using. Most Mexican chorizos have enough fat and won't need the vegetable oil. Add the chorizo and cook, stir frequently to cook evenly and avoid it from sticking to the bottom. It'll take about 6-7 minutes to cook.
  • Once cooked, remove the excess fat from the skillet or place the cooked chorizo over a paper towel to absorb the fat.
  • Place the chorizo in an oven proof dish, setting aside 2 tablespoons to garnish when ready to serve. I divided the chorizo and cheese into 2 small clay pots, but you can use a large oven proof dish.
  • Place the grated cheese over the chorizo and bake for about 10-12 minutes or until the cheese is melted and bubbling. Do not overcook or it will have a chewy texture.
  • Remove form oven and place over a heat proof surface. Serve warm with salsa and plenty of flour tortillas or tortilla chips.

1 large onion, thinly sliced
1 jalapeno, diced (seeds removed if desired)
2 garlic cloves, finely chopped

Steps:

  • Heat a medium skillet over medium heat. Add 1 tablespoon of the butter, the onion, jalapeno and garlic. Cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 20 minutes. Remove from the heat.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat. Add the chorizo and cook, breaking it up with the side of a spoon, until well browned, about 5 minutes. Add to the cooked vegetables in the skillet using a slotted spoon. Set aside.
  • Wipe out the saucepan the chorizo cooked in and return it to medium heat. Add the remaining 2 tablespoons butter. When the butter has stopped foaming, stir in the flour, chili powder, and cumin and stir until the flour is absorbed. Whisk in the beer and milk. 1 yellow onion (finely diced)
2 jalapeños (seeded and finely diced)
1 cup beer
2 Tbsp all-purpose flour
3 cups Monterey Jack cheese (grated)
1 cup sharp cheddar cheese (grated)
1 Tbsp hot sauce (or more to taste)
1 large tomato (chopped)
1/4 cup cilantro

Steps:

  • Place a large skillet over medium heat then add chorizo. Cook chorizo, breaking up with a wooden spoon, for about 3-4 minutes then add onion and jalapeño.
  • Continue cooking over medium heat for about 5 minutes, until chorizo is completely cooked and onion is translucent. Spoon as much excess oil from the skillet as possible.
  • Add beer then stir to combine. Bring to a boil, then reduce heat to medium-low and simmer for about 1 minute, stirring occasionally and scraping up any browned bits from the bottom of the pan.
  • Sprinkle flour over the grated cheeses and toss to coat the cheese in the flour. Begin adding the cheese to the skillet, one handful at a time, stirring until each addition has melted before adding the next.
  • Continue stirring over medium-low heat until all cheese has melted, then remove from heat and stir in hot sauce.
  • Transfer queso to a serving bowl or serve right from the skillet topped with chopped tomato and cilantro.

1/2 cup Mexican lager-style beer, such as Negra Modelo
1/4 cup chopped pickled jalapeno, plus 1 tablespoon pickling juice
3/4 cup milk
4 ounces Monterey Jack cheese, finely diced (about 1 cup)
4 ounces whole-milk mozzarella, finely diced (about 1 cup)
2 tablespoons chopped cilantro
Warmed tortilla wedges, tortilla chips, bell pepper triangles or French fries, for dipping

Steps:

  • Cook the chorizo, stirring, in a medium skillet or a flameproof gratin dish over medium-high heat until golden, about 5 minutes. Remove with a slotted spoon and pour off any excess rendered fat, reserving about 1 tablespoon in the pan. If there is less than 1 tablespoon, add enough olive oil to make 1 tablespoon.
  • Reduce the heat to medium and cook the onions, stirring occasionally, until soft, 5 to 6 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. 3 roasted red peppers, peeled, seeded and chopped
One 15-ounce can black beans, rinsed and drained
1 pound American cheese, cubed
4 ounces shredded Cheddar
Kosher salt
1/4 cup diced red onion
1/4 cup diced pickles
1 avocado, diced
2 jalapenos, chopped
Cilantro sprigs, for garnish
Tortilla chips or potato chips, for serving

Steps:

  • Place the chorizo in a large saucepan and cook over medium heat, breaking up the meat with a wooden spoon, until a significant amount of fat is released, 5 to 7 minutes.
  • Add the flour and cream to the chorizo and whisk. Let simmer and continue to whisk, until thick, 8 to 10 minutes. Add the red peppers and black beans and stir to combine.
  • Transfer the mixture to a blender and blend until smooth. ([Disclaimer:] When blending hot liquid, first let it cool for five minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth.) This Queso Fundido recipe is the ultimate cheese dip with loads of gooey cheese, spicy chorizo and roasted poblanos, topped with a quick homemade salsa.

1 small tomato (chopped)
1 jalapeno pepper (chopped)
1 tablespoon chopped cilantro
1 lime
Salt to taste
6 ounces Mexican chorizo
1 small white onion (chopped)
2 cloves garlic (chopped)
1 large poblano pepper (roasted and diced (roasting instructions below))
10 ounces Mexican cheese blend - Use any melty cheeses like Asadero (Chihuahua, even cheddar or Moterrey Jack work great)
Salt and pepper to taste
Tortilla chips, extra lime

Steps:

  • Make a quick salsa for topping by combining tomato, jalapeno, juice from half a lime and salt to taste to a bowl. Mix well and set aside.
  • Heat a 10-inch pan (I used a cast iron pan) to medium heat and add chorizo and onion. Cook about 6-7 minutes, or until cooked through. Remove and set aside.
  • Add garlic and chopped roasted poblano peppers. Cook another minute.
  • Stir in the cheese a bit at a time until melted. It will melt fairly quickly.
  • Remove from heat and top quickly with salsa and a few squeezes from the remaining half a lime.
  • Serve!

This queso fundido with Oaxaca cheese, Monterey Jack, roasted poblano pepper, and Mexican chorizo, is the ultimate party dip.

8 oz. Oaxaca Cheese, freshly grated
8 oz. Monterey Jack Cheese, freshly grated
1 large poblano pepper
1 cup diced white onion
1 tbsp avocado oil
8 oz. Mexican Chorizo
Fresh cilantro
2 Roma tomatoes, diced
Tortilla chips and/or warmed tortillas

Steps:

  • Put oven on high broil, and place a whole poblano pepper on a small sheet pan. Broil until it's charred on each side (about 10 minutes total). Remove from oven and cover with foil, allow the pepper to steam for 5 minutes, this helps the skin easily peel off. Peel the skin off the poblano pepper, then dice, discarding the seeds.
  • Preheat oven to 400F degrees
  • In a cast iron skillet, over medium/high heat, add in the chorizo. Cook the chorizo fully through, breaking it up into smaller pieces as it cooks. Use a slotted spoon and set aside.
  • Lower the heat to medium, add in avocado oil, diced onion and roasted poblano peppers. Sauté until the onion becomes translucent, about 4 minutes. Add onion and poblanos to the chorizo bowl and mix together.
  • Turn the heat off and add half the grated cheese to the bottom of the skillet evenly. On top of the cheese, add in the chorizo, onion, poblano mix, and evenly spread. Add the rest of the cheese on top.
  • Place in the oven for 8-10 minutes, until the cheese is browned and bubbling.
  • Remove from the oven, garnish with cilantro and roma tomatoes, and serve immediately in the cast iron skillet.
  • Use tortilla chips or scoop the queso fundido into warmed tortillas. Enjoy!

  • Cook chorizo over medium heat in a small cast iron pan (an 8 or 9 inch pan). Crumble as it cooks, breaking it apart into smaller pieces. Transfer cooked chorizo to a plate lined with paper towels to drain excess fats.
  • Let a thin layer of fat from the chorizo remain the the pan. Add onion, jalapeño, and a pinch of salt. Cook, stirring occasionally, until softened and fragrant - about 5-7 minutes. Add garlic, and cook for another minute.
  • Remove the pan from the heat. Stir a couple handfuls of cheese into the veggies. Spread the veggies and melted cheese across the bottom of the pan, forming the first "layer". Add a layer of crumbled chorizo, then top with remaining cheese. (Reserve a couple of spoonfuls of chorizo to top the fundido when it's done.)
