Steps:
- Cook the couscous in the chicken stock.
- Remove the papery skin of the chorizo and hack the sausage into bite sized chunks.
- Fry them off in a dry pan for a couple of minutes to release loads of tasty, spicy oils.
- Stir the sausage and all of its oil into the cooked and fluffy couscous to infuse flavour and impart colour.
- Crumble the feta and finely slice the spring onions.
- Mix everything together, loosening with a little extra oil if necessary and season well with salt and pepper.

Steps:
- Put the couscous into a large bowl and add the lemon juice and olive oil.
- Pour in the boiling water, stir, then cover with plastic wrap, and leave for about 10 minutes.
- Cook the leek in plenty of boiling salted water until soft. Drain and stir into the couscous with the onion, parsley and mint.
- Season to taste with salt and freshly ground black pepper and stir in the feta.
- Serve immediately.

- Add spring onions to a food processor with spinach, ¾ of the mint (save the rest for garnish each day), and salt & pepper and blitz until finely chopped
- Put a dash of oil into a large frying pan or skillet on a medium heat and, when hot, add the chorizo & peppers and cook for 5 minutes until the peppers soften nicely and the chorizo releases its oil
- Fluff the couscous mix with a fork, add the juice of ½ the lemon then transfer to a bowl, cover with cling film, and pop in the fridge until needed
- Decant a portion of the couscous to a tub or lunch box and spoon a portion of the chorizo mix on top
