Pork Chow Mein in 30 Minutes image

A very tasty and easy recipe using left over pork roast. It is from a 1973 Betty Crocker "Family Dinners In a Hurry" cookbook.

2 -3 cups cooked pork roast, cubed
1 medium onion, sliced
2 cups celery, sliced diagonally
3 tablespoons vegetable oil
1 (6 ounce) can sliced mushrooms
1 (16 ounce) can bean sprouts, drained
2 tablespoons chopped pimiento
1 (10 ounce) can condensed chicken broth (1 1/4 c.)
1/4 cup soy sauce
3 tablespoons cornstarch
2 (3 ounce) cans chow mein noodles

Steps:

  • In a large skillet, cook and stir pork, onion and celery in oil until onion is tender.
  • Stir in mushrooms with liquid, bean sprouts, pimiento and chicken broth.
  • Blend soy sauce and cornstarch; stir into vegetable mixture.
  • Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Seve over chow mein noodles.

4 to 5 black, dried mushrooms
1/2 pound lean pork
3 stalks celery
1 onion
2 or 3 stalks scallion
2 tablespoons oils
1/4 teaspoon salt
2 tablespoons soy sauce
1 teaspoon sugar
1/2 cup Stock, Chicken or favorite stock

Steps:

  • 1. Soak dried mushrooms. 2. Slice pork thin or cut in strips. Slice celery, onion and soaked mushrooms. Cut scallion stalks in 1-inch sections. 3. Heat oil. Add salt, then scallions, and stir-fry until translucent. Add pork stir-fry until it loses its pinkness (2 to 3 minutes). Then sprinkle with soy sauce and sugar and blend in. 4. Add celery, onion and mushrooms stir-fry 2 minutes more. 5. Add stock and heat quickly. Cook, covered, another 2 to 3 minutes over medium heat. Then combine with soft-fried or tossed noodles, as indicated above. VARIATIONS: * Shred the pork and vegetables. Omit the stock and additional cooking in step 5. * In step 2, dredge the pork in a mixture of 1 tablespoon cornstarch and 1 tablespoon soy sauce. Omit the soy sauce at the end of step 3. * At the end of step 3, also blend in 1 tablespoon sherry. * In step 4, add with the other vegetables 1 cup Chinese cabbage stems, sliced and/or 4 water chestnuts, sliced. * After step 4, add 4 snow peas, cut in half. * Omit the soy sauce in step 3. After step 4, add a mixture of 1 tablespoon soy sauce, 2 tablespoons sherry, 2 slices fresh ginger root, minced, and a few drops of sesame oil. 1 pound boneless pork loin
2 garlic cloves, minced
4 tablespoons soy sauce, divided
2 tablespoons cornstarch
1/2 to 1 teaspoon ground ginger
1 cup chicken broth
1 tablespoon canola oil
1 cup thinly sliced carrots
1 cup thinly sliced celery
1 cup chopped onion
1 cup coarsely chopped cabbage
1 cup coarsely chopped fresh spinach
Hot cooked rice, optional

Steps:

  • Cut pork into 4x1/4-in. strips; place in a bowl. Add garlic and 2 tablespoons soy sauce. Cover and refrigerate for 2-4 hours., Meanwhile, combine the cornstarch, ginger, broth and remaining soy sauce until smooth; set aside. Heat oil in a large skillet or wok on high; stir-fry pork until no longer pink. , Remove and keep warm. Add carrots and celery; stir-fry for 3-4 minutes. Add the onion, cabbage and spinach; stir-fry for 2-3 minutes. Stir broth mixture; stir into skillet along with pork. Bring to a boil; cook and stir for 3-4 minutes or until thickened. ⅓ cup low-sodium soy sauce
2 tablespoons rice vinegar
2 teaspoons cornstarch
1 teaspoon white sugar
½ teaspoon sesame oil
2 tablespoons canola oil
2 cups snap peas
1 small sweet onion, chopped
1 (12 ounce) pork tenderloin, cut into thin strips
1 (8 ounce) package sliced white mushrooms
1 red bell pepper, chopped
1 clove garlic, chopped
½ teaspoon chopped fresh ginger, or to taste
2 cloves garlic, chopped
3 green onions, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the linguine at a boil until tender yet firm to the bite, 8 to 9 minutes; drain.
  • Whisk soy sauce, vinegar, cornstarch, sugar, and sesame oil together in a small bowl.
  • Heat canola oil in a large skillet over medium-high heat; cook and stir snap peas and onion in the hot oil until onion is softened, about 2 minutes. Add pork, mushrooms, red bell pepper, 1 clove garlic, and ginger; cook until pork is no longer pink, about 2 minutes.
  • Mix 2 cloves garlic into the pork mixture; cook for 1 minute. Pour soy sauce mixture over pork mixture; cook and stir until sauce thickens, about 1 minute. Remove skillet from heat. Add linguine to the mixture; toss to coat. Sprinkle with green onions.

2 tablespoons oil
2 cups 1-inch pieces pork
1 ½ cups chopped onion
¼ pound mushrooms, sliced
2 cups chicken broth
2 cups sliced celery
¼ teaspoon salt

2 cups fresh bean sprouts
½ cup sliced almonds
3 tablespoons reduced-sodium soy sauce
2 tablespoons cornstarch

Steps:

  • Heat oil in a skillet over medium heat; cook and stir pork until lightly browned, 5 to 7 minutes. Add onion and mushrooms and cook until slightly tender, 2 to 3 minutes. 1/4 teaspoon salt

few drops sesame oil
3 tablespoons oils
1/4 teaspoon salt

Steps:

  • 1. Pick over and flake crabmeat. Blanch bean sprouts. Slice bamboo shoots, mushrooms and onion. 2. Combine soy sauce, sugar, salt, pepper and sesame oil. 3. Heat remaining oil. Add remaining salt, then onion stir-fry until translucent. Add mushrooms stir-fry to soften. Add crabmeat and stir-fry 1 minute more. 4. Add bean sprouts and bamboo shoots stir-fry to heat through (about 1 minute). 1/2 pound shrimp
1 tablespoon cornstarch
1/2 pound lean pork
1/2 pound spinach
2 stalks scallion
2 tablespoons oils
1 1/2 tablespoons soy sauce
1 tablespoon sherry
dash pepper

Steps:

  • 1. Shell, devein and dice shrimp then dredge lightly in cornstarch. Sliver pork, or cut in strips. Wash and stem spinach. Mince scallions. 2. Heat oil. Add scallions and stir-fry a few times until translucent. Add pork stir-fry until it loses its pinkness (2 to 3 minutes). Then sprinkle with soy sauce. 3. Add shrimp, stir-fry until pinkish, then sprinkle with sherry and pepper. 4. Add spinach leaves and stir-fry until dark green and softened, but not limp. Then combine mixture with soft-fried (Chow Mein) or tossed noodles (Lo Mein). VARIATION: * For the spinach, substitute Chinese cabbage stems, cut in 1 1/2-inch sections and blanched. 12 ounces, thin dried Chinese egg noodles
2 tablespoons sesame oil
sauce
3 tablespoons soy sauce
1 1/2 tablespoons oyster sauce
1 1/2 tablespoons Chinese rice wine or dry sherry
1 1/2 teaspoons honey
1 tablespoon peanut or vegetable oil
1 1/2 teaspoons minced garlic
1 teaspoon minced or grated fresh ginger
3 scallions, cut into 2-inch lengths
4 or 5 fresh shiitake mushrooms, thinly sliced
1/2 pound Chinese barbecued pork, store-bought or homemade, cut into small, bite-sized pieces

Steps:

  • 1. Bring a medium pot of water to a boil. Add the noodles and cook according to the package instructions until al dente, or the minimum amount of time suggested by the package. Drain the noodles, rinse under cold water, and drain again, shaking well to remove excess water. Return the noodles to the pot, toss with the sesame oil until the noodles are well coated, and set aside.
  • 2. Prepare the sauce: In a small bowl, combine the soy sauce, oyster sauce, rice wine, and honey. Set aside.
  • 3. Heat a wok or large skillet over high heat until a bead of water sizzles and evaporates on contact. Add the peanut oil and swirl to coat the bottom. Add the garlic, ginger, and scallions and stir-fry until aromatic, about 30 seconds. Add the mushrooms and cook until softened, 1 to 2 minutes.
  • 4. Add the noodles and pork. Pour in the sauce mixture and toss with tongs or chopsticks until the noodles and pork are heated through and well coated with sauce. Transfer to a platter and serve.
