1 teaspoon brown sugar
1 cup home grated (or purchased) horseradish
1/4 teaspoon salt
1 pound beets (cooked, peeled, cooled, and grated) OR 1 (14-ounce) can prepared beets (drained and grated)

Steps:

  • In a large bowl, mix vinegar, brown sugar, horseradish, and salt until well combined.
  • Add beets and mix thoroughly.
  • Pack into clean glass jars and store refrigerated for up to 2 weeks.

Homemade Chrain image

This is a big, messy job. However, you do it once and it lasts the whole year through! You can either jar it and leave it in the fridge (space permitting) or you can freeze it and use as needed. If you don't want to make chrain for a crowd, feel free to cut this recipe in half or fourths, or follow the Alternate Chrain recipe below. Beets are a colorful source of anthocyanins, the purple pigments which are also found in blueberries, red cabbage, red onions, eggplant etc. Anthocyanins are powerful antioxidants that may help protect against cancer, heart disease, arteriosclerosis, and some complications from diabetes. 1 quart (16 ounces /450 grams) ground horseradish*
6-8 bunches of beets (each bunch has 4 beets, so approximately 24-32 medium beets)
3 and 1/2 cups sugar
juice of 12-15 lemons
6 tablespoons salt
1 pint (2 cups) juice from the beets
8-10inch piece of horseradish (20-25 centimeter)
4 raw beets
1/2 cup sugar
1/2 cup water
1/2 cup vinegar
1 teaspoon salt and 1/4-1/2 teaspoon pepper.

Steps:

  • Before you start, it's a good idea to line your counters with a double layer of disposable table cloth, and wear disposable gloves.
  • Wash and scrub beets well. Cover with water and cook beets with peel until almost soft, but not too soft. Cool and peel (peel will slide off easily this way). Alternately, peel beets first and then cook.
  • Prepare a very large bowl or basin. Grind beets using the knife attachment of the food processor. From time to time, stop grinding and empty bowl into the basin. Once all the beets have been ground, add the sugar, lemon juice, salt and beet juice and mix. Add horseradish last and mix very well. Adjust seasoning if necessary.
  • Follow the basic instructions below (please note that in this version, the beets are raw). This recipe freezes very well too.

Ham just isn't ham without it!!! I am requested to make this every Easter and Christmas for our family get-togethers. It is very simple, a bit messy, but very much worth it! The addition of red beets to the jarred horseradish tames it down a bit...I don't know how anyone can eat straight horseradish!!...OUCH!

3 (15 ounce) cans whole red beets, drained well
6 ounces jarred horseradish (found in the refrigerator section of most markets)
1 tablespoon brown sugar
1/4 teaspoon salt
1 teaspoon white vinegar
1 dash garlic powder
1 dash black pepper

Steps:

  • In food processor or blender, pulse beets until very finely minced, almost pureed (you may have to stop a few times to scrape sides down) In bowl, mix beets with all other ingredients, stirring well to combine.
  • Store in jars or tight-sealing plastic containers in refrigerator until use (will keep for several months).

I would make it more often, but I'm really sensitive, and this makes my eyes burn and tear - consider that a warning. Nonetheless, it's sad to finish the homemade jar, because going back to storebought is dreadful.

2 medium beets, cooked and peeled
1 horseradish root, about 4 inches long
2 -4 tablespoons white vinegar or 2 -4 tablespoons cider vinegar
2 teaspoons kosher salt
1 teaspoon sugar

Steps:

  • Grate the beets into a bowl using the fine side of a hand grater (wear gloves or you'll have some real memories that will last for days).
  • Finely grate the horseradish into the bowl (do not touch your face!).
  • Add the vinegar, salt, and sugar, and taste for seasoning.
  • Let stand at room temperature for 2 hours before serving.
  • Store covered in the refrigerator; will keep for several weeks with same strength, and afterwards, the intensity will be reduced.

Sweet beets meet zingy horseradish and crunchy pumpkin seeds in this dish that will enchant beet lovers and skeptics alike. Roasting the beets concentrates their flavor and makes them easier to peel, while pairing red beets with their yellow counterparts makes for a striking visual contrast. Feel free to use all red beets, or all golden beets, if that's what's available to you, and to substitute plain yogurt for the sour cream. If you can't find fresh, refrigerated prepared horseradish, horseradish cream also works beautifully. Make the most of the beet greens: Sauté them in olive oil and finish with a splash of balsamic vinegar for an excellent accompaniment to this dish.

1 small bunch red beets (about 1 pound), washed and leaves removed
1 small bunch golden beets (about 1 pound), washed and leaves removed
2 tablespoon extra-virgin olive oil
Kosher salt and black pepper
1/2 cup sour cream
2 tablespoons prepared horseradish
2 tablespoons lemon juice
1/4 cup roasted pumpkin seeds

Steps:

  • Heat oven to 375 degrees. Place all the beets on a sheet of aluminum foil. Drizzle with the olive oil. Wrap together tightly and bake until tender, 65 to 70 minutes. Remove from the oven and let cool slightly. Peel off the skin. (You may need the help of a paring knife.)
  • Slice the peeled beets 1/4-inch thick and arrange the slices on a serving tray. Sprinkle with salt and pepper.
  • In a small bowl, combine the sour cream, horseradish, lemon juice, and 1/4 teaspoon each salt and pepper. Taste to adjust seasoning.
  • In a small skillet, toast the pumpkin seeds over medium heat, shaking back and forth, until they emit a popcorn-like smell, 2 to 3 minutes.
  • Spoon the sour cream dressing on top of the beets and sprinkle with toasted pumpkin seeds. Serve beets warm or chilled (see Tip).

Steps:

  • In a kettle cover the beets by 2 inches with cold water, bring the water to a boil, and simmer the beets, covered, for 20 to 30 minutes, or until they are tender. Drain the beets and under cold water slip off and discard the skins and stems. Cut the beets into wedges, in a bowl combine them well with the horseradish, the sugar, the vinegar, the water, and salt and pepper to taste, and let them marinate, covered and chilled, for at least 8 hours and up to 3 days.
