I've watched the film "A Christmas Story" so many times since I was a kid. Now I have a family of my own, so I re-created the mom's meatloaf and mashed potatoes. -Christina Addison, Blanchester, Ohio

- Preheat oven to 375°. Place a rack in a 15x10x1-in. baking pan; place a 12x8-in. piece of foil in center of rack. In a large bowl, combine eggs, ketchup, onion, green pepper, crushed saltines, salt and pepper. Add beef; mix lightly but thoroughly. Place over foil rectangle and shape into a 9x6-in. loaf. Bake until a thermometer reads 160°, 50-60 minutes. Let stand 10 minutes before slicing., Transfer meat loaf to a serving plate, discarding foil. Pipe or spread 1 cup mashed potatoes over meat loaf. Sprinkle with parsley. Serve with remaining mashed potatoes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
- Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

- Preheat oven to 350°. In a small bowl, mix chili sauce and ketchup. In a large bowl, combine Rice Krispies, onion, green pepper, cheese, egg, salt and pepper; stir in half of the chili sauce mixture. Add beef; mix lightly but thoroughly., Transfer beef mixture to an ungreased 9x5-in. loaf pan. Make a shallow indentation down center of loaf. Spread remaining chili sauce mixture over loaf, being sure to fill indentation., Bake 60-70 minutes or until a thermometer reads 160°; use a turkey baster to remove drippings every 20 minutes. Let stand 10 minutes before slicing.

TYLER'S ULTIMATE MEATLOAF
From the FoodTV show Tyler's Ultimate. I watched him make this the other day and it really looked amazing. The relish really seemed to moisten it and it looked good enough to eat on it's own. Posting for myself, but would love to hear from anyone who's tried it.

- Preheat the oven to 350°F.
- Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes.
- Add red peppers and cook them for a couple of minutes until soft. Add tomatoes.
- Stir in the parsley, ketchup and Worcestershire; season with salt and pepper.
- Simmer relish for 5 minutes then remove from the heat.
- Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
- In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper.
- Squeeze the excess milk from the bread and add the soaked bread to the meat mixture.
- Transfer the meat mixture to the center of a lightly oiled cookie sheet and form into a log (around 9 x 4-inches).
- Coat the top of the meatloaf with another 1/2 cup of the tomato relish and then lay the bacon across the top lengthwise.
- Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm, rotating the meatloaf periodically to ensure even browning.
- Remove the meatloaf from oven and let it cool a bit before slicing.
MEATLOAF WITH SALTINE CRACKERS

- Preheat oven to 375 degrees. Line a rimmed baking sheet with parchment paper, then fit the sheet with a wire rack. Brush a 10-by-5-by-3-inch loaf pan with olive oil and place on rack; set aside. Place saltines in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form. You should have about 1 cup crumbs. Transfer to a large bowl and add ground beef.
- On the large holes of a box grater, grate carrot (should measure 1 cup grated) and onion (about 2/3 cup grated). Drain excess juice from onion. Add carrot and onion to meat mixture, then grate garlic on the fine holes of the grater (1 teaspoon). Add to bowl along with parsley, eggs, 1/2 cup ketchup, Worcestershire, 1 tablespoon Dijon, salt and pepper. Use hands to combine thoroughly. Transfer to prepared loaf pan.
- Combine remaining 1/2 cup ketchup, 1 tablespoon Dijon and brown sugar in a small bowl. Stir until smooth and no sugar lumps remain.
- Spread mixture evenly over top of meatloaf. Place in oven, atop wire rack and bake until a meat thermometer inserted into the center reads 160 degrees, about 1 hour 30 minutes. Tent with foil if top begins to brown too quickly. Remove from oven and let cool 1 hour before slicing. Serve.
CHRISTINA'S MOUNT VESUVIUS MEATLOAF

- To make the meatloaf: Preheat the oven to 350 degrees F.
- Place the bread in a small dish, cover with milk, and set aside to soak. Meanwhile, in large bowl, mix the beef, onion, celery, ketchup, egg, Worcestershire sauce, barbecue sauce, garlic, basil, mustard, salt, pepper, and crumbled bacon.
- Squeeze excess milk from the bread, then use your hands to squeeze the bread into the meat mixture until fully incorporated. Transfer the mixture to a ring mold pan and top with the sliced, uncooked bacon. Place the ring mold on a baking sheet and bake until meatloaf is cooked through, about 45 minutes.
- Meanwhile, to make the mashed potatoes, cook the potatoes, covered, in boiling salted water until tender, about 12 minutes. Drain and mash the potatoes or pass them through a ricer. Stir in the heavy cream, butter, sour cream, chives, and horseradish, if using. Season with salt and pepper, to taste. If desired, put 1 cup of the potatoes in a pastry bag fitted with a large star tip. Set aside.
- When the meatloaf is done, turn on the broiler. Remove and discard the bacon slices and carefully pour the pan juices into a saute pan. Invert the ring mold onto an ovenproof platter. Using a spatula, cover the meatloaf on all sides with mashed potatoes, as if frosting a cake. If using a pastry bag, add decorative swirls to the top. Place the platter under the broiler until potatoes are nicely browned, about 10 minutes.
- Meanwhile, to make the gravy, place the saute pan with drippings over medium heat and stir in the flour. Cook, stirring constantly, for 2 minutes. Stir in the broth, ketchup, mustard, Worcestershire sauce, and barbecue sauce.
- If desired, fill the center of the meatloaf with buttered carrots and peas. Slice the meatloaf, and spoon the gravy over the top. Serve immediately.

CHARLEY'S MEATLOAF NAPOLEON STYLE
Steps:
- Preheat the oven to 375 degrees F. In a mixing bowl, mix all ingredients until incorporated. Form into loaf and place in loaf pan and bake, uncovered, for 40 minutes until cooked through. Allow to cool and slice meatloaf into 1-inch slices. On a serving plate, layer Napoleon style in the following order: Sauteed Vegetables, Garlic Mashed Potatoes, a slice of meatloaf, a second layer of Garlic Mashed Potatoes, a second slice of meatloaf, and top with Fried Leeks.
- Thinly slice vegetables into 1/8-inch by 1/8-inch by 2-inch strips. Saute all vegetables in pan with olive oil and season, to taste.
- Place peeled and sliced potatoes in pot of water and boil until soft. Strain potatoes. Place potatoes in a mixing bowl add remaining ingredients and whip until texture is fine. Place garlic mashed potatoes in a pastry bag with a star tip.
- Cut leek into julienne strips and coat with cornstarch. In a saute pan, heat enough oil to cover leeks. Drop in leeks and fry until golden brown, about 1 to 2 minutes. Drain on paper towels.

- Preheat oven to 350 degrees.
- Mix the beef with half of the egg whites. Soften the oats in the wine and add them to the meat along with the garlic, onion, milk, tomato paste, parsley and thyme. Season to taste with salt and pepper.
- Shape the mixture into two loaves. Place them on a rack in a shallow baking pan that will hold them without crowding.

- Mix ground sirloin, bacon, onion, bell pepper, oats, Cheddar cheese, sour cream, Worcestershire sauce, and Cajun seasoning salt in a large bowl; shape into a loaf.

- Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
- Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes.
