CHRISTMAS APPLESAUCE CAKE CIRCA 1848
This was given to me by a dear neighbor Mrs. Hodges who used to be like another grandma to my kids when they were little. She was a excellent cook.

Steps:
- Make a nest of the dry ingredients then add the Crisco, vanilla and warm water. Beat vigorously 2 minutes, then add egg. Beat 2 more minutes. Lightly dust the raisins and 2/3 cups of the pecans with flour. Fold raisins and pecans into batter. Grease & flour tube pan or 3 loaf pans.
- Bake at 350 degrees for 45 minutes. Check to be sure it's done because it may take longer to get done well. Ice with Mrs. Hodges Icing
CHRISTMAS APPLESAUCE CAKE
I have changed a basic applesauce cake recipe that belonged to a lady from my hometown who, if living, would now be around 98 years old. Notice what she did with the applesauce and baking soda...that fascinated me and caused me to first make this cake. Now it is THE only applesauce cake I make. I use Robertson's basic mincemeat if I can find it. I sometimes add a dash of cardomon too. We like it best when using black walnuts. Makes a beautiful and more-ish cake!

Steps:
- In a medium mixing bowl, add flour, salt, nutmeg, cinnamon, cloves, and all-spice. Add the nuts to coat with flour. Set aside.
- In small bowl, soak raisins in Jack Daniels. Set aside.
- In a large mixing bowl, cream the Crisco; slowly add sugar and cream together until light and fluffy.
- To the heated applesauce, now add 3 teaspoons baking soda -- stir -- add to creamed mixture. Beat with mixer on medium until blended.
- Add eggs and beat well.
- Slowly add the dry flour, spice, and nut mixture, blending well.
- Add the soaked raisins, mincemeat, and cherries. Stirl to incorporate all ingredients.
- Pour batter into greaqsed and floured tube pan.
- Bake in preheated 300 degreen oven for 1 hour and 15 minutes. Ovens vary so please begin to check after 55 minutes. Note: The thickness of your pan also influences the baking time.
