Steps:
- Place an oven rack in the bottom third of the oven and another in the top third of the oven. Preheat the oven to 350°F. Butter three 9-inch cake pans, then line each with a parchment paper round. Butter the paper and dust the pans with flour; knock out the excess.
- Using an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed until light and fluffy, about 3 minutes. Use a rubber spatula to scrape down the sides of the bowl. In a medium bowl, stir together the flour, baking powder, and salt to blend. In a small bowl, stir together the milk, coconut milk, and coconut cream until smooth. Add the flour mixture in 3 increments, alternating with the milk mixture in 2 increments, starting and ending with the flour mixture. After each addition, mix at low speed just to combine the ingredients. Stir in the vanilla.

- To make the whipped cream filling:
- Using an electric mixer fitted with the whisk attachment, beat the cream on high speed until soft peaks form. Beat in the coconut cream and the fresh coconut, if using.
- To make the frosting:
- Whisk the egg whites, sugar, water, cream of tartar, and salt in a large stainless-steel bowl until thoroughly combined. Place the bowl over a saucepan filled with 2 inches of barely simmering water. Using a hand beater or handheld electric mixer, continue beating the egg white mixture for 4 minutes. Add the mini marshmallows in 2 increments while continuing to beat. Wait until the first batch of marshmallows has melted before adding the second. Continue beating for 2 to 3 minutes more, until stiff peaks form. Remove from the heat, stir in the vanilla, and continue beating until the frosting is thick enough to spread.
- To assemble the cake:
- Stack one cake layer on a serving plate and spread the top with half of the whipped cream filling. Repeat with a second layer. Stack the final cake layer on top of the first two and cover the cake's top and sides with the frosting. Sprinkle the coconut on the top and sides of the cake.
- Cover the cake loosely with plastic wrap and store for 1 day at room temperature or up to 3 days in the refrigerator. Bring to room temperature before serving.
- Tip:
- It's challenging to press coconut into the sides of the cake. When pressing the coconut in, the icing invariably sticks to my fingers and mars the frosting's finish. I've discovered that throwing small handfuls of coconut toward the side of the cake makes it adhere quite well-a messy but effective technique for creating a gorgeous-looking cake.
- Tip:
- For those who want to follow Aunt Molly's original recipe, here are her directions for extracting coconut meat and liquid from a fresh coconut: "First buy a fresh coconut. To select the best one, shake it to listen for a lot of milk inside. Prepare the coconut by first making a hole or two in one end with a hammer and ice pick. Stand the coconut up over a small bowl or glass measuring cup to catch the milk as it drains out. Next, crack the hard outer shell with a hammer, then pry off the pieces. The inner white coconut meat can then be grated [with a handheld microplane grater]. Refrigerate both the milk and grated coconut until ready to use."

- Get out a plate or platter. Swipe a layer of cool whip in a line down the middle of the plate. Take two wafers and coat the back of one with cool whip, then drop some coconut on it, then place it on the plate so the cookies are standing up. Coat the next cookie with cool whip, then coconut and stick it to the cookies on the plate. Continue till all the cookies are in a log type cake formation. Now spread the rest of the cool whip over the cake. Coat generously with coconut. Stick in the fridge and let set up overnight. The magic of this is the cookies turn into a soft cake. You will not believe it the next day. It's one of the best cakes you can make, yet it's so easy and quick. You will be hooked on it immediately. Remove from fridge. Serve.

- Preheat oven to 300 degrees F (150 degrees C).
- Grease a 10-inch tube pan.
- Combine flour, salt, and baking soda in a bowl.
- Beat 1 1/2 cup butter and 3 cups sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
- Beat eggs one at a time into butter mixture, allowing each egg to blend completely before adding the next. Beat in sour cream and 1 teaspoon vanilla extract with the last egg.
- Gradually stir flour mixture into egg mixture, mixing until just incorporated.
- Fold in 7 ounces flaked coconut, mixing just enough to evenly combine. Pour the batter into prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
- Whisk milk and cornstarch in a saucepan over medium heat until mixture becomes very thick, stirring constantly, about 5 minutes; set aside to cool completely.
- Beat 1 cup sugar, 1/2 cup butter, and shortening with an electric mixer in a bowl until mixture is smooth and creamy.
- Beat cooled milk paste and 2 teaspoons vanilla extract into sugar mixture to achieve a light and creamy frosting.
- Spread frosting over completely cooled cake and sprinkle remaining 3 1/2 ounces flaked coconut over the frosting.

CHRISTMAS COCONUT CAKE
If I don't start early on Christmas foods and such, I'll be too far behind to catch up! This is such an elegant cake. It's almost like a bare canvas, with beautiful, colors that you could place on it. Just elegant! The coconut frosting is shown below. I had a little bit of time finding the coconut extract, and found it at Michael's. If you have trouble finding it, perhaps another extract would fit the bill. Either way, it's a winner!

- Cream butter; gradually add sugar and beat 10 to 15 minutes at medium speed of electric mixer. Add eggs one at a time, beating well after each addition.
- Combine flour, baking powder, soda and salt;.
- add to cream mixture alternately with buttermilk and oil, beginning and ending with flour mixture.
- Mix well after each addition.
- Stir in flavoring.

- Place margarine in a mixing bowl. Fluff with mixer.
- Add sugar, small amounts at a time.
- Add eggs one at a time.
- Add flour a little bit at a time alternating with the milk.
- Add the vanilla.
- Spray cake pans with Pam and dust lightly with flour. Cake will make 4 layers. If you only have 2 cake pans [like me -- ], you can bake in 2 shifts (2 pans at a time).
- Bake at 350F for 25 minutes.
- After taking the final pans out of the oven, let cool. You can begin cooking the frosting here.
- For frosting:.
- Put sugar in a 3-qt. sauce pan. Add water. Stir a little to dissolve sugar.
- Bring to a boil and stop stirring.
- Lower heat to medium, bring to soft ball stage, until it just begins to spin a thread while it cooks. Remember, do NOT stir the frosting while cooking. The process will take about 15-20 minutes.
- Meanwhile, beat egg whites until stiff.
- Pour cooked syrup (mixture in saucepan) into the egg whites in a thin stream while you beat it with a spoon. Beat for a few minutes to cool it a little.
- Add coconut and coconut flavoring.
- When it starts to cool a little, it is ready to frost the cake. Wait 10-15 minutes for this to occur.
- While frosting, keep this in mind: frosting tends to separate (the syrup has higher density and will fall to bottom of bowl). Make sure that you keep the frosting homogenous (mixed) while frosting. Frosting is very thin, so it will fall off of the cake. Make sure to frost on the platter that you will serve the cake on. Also, keep reapplying the frosting that falls off until almost all is reabsorbed.
- Fresh coconut will stick to sides and syrup will absorb into cake.
- This is the most moist, delicious, yummy cake in the world! Perfect for an anniversary or holiday!
