3 cups sweetened shredded coconut
2 cups confectioners' sugar
1/3 cup sweetened condensed milk
1/4 cup sliced almonds
2 teaspoons miniature semisweet chocolate chips
38 pieces black shoestring licorice (2 inches each)

Steps:

  • Pulse coconut, confectioners' sugar and milk in a food processor until coconut is finely chopped. For each mouse, roll 1 tablespoon coconut mixture into a ball; taper 1 end to resemble a mouse. Attach sliced almonds for ears and licorice pieces for tails. Press miniature chocolate chips, tip side down, into place for eyes. Store in an airtight container.

2/3 cup semisweet chocolate chips
2 cups chocolate wafer crumbs, divided
1/3 cup sour cream
36 red nonpareils
1/4 cup sliced almonds
18 pieces black shoestring licorice (2 inches each)

Steps:

  • In a microwave, melt chocolate chips; stir until smooth. Stir in 1 cup wafer crumbs and sour cream. Refrigerate, covered, 1 hour or until firm enough to shape., Place remaining wafer crumbs in a shallow bowl. For each mouse, roll about 1 tablespoon crumb mixture into a ball; taper one end to resemble a mouse. Roll in wafer crumbs to coat. Attach nonpareils for eyes, sliced almonds for ears and licorice pieces for tails. Store in an airtight container in the refrigerator.

Christmas Coconut Mice image

These adorable mice are no bake, and so easy to do even a child could make them. Taken from 'yummy little cook book'. For halloween you can dye the mice charcoal grey, use black liquorice for tails and red silver balls for eyes. You need a deep tablespoon to shape the mice.

250 g icing sugar, sifted
200 g tin condensed milk
175 g desiccated coconut
red food coloring
candy, balls silver
white chocolate, buttons for ears or slivered almonds, for ears

Steps:

  • Mix the icing sugar and condensed milk. Mix in the coconut. Divide the mixture between two bowls.
  • Dye one mixture dark red while the other eighter leave white or else dye pink. ( when I make white mice I use blue silver balls for the eyes).
  • Dip a clean tablespoon ( use a dessert spoon to make smaller mice)into some water and let it drip, then lift up a tablespoon of the mixture.
  • Line a baking sheet with plastic wrap. Press the mixture into the tablespoon and level it. Now turn the spoon over and tap it, so that the mixture will come out onto the plastic wrap.
  • Pinch a nose on the narrow end , then add the eyes, the ears made out of the milky buttons or slivered almonds and push a piece of liquorice, as a tail. Allow to dry.

12 maraschino cherries with stems (about 1 jar)
4 ounces favorite chocolate (semisweet, bittersweet or milk), chopped
1 tablespoon coconut oil
1 dozen chocolate kisses (white or milk), unwrapped
24 pieces sliced almonds
2 ounces white pearl candy dragees (at least 24)

Steps:

  • Put the maraschino cherries in a strainer and rinse well with cold water until it runs clear. Scatter the cherries on top of a few layers of paper towel to drain and dry thoroughly, patting dry if necessary. Line a baking sheet with parchment paper.
  • Melt together the chopped chocolate and coconut oil in a bowl set over a pan of slightly simmering water, stirring until uniform and completely melted. Remove the bowl from the heat.
  • Holding a cherry by the stem, dip in the melted chocolate, rolling to coat completely. Allow excess chocolate to drain off before placing the cherry on its side on the parchment-lined baking sheet (the stem should stick out from the side rather than the top). Repeat with the remaining cherries and chocolate. Place the baking sheet in the refrigerator for 30 minutes to allow to set.
  • If the remaining chocolate mixture in the bowl has hardened, reheat over simmering water until melted again. Remove the chocolate-covered cherries from the refrigerator. Dip the flat end of a chocolate kiss into the melted chocolate, allowing excess to drain off, and then place onto the end opposite the stem end of a cherry. While holding the kiss in place, add 2 almond slices between the cherry and kiss to form ears. Use a toothpick to add 2 small dots of melted chocolate to the kiss, to adhere 2 dragees for eyes. Repeat with the remaining ingredients.
  • Place the baking sheet back in the refrigerator to set up for at least 15 minutes.

10 ounces maraschino cherries, with stems
14 ounces Oreo cookies
11 ounces Hershey chocolate kisses
2/3 ounce red decorating gel
sliced almonds
11 ounces semi-sweet chocolate chips
2 teaspoons Crisco shortening

Steps:

  • Drain cherries well and count them.
  • Unwrap an equal amount of chocolate kisses and carefully remove one side of the chocolate cookie from the Oreo, leaving the cream filling on the other side. (Save plain side for another use.).
  • Melt the chocolate chips and shortening in the microwave and stir till smooth.
  • Dip the cherries in the chocolate, shake to remove excess.
  • Set the cherry on the flat side of chocolate kiss, and then position them on cream side of the Oreo with the stem hanging over the edge.
  • Position 2 sliced almonds for ears.
  • Use red gel for eyes.
  • Keep the chocolate warm by setting it in a bowl of warm water.
  • Line cookie sheet with wax paper to set the mice on as you put them together. When you get them all done, let them set for a few minutes before decorating.
  • To make holly leaves - draw a "v" on each side of the red berry.
  • For the leftover melted chocolate and plain half of Oreos. Dip each Oreo in chocolate and either sprinkle coconut or chopped nuts on them.
  • NOTE: You could use cherries without stems and substitute chow mein noodles for the tail.

100 g apples, cored,finely chopped
25 g butter
75 g raisins
75 g sultanas
75 g currants
50 g raw sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground mixed spice
1 orange, juice of
1 orange, zest of
1 lemon, juice of
1 lemon, zest of
125 g sliced almonds
30 ml brandy
100 g butter
50 g raw sugar
175 wholemeal self-rising flour
2 eggs
100 g raw sugar
5 ml vanilla essence
175 g desiccated coconut
1 tablespoon whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • FRUIT MINCE: Place all ingredients except almonds and brandy into a deep ovenproof dish and mix thoroughly.
  • Cover with foil and bake in an oven at 120 C for an hour.
  • Stir mincemeat halfway through cooking.
  • Leave to cool before adding almonds and brandy.
  • Keep refrigerated until ready to use- it will keep for up to a month in the fridge.
  • BASE: Cream the butter and sugar until light and fluffy.
  • Stir in the flour.
  • Mix well and press evenly into an 18 x 23 cm tin that has been lined with greased greaseproof paper.
  • Bake at 180 C for 10 minutes until pale golden.
  • TOPPING: Beat eggs, sugar and vanilla until thick and creamy.
  • Stir in the mincemeat and coconut.
  • Mix well.
  • Fold in the combined flour, baking powder and salt.
  • Spread topping evenly over the base.
  • Return to the oven and bake for a further 20-30 minutes until the fruit mince setting is set.
  • When cool, cut into fingers and store in an airtight container.

½ cup butter, room temperature
1 cup creamy peanut butter
½ cup packed light brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon baking soda
1 ½ cups all-purpose flour
1 cup peanut halves
¼ cup green candy sprinkles
60 3-inch pieces red shoestring licorice

Steps:

  • In a large bowl combine butter and peanut butter; beat until creamy. Add brown and white sugar and beat until fluffy. Beat in egg, vanilla extract and baking soda until well blended. With mixer on low, mix in flour just until blended. Cover and chill for 1 hour, or until firm.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Shape 1 level tablespoon of dough into 1 inch balls. Taper each ball at one end into a teardrop shape. Press flat on one side. Place flat sides down, 2 inches apart on ungreased cookie sheets. Press the sides of the dough in to raise the 'backs' of the mice, as dough will spread slightly during baking.
  • Gently push 2 peanut halves in each 'mouse' for ears, and 2 pieces of green candy for eyes. With a toothpick make a hole 1/2 inch deep in the tail ends.
  • Bake in preheated oven for 8 to 10 minutes, or until firm.
  • Transfer to a cooling rack and insert licorice pieces as tails.

⅓ cup sour cream
1 cup chocolate cookie crumbs
⅓ cup chocolate cookie crumbs
⅓ cup confectioners' sugar
24 silver dragees decorating candy
¼ cup sliced almonds
12 (2 inch) pieces long red vine licorice

Steps:

  • Melt the chocolate, and combine with sour cream. Stir in 1 cup chocolate cookie crumbs. Cover and refrigerate until firm.
  • Roll by level tablespoonfuls into balls. Mold to a slight point at one end (the nose).
  • Roll dough in confectioners sugar (for white mice), and in chocolate cookie crumbs (for dark mice). On each mouse, place dragees in appropriate spot for eyes, almond slices for ears, and a licorice string for the tail.
  • Refrigerate for at least two hours, until firm.
