HOLIDAY POUND CAKE

Steps:
- In a large bowl, cream butter, cream cheese and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Sift flour together with baking powder and salt; stir into creamed mixture. Fold in cherries and 1/2 cup nuts. Sprinkle remaining nuts into a greased 10-in. fluted tube pan. Pour batter into pan. Bake at 325° for about 70 minutes or until a toothpick comes out clean. Cool cake in pan 5 minutes on wire rack before removing from pan. Cool thoroughly. Make a glaze with confectioners' sugar and milk; drizzle over cake. Garnish top with cherries and pecans if desired.

This recipe was Printed in a Local Mississippi Newspaper Over 20-25 Years ago. The recipe came from a Dear Old Friend Of Elvis's. This Lady, used to make this for him every Christmas and on Special Occasions according to the article. In the Article she made the Paper keep her Name Anonymous, for Fear that people would Bombard her Tupelo, Missippi Home with Requests to make her cakes for them. This batter is so good, I could eat it without ever baking the cake. This cake is so Light, and tender its just wonderful. There are Just NO WORDS that describe the delicate texture and taste. This cake is so Good, You won't have to ask her to bake for You. You can do it yourself, with pride. Note: DO NOT PREHEAT YOUR OVEN

Steps:
- Butter and Flour 10" tube or Bunt cale pan
- Crean together Sugar and Butter till fluffy
- Add Eggs, one at a time, Beat well after each.
- Mix in 1/2 the Sifted flour, (MUST SIFT the Flour Twice) then Whipping cream, then the other 1/2 of the SIFTED flour. Stir well
- Add Vanilla
- Pour into Prepared flour Coated pan. MUST be a Tall pan it Rises to a Full Angel food sized cake pan. Its a big Pound cake. (See Photo)
- Place in "Cold Oven" and turn on the Heat to 350* degrees, (DO NOT PREHEAT OVEN) My Personal Note: when I baked this in My Oven I baked this at 350 for 1 hr 50 min. and it was done. I tested with a sharp knife, as its pretty tall. My suggestion; Watch your ovens and check after 1 1/2 hrs as ovens do differ.
- Bake 1 hr 30 min. (1 1/2 hrs) until sharp knife inserted in the center comes out clean.
- Cool in pan, 5 min.
- Remove from pan and cool thoroughly.
- Wrap well this cake will Keep for several days. (even out on the Cupboard & Still be Moist and Good) . . I did just that. Note: (This recipe is printed as it was in the Mississippi Newspaper article) Original Recipe does not say this, But I have used other flavors, such as, Orange and Lemon Extract in place of Vanilla, for Lemon or Orange Pound cake.

- Preheat the oven to 300 degrees F (150 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray. Place oven rack on the lowest level.
- Beat sugar, butter, and cream cheese together until creamy. Add eggs one at a time, beating until smooth.
- Sift flour, baking soda, and salt together in a bowl and stir into the batter. Stir in vanilla extract. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 30 minutes.

I found this recipe on television over 20 years ago. It consistently is the best pound cake I have made. It has been adapted for modern times. A true pound cake is a pound each of butter, sugar, flour and eggs. This recipe is half.

- Cream butter and sugar with electric mixer.

CHRISTMAS POUND CAKE BY FREDA
I First tried this recipe from an Ideals Christmas book that was given out by a bank many years ago. Its better than any pound cake you could think of making. The Fruits -N-Nuts in the batter, Makes this so unusual. I get requests for "that bread" you make at Christmas time as no one remembers the name. Tips: I have pierced the tops and drizzled this with brandy, when I choose not to make the Glaze, or Have used an egg-nog glaze drizzled over this. we really enjoy this cake better than cookies sometimes.

- Preheat Oven @ 325 degrees. Lightly grease Tube or Bundt pan
- Follow Directions & steps above. BAKE: 325 degrees for 1 hr, in lightly greased pan.
- Cool 8-10 min after removing from Oven.
- GLAZE: Heat all ingredients till sugar is dissolved completely. Pierce the surface of this cake with a long prong fork, while dribbling glaze, so the glaze will soak into the cake. COOL befoe Cuttng. Tip: Any glaze of your Choice works well on this cake. Use Your Imagination. ENJOY
