CHUNKY PEAR AND APPLESAUCE
This is our favorite way to make applesauce. It comes from the book, "Baby Let's Eat" for heatlthy cooking for both baby and family. The pears give it a bit of a crunch, even though we don't leave the chunks. We puree it smooth. And there's no sugar in this recipe. We usu. leave out the mace and it tastes fine.

Steps:
- Place all ingredients in a heavy saucepan.
- Bring to a boil over medium heat, then reduce heat to a simmer.
- Cover and cook, stirring occasionally, until reduced to a chunky sauce, about 10 minutes.
- Remove from the heat, cool, and refrigerate until needed.
- You can also freeze in ice cube trays. Keep frozen cubes in a plastic bag so you can remove one portion at a time.

SPICED APPLE-PEAR SAUCE
The natural sweetness of fresh apples and pears makes this homemade sauce a standout over the store-bought version. Lemon juice adds brightness and keeps the fruit from browning, and cinnamon and nutmeg lend warm spice notes.

- Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
- Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)
CHUNKY PEAR APPLESAUCE
Here's a quick way to dress up store-bought applesauce...and it is equally good served as a side dish or a light dessert. Chopped apples and pears add texture, while wine spices up the mixture a bit. The recipe is from Mary Eckles of Kirkwood, Missouri.

- Heat a skillet over medium heat; add pears, apples, water, and vanilla extract to the hot skillet. Cover and simmer fruit mixture for 10 minutes; remove lid and cook until most of liquid is evaporated and fruit is softened, 10 to 15 more minutes.

SUPER SIMPLE PEAR APPLESAUCE
Apples are okay, but pears are divine. I wanted to figure out how to make a simple pear sauce because I like pears far more than apples. Homemade applesauce is way more delicious than anything out of a jar, and the perk is you can eat it warm-when my family likes it best-and jar any leftovers. - Toss together the apples, pears, 1/4 cup water, maple syrup and 2 teaspoons cinnamon in a large pot with a heavy bottom (a Dutch oven works great for this). Cover and cook, stirring occasionally, over low heat, until the fruit are very tender, about 45 minutes or up to 1 hour. Stir in the lemon juice and use a potato masher to smash to your desired consistency. If you like a completely smooth, pureed sauce, use an immersion blender to blend until smooth. Taste and add additional cinnamon to your liking.
- Serve warm, or cool completely and store in sterile jars with tight-fitting lids up to 1 week in the refrigerator.
