- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray. In a large bowl, beat eggs, brown sugar, melted butter, sugar and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking powder, baking soda and salt; gradually beat into egg mixture. Stir in apples and pecans., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pan on a wire rack.

Steps:
- In large mixing bowl combine sugar, oil, eggs, and vanilla. Mix with an electric mixer until well combiined (about 2 minutes).
- In seperate bowl wisk together flour, soda, salt, cinnamon and nutmeg.
- Add dry ingredients to liquid mixing with an electric mixer--batter will be thick.
- Fold in walnuts, raisins and apples until all is incorporated.
- Pile batter into a well greased and floured 12 cup Bundt pan or well greased and floured 9 x 13 x 2 pan.
- Bake for one hour at 350 or until cake tester comes almost clean.
- If using Bundt pan let cake cool in pan for 20 minutes and turn onto to rack to continue cooling.
- If using 9 x 13 x 2 pan cool in pan and cut cooled cake into squares and serve directly from pan.

The batter looks wierd when you mix it all up because of the big chunks of apple. But it turns out wonderful in the end! Taste of Home gave it a blue ribbon . I've made it twice so far and both times it just dissapeared

- This came from August/September issue of Taste of Home. it's delish! I have made it once and just bought all the stuff to make more! Don't let the "chunkiness" of the batter fool you. it.
- In a large bowl cream the butter, sugar, and vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, alt, and baking soda; gradually add to creamed mixture and mix well.( batter will be stiff) stir in apples until well combined.
- Spread into greased, 13x9 pan. Bake 350 for 40-45 minute until top is lightly browned. Cool 30 min before serving.
- To make sauce, in small saucepan, combine butter and sugar. Cook over medium heat until butter is melted. gradually add cream. Bring to a slow boil over med. heat, stirring constantly. Remove from heat. Serve w/ cake! Garnish with slivered almonds if desired :).

- 1. Cut McIntosh apples into 1-inch (2.5 cm) pieces. Cut Granny Smith apples into smaller dice.
- 2. Combine apples and cider in a very large stainless steel or enamel saucepan. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat and boil gently for 20 minutes or until mixture is reduced by half.
- 3. Stir in sugar and lemon juice. Return to a boil, reduce heat, and boil gently for about 25 minutes or until mixture is very thick. There should still be some tender apple chunks remaining. Remove from heat.
- 4. Ladle into sterilized jars and process as directed for Shorter Time Processing Procedure .
- Variation: Spiced Apple Butter
- Add 2 tsp (10 mL) ground cinnamon and 1/2 tsp (2 mL) each ground cloves and allspice with the sugar.

- Heat oven to 350°F. Spray 12-cup fluted tube cake pan with baking spray with flour.
- In large bowl, beat 1 cup butter and the granulated sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time, until blended. Stir in 1/2 teaspoon vanilla. Stir in flour, baking soda, salt and cinnamon. Stir in apples and walnuts. Spoon into pan.
- Bake 50 to 65 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool completely, about 1 hour 30 minutes.
- In 2-quart saucepan, heat 1/2 cup butter over medium heat, stirring constantly, until golden brown. Gradually beat in powdered sugar with spoon. Stir in 1 teaspoon vanilla and enough milk until frosting is smooth and desired spreading consistency. Generously spread frosting over top and partially down side of cake. To serve, cut cake with serrated knife.
