As a pastor's wife, I cook for crowds often. This dish is always a hit. My own family thinks the potatoes are a must with London broil or marinated grilled chicken breasts. I frequently prepare them for guests, too. The recipe is very adaptable, and the results disappear. -Michelle Grigsby, Beavercreek, Ohio

3 pounds russet potatoes (about 9 medium), peeled and cut into 1/2-inch cubes
2 garlic cloves, peeled
6 ounces cream cheese, softened
2 tablespoons butter
1/2 cup sour cream
2 cups shredded cheddar cheese, divided
1 teaspoon garlic salt
1 teaspoon onion salt
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry

Steps:

  • Place the potatoes and garlic in a large saucepan; cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well. , In a bowl, mash potatoes and garlic with the cream cheese and butter. Add sour cream, 1 cup of cheddar cheese, garlic salt, onion salt and spinach. Stir just until mixed. Spread into a greased 2-qt. baking dish. , Bake, uncovered, at 350° for 30-35 minutes or until heated through. Top with remaining cheese; bake 5 minutes longer or until the cheese is melted.

This is a recipe I've made many times for parties and family gatherings, and shared many times, because someone always asks for the recipe. This was in Taste of Home in 1999, posted by Michelle Grigsby,Beavercreek, Ohio. I often make them the day before or the morning of the big gathering and pop them in the oven right before serving.

2 (3 ounce) packages cream cheese, softened
2 tablespoons butter or 2 tablespoons margarine
1/2 cup sour cream
8 ounces shredded cheddar cheese, divided
1 teaspoon garlic salt
1 teaspoon onion salt
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry

Steps:

  • Place the potatoes and garlic in a large saucepan; cover with water.
  • Cover and bring to boil; cook for 20-25 minutes or until very tender.
  • Drain well.
  • In a mixing bowl, mash potatoes and garlic with cream cheese and butter or margarine.
  • Add sour cream, 1 cup of cheddar cheese, garlic salt, onion salt and spinach.
  • Stir just until mixed.
  • Turn into greased 2 quart baking dish.
  • Bake, uncovered, at 350 for 30-35 minutes or until heated through.
  • Top with remaining cheese; bake 5 minutes longer or until cheese is melted.

READY AFTER CHURCH POT ROAST DINNER

There is nothing more satisfying then having dinner ready for you when you walk in the door from church. My kids are begging for food before we even get home, so by the time they change their clothes I have the table set and ready to eat. Add a salad and LOTS of biscuits and you have a meal that will keep you full all day. WARNING you may need a nap after this meal!!!! The season mix is a scaled down version of recipe #24952

Number Of Ingredients 10

2 -3 lbs roast
1 envelope brown gravy mix
1 cup water
1 can condensed cream of mushroom soup (undiluted)
1/4 cup minced white onion
1 1/4 tablespoons beef bouillon granules
1/8 teaspoon celery seed
1/8 teaspoon sugar
1 1/8 teaspoons onion powder
8 -10 small red potatoes or 8 -10 small yellow potatoes, washed not peeled

Steps:

  • Place washed roast in bottom of roasting pan.
  • Sprinkle Brown Gravy Mix on top followed by water.
  • Top with Seasoning Mix.
  • Cover all with mushroom soup.
  • Add potatoes or other veggies around the outer edges but not on top the roast.
  • Cover with foil (most lids do not have good seals use foil) and cook at 325o for 3 hrs till meat is fully cooked and veggies tender.
  • FYI: The gravy will be already made in the bottom of the pan if to thick add a bit of water but no need to add flour or corn starch.

It seems like there are endless recipe variations on macaroni and cheese; however my family is not a big fan of cheese sauce-based macaroni and cheese. It seems to dilute the cheese flavor. This simple but tasty recipe was given to me at a church supper in Terre Haute; it's old, definitely has German or Jewish (kugel?) roots. The secret is to use a good-quality EXTRA-SHARP Cheddar cheese.

2 tablespoons salt
2 cups elbow macaroni
¼ cup butter, softened
2 large eggs
1 (12 fluid ounce) can evaporated milk
½ (14 ounce) can sweetened condensed milk
1 ½ pounds extra-sharp Cheddar cheese, shredded
1 pinch paprika, or to taste
¼ cup butter
½ cup soft bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole with butter.
  • Dissolve salt in a large pot of water. Bring to a boil and cook macaroni, stirring often, until pasta is tender but still slightly firm to the bite, about 8 minutes. Rinse macaroni under cool water, drain, and transfer to a bowl. Stir 1/4 cup softened butter into macaroni and toss a few times to melt butter and coat macaroni.
  • Beat eggs in a bowl; whisk evaporated and condensed milks into eggs.
  • Spread a layer of macaroni into the bottom of the prepared casserole; sprinkle with a layer of Cheddar cheese. Continue layering macaroni and cheese, ending with a layer of cheese on top. Pour egg-milk mixture over the layers. Use a fork to gently dig into the layers, assuring that the egg-milk mixture flows into all the layers. Sprinkle with paprika.
  • Melt 1/4 cup butter in a small skillet over medium heat; cook bread crumbs in the hot butter, stirring constantly, until fragrant and golden, 2 to 3 minutes. Sprinkle crumb topping over casserole.
  • Bake in the preheated oven until casserole is browned and bubbling, about 45 minutes.
