DEVILED PORTUGUESE GRILLED LOBSTERS

Steps:
- Prepare the lobsters (see Cook's Note). Preheat a grill to medium.
- Melt the butter with the olive oil in a small skillet over medium heat. Add the sausage and cook until the fat begins to render, 1 to 2 minutes. Add the garlic and cook until fragrant, about 1 minute. Pour about half of the butter-oil into a bowl and keep warm; leave the sausage in the skillet. Add the panko to the skillet; cook, tossing, until crisp and golden, about 5 minutes. Stir in the parsley, chives and lemon juice and season with salt and pepper.
- Brush the lobster tails and cavities with some of the reserved butter-oil; season with salt and pepper. Firmly pack the breadcrumb mixture into the cavities and onto the tails; drizzle with more of the reserved butter-oil.
- Place the lobsters on the grill shell-side down; cover with a disposable aluminum pan and cook until the shells turn red and the stuffing is crisp, 12 to 15 minutes. Sprinkle with parsley; serve with lemon wedges and the remaining butter-oil for dipping.
GRILLED STUFFED OYSTERS

- Preheat a grill for high heat.
- Mix the ancho and guajillo chiles, garlic powder and salt in a bowl and set aside. Combine the cheese, onion, crab, octopus, shrimp, cilantro and jalapeno in a bowl, then add the seasoning mix. Top the oysters with the stuffing. Put the oysters on the grill and cook, covered, until cooked through, 4 to 5 minutes.
GRILLED LOBSTER
If you're not squeamish, the lobsters can also be killed by inserting the point of a sharp knife through the cross mark on their backs.

- Kill lobsters by plunging them headfirst into salted boiling water and cooking for 1 minute. Remove, and drain.
- Place lobsters on a medium-hot grill. Cook for 8 to 10 minutes, turning occasionally to avoid burning the shells.
- Crack a claw to see if it is fully cooked (the meat should be opaque). If not, detach claws, and return to grill for a few minutes more. Using kitchen scissors, split lobsters lengthwise by cutting along underside of tail, leaving back of shell intact. Scrape out red coral, if any, and green tomalley, and combine with melted butter for a dipping sauce, if desired. Keep lobsters warm on a platter covered with foil until ready to serve. Garnish with lemon wedges and serve with melted butter, if desired.
GRILLED LOBSTERS WITH ITALIAN-STYLE STUFFING
A recipe from my supermarket. If you want, you can use 2 tablespoon of finely chopped dried tomatoes instead of lemon zest.

- In a small bowl, combine garlic, lemon zest, basil and olive oil. Season with salt and pepper. Slice lobsters in half lenghwise and break claws. Spread basil mixture over each lobster half on the cut side. Refrigerate for 1 hour.
- Heat barbecue to medium-high.
- Place lobster halves, shell-side down, and claws on the oiled barbecue grill. Cook for 6 to 7 minutes, or until the shell is very red and the meat is opaque and easily pulls away from the shell. Cook claws for 2 to 3 minutes on each side.
- At serving time, sprinkle toasted pine nuts and Romano cheese over lobster and then drizzle with a thin stream of extra virgin olive oil. Serve with rice or risotto and a green salad.

STUFFED LOBSTER

- Preheat oven to 450 degrees F.
- Place lobsters in pan and chill in freezer for 15 to 20 minutes.
- Meanwhile, place 1 layer of river rocks* in the bottom of a wide pot and fill with 1-inch of water. Bring to a boil over high heat. Spread herbs across rocks, then quickly place lobsters on top. Cover and cook for 2 to 3 minutes. Remove and place in ice bath to halt cooking.
- Lay paper towels across a cutting board. Bring one lobster to the board and using your chef's knife, cut the lobster straight down the center, from head to tail. Remove tomalley and discard. Remove legs and claws. Using a rolling pin, roll over legs to extract the meat. Roughly chop the meat.
- Move claws to pan and roast for 4 minutes.
- Meanwhile, melt the butter in a large saute pan over medium heat. Add the onions and stir to coat. Follow with the lemon zest and scallions. Once onions are translucent add the leg meat. Then add the crackers and toss, off the heat, until all the liquid has been absorbed.
- Spoon filling into the open body cavities. Brush tail meat with olive oil and place upright on the pan along with the claws. Roast 10 to 14 minutes or until the stuffing browns and tail meat becomes opaque.
- Crack claws and remove the meat. Serve on top of stuffed lobster with extra-virgin olive oil on the side for dipping.

GRILLED SUMMER LOBSTER
I just ran across this recipe again when cleaning out some of my stored recipes. It's been a long time since I've made this, but my note on the recipe said that it was great. The times are approximate. The Chipotle Lime Oil makes about 2/3 cup and the Ginger-Green Onion Butter makes about 1/2 cup.

- Make the 2 sauces first and set aside; they can be made 2 hours in advance.
- Chipotle Lime Oil: (makes about 2/3 cup).
- Cook oil and garlic in heavy small sauce-pan over medium-low heat until garlic begins to brown, about 8 minutes.
- Carefully mix in next 4 ingredients.
- Stir until salt dissolves. Remove from heat. (Can be made 2 hours ahead.)
- Mix in cilantro.
- Ginger-Green Onions Butter: (makes about 1/2 cup).
- Cook oil and ginger in small saucepan over medium-low heat 2 minutes.
- Carefully add wine; simmer until reduced by half.
- Remove from heat.
- Add green onions and butter.
- Season with salt and pepper. (Can be made 2 hours ahead.).
- Lobster:.
- Drop 1 lobster, head first, into large pot of boiling water.
- Cover; cook 3 minutes (lobster will not be fully cooked).
- Using tongs, transfer lobster to baking sheet.
- Return water to boil.
- Repeat with second lobster.
- Transfer 1 lobster, shell side down, to work surface.
- Place tip of large knife into center of lobster.
- Cut lobster lengthwise in half from center to end of head (knife may not cut through shell), then cut in half from center to end of tail.
- Use poultry shears to cut through shell.
- Repeat with second lobster.
- Prepare barbecue (medium-high heat).
- Keeping lobster halves meat side up, brush shells with olive oil.
- Place halves, meat side up, on barbecue.
- Brush meat with oil; sprinkle with salt and pepper.
- Place pans with sauces at edge of barbecue to rewarm.
- Cover barbecue; grill lobsters until just opaque in thickest portion of tail, 7 to 9 minutes.
- Serve, passing warm sauces separately.

GRANDMA'S STUFFED LOBSTER
This is my grandmother's recipe for stuffed coldwater lobster. It is far and away my favorite meal, and if you feel like splurging you will not be disappointed. Also, this same stuffing is excellent for fish. Serve with more melted butter for dipping.

- Melt butter in a skillet over medium heat. Add scallops; cook and stir until opaque, about 6 minutes.
- Combine the cooked scallops and melted butter from the skillet, ground crackers, graham cracker crumbs, and poultry seasoning in a bowl. Mix well, adding additional melted butter if the stuffing is too dry.
- Bring 2 inches water to a boil in a large pot. Place lobsters in pot; steam until bright red, about 20 minutes.
- Lay cooked lobsters on the their backs on a work surface. Wear gloves and make an incision between the legs down to the tail using a heavy knife. Pry open the chest cavity and rinse out innards with warm water. Fill the chest cavity and tail with the stuffing until overflowing.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Place stuffed lobsters on their back on a baking sheet.
- Bake under the broiler until stuffing has browned, about 5 minutes.

- In a large skillet, saute peppers in oil just until tender. Sprinkle with salt and pepper. Meanwhile, in a small bowl, combine the butter, mustard, chives, garlic and pepper flakes., Cut bread into 1/2-in. slices, leaving slices attached at the bottom. - In a large pot boil about 2 gallons of water.
- Add one live lobster and cover.
- Cook for 3 minutes.
- Remove lobster with tongs and return water to boiling.
- Add 2nd lobster.
- Cook three minutes and remove with tongs.
- Turn lobsters upside down and cut lengthwise from the tip of the tail through the head (you may need to use poultry sheers to cut the tail portion of the shell).
- Place lobster halves, shell side down, on a medium hot grill and baste with butter and sprinkle with salt and pepper.
- Cover grill and cook for about 8-9 minutes or until the meat in the thickest part of the tail turns opaque.
- Serve with melted butter in dunking bowls and lemon wedges.
