CIDER WASSAIL
This traditional wassail recipe came from a dear friend in Fort Wayne, Indiana, where we lived for many years. Since it's warm, wonderful and non-alcoholic, we've even served it at church. This wassail drink is also perfect for a holiday open house. -Maryellen Hays, Wolcottville, Indiana

Steps:
- In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.

WASSAIL
Wassail is a hot mulled cider, traditionally enjoyed during wassailing, an English Christmas drinking ritual intended to ensure a good apple harvest the following year. The whole baked apples floating on top lend a homey feel to the warming festive drink. Serve as is -- or top with a splash of brandy if you like. It's perfect for a big family gathering or holiday party.

- Preheat the oven to 350 degrees F.
- Spoon the sugar into the center of each apple, then place in a 9-inch square baking dish with 1 cup water. Bake until the apples are very tender, 1 hour to 1 hour 30 minutes.
- Meanwhile, add the hard cider, pale ale, apple cider and Madeira to a large pot and bring to a gentle simmer over medium heat. Put the cloves, allspice, cinnamon sticks, orange zest and lemon zest in a piece of cheesecloth and tie it closed. Add to the pot along with the ginger and nutmeg. Reduce the heat to low and steep the mixture until the liquid is well spiced and fragrant, about 1 hour.
- Add the cooked apples and any of their juices to the pot and stir to combine. Remove the cheesecloth. Serve warm in individual mugs with an orange wedge and cinnamon stick.
WASSAIL

Steps:
- Combine liquid ingredients in a large stock pot. Stir in brown sugar, whole cloves and cinnamon sticks.
- Top with cut fruit, keeping the rinds and peels facing up towards the surface of the liquid.
- Heat on medium until boiling, and then reduce to simmer. Simmer for 1-2 hours.
- Remove fruit, cinnamon sticks and cloves. You can strain the wassail through a sieve if you prefer.
- Ladle into heat-safe mugs, top with garnish and enjoy.

Place orange slices, cinnamon sticks, allspice berries, and cloves in a muslin pouch or directly into the apple cider mixture. Bring apple cider mixture to a boil; reduce heat and simmer until flavors have blended, 15 to 20 minutes. Remove orange slices and spices before serving.

OLD VIRGINIA WASSAIL CIDER
A quick and delicious hot cider drink - Great for cold weather entertaining. Always a big hit with young and old! Cloves can be placed into cheesecloth or teabag infuser for easy removal if desired. A cinnamon stick in each cup makes a nice garnish.

Gather corners of cloth to enclose seasonings; tie securely with string. Add spice bag to juices., Bring liquid to a simmer. Add rum and, if desired, bitters and orange slices. Steps:
- Take the orange peel it and stud it with cloves (13 is enough) dice up 3 small apples and sprinkle them with sugar roast them at 180c in the oven for 30-40 minutes
- Place the apple juice/cider in a saucepan add the orange peels vanilla extract, 2 Cinnamon sticks, orange peel, nutmeg and ground ginger, simmer slowly until warm
- When roasted add to the apple juice/cider and spice mixture and simmer until hot
- Pour and serve pop a cinnamon stick in the glass with some of the roasted apple slices and one clove stick
- Some brandy can also be added into the alcoholic mix for an extra kick
WASSAIL (HOT SPICED CIDER)
Warm, aromatic and delicious. Great for holiday entertaining. Thanksgiving and Christmas are never without this kept warm in a crockpot. Has been a part of our traditional family feasts for years! We do not usually add alcohol, but some rum may be a good addition to this recipe.

- Place cloves and cinnamon sticks into a cheese cloth and tie with twist tie. (A coffee filter also works well).
- Mix liquids and brown sugar in a crockpot or in a large kettle. Float the sac with spices in crockpot or kettle. Place sliced oranges on top of wassail.
- Heat on high (crockpot) or medium heat (stovetop)to desired temperature (would not recommend boiling) and then keep warm on low in the crockpot or on the stovetop. Wassail will have more flavor if it is kept at higher temperature for 1-2 hours before serving.
- To reduce bitterness, the orange slices should be removed from crockpot or kettle after several hours.
