- In a small bowl, mix butter, cilantro, lime juice and lime zest. Shape into a log; wrap in waxed paper. Refrigerate until firm, about 30 minutes. Wrap each ear of corn in a piece of heavy-duty foil (about 14 in. square)., Grill corn, covered, over medium heat until tender, turning occasionally, 15-20 minutes. Meanwhile, cut lime butter into 12 slices. Remove corn from grill. Carefully open foil, allowing steam to escape. Serve corn with butter and, if desired, cheese.

- Cream butter in a bowl until smooth; mix in cilantro, lime juice, and cayenne pepper until thoroughly combined. Cover and refrigerate 1 hour to blend flavors.
- Peel husks back from ears of corn starting at the top, leaving the husks attached at the bottom of the ears. Remove all the corn silk and close husks over the ears again. Cover corn ears with cold water in a large bowl until husks are thoroughly soaked, about 20 minutes.
- Preheat grill for medium heat and lightly oil the grate.
- Place the corn in husks onto the hot grate and grill covered until husks are charred and the corn kernels are tender, 20 to 25 minutes, turning often. Strip off husks and serve corn with cilantro lime butter.

- In a bowl, combine all ingredients for the spice rub. Set aside.
- Bring butter to room temperature.
- In a bowl, mix all ingredients for the Cilantro Lime Butter. Set aside.
- Sprinkle the spice mix over the salmon fillets and gently rub into the meat. Shake the excess rub off the salmon fillets.
- Light a grill and preheat to 500 degrees. Turn heat down to 350 degrees. Place salmon fillets on grill. Cook 12 - 15 minutes or until salmon is just starting to flake.
- Serve immediately and top each salmon fillet with a dollop of the cilantro lime butter.

- In a medium bowl, combine butter, cilantro, garlic, lime zest, chili powder and paprika; season with salt and pepper, to taste. Set aside. Preheat grill to medium heat. Peel back outer husks, leaving them attached at the base of the ear; do not remove inner husks. Remove and discard silks; rinse corn and pat dry using paper towels. - Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
- Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
- Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
- Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
- Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
- Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
- With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
- Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

- Take softened butter and place in a medium bowl.
- Stir in the cilantro, lime juice, lime zest, green onion, and garlic paste. Mash with a fork or spoon to fully combine.
- Place butter over plastic wrap and form into a log. Wrap and place in fridge for 1 hour or until firm.
- Brush a grill or grill pan with canola oil and heat to high heat. (You want the grill HOT)
- In a small bowl, combine salt and pepper, garlic paste, olive oil and mustard powder. Stir to combine and form a paste. Rub both sides of steak with the paste.
