Fresh southwestern flavors make this extra-lean beef dish a tasty and simple solution to the "What's for dinner?" question.

3 cups Progresso™ beef flavored broth (from 32-ounce carton)
1 1/2 cups uncooked orzo or rosamarina pasta (9 ounces)
1 can (11 ounces) vacuum-packed whole kernel corn, undrained
1 can (4.5 ounces) Old El Paso™ chopped green chiles, undrained
2 teaspoons olive or vegetable oil
1/2 pound cut-up extra-lean beef for stir-fry
1 medium bell pepper, cut into 1/4-inch strips
1/4 cup chopped fresh cilantro

Steps:

  • Mix broth, pasta, corn and chilies in 2-quart saucepan. Heat to boiling; reduce heat. Cover and simmer about 10 minutes or until pasta is just tender; remove from heat. Let stand about 5 minutes or until almost all liquid is absorbed.
  • While pasta mixture is cooking, spray 10-inch nonstick skillet with cooking spray. Add oil; heat over medium-high heat. Cook beef and bell pepper in oil about 5 minutes, stirring occasionally, until beef is brown.
  • Stir beef mixture into pasta mixture. Stir in cilantro.

This is one of my favorite main dish orzo recipes. Quick and easy to make (always good for weeknight dinners), and it reheats well. It's actually not bad cold, either. Adapted from a Betty Crocker website recipe.

3 cups beef broth
1 1/2 cups uncooked orzo pasta (9 ounces) or 1 1/2 cups rosamarina pasta (9 ounces)
1 (11 ounce) can vacuum-packed whole kernel corn, undrained (such as Green Giant)
1 (4 ounce) can diced green chilies, undrained
1 (10 ounce) can Ro-tel Mexican festival tomatoes, drained (if you don't like spicy, you can omit the tomatoes or use a less-spicy type)
2 teaspoons olive oil or 2 teaspoons vegetable oil
1/2 lb extra-lean beef, sliced (such as stirfry beef)
1 medium bell pepper, cut into strips (optional)
1/4 cup chopped fresh cilantro
1/4 cup sliced black olives (optional)

Steps:

  • Combine broth, pasta, corn, chilies and tomatoes in a 2-quart saucepan. Heat to boiling, then reduce heat.
  • Cover and simmer for approximately 10 minutes, or until pasta is al dente.
  • Remove from heat and let stand until nearly all the liquid is absorbed.
  • While pasta is cooking, spray a 10-inch skillet with cooking spray. Add oil and heat over medium high heat. Saute sliced beef and bell pepper (if using) in oil for about 5 minutes, stirring occasionally, until beef is browned to your liking.
  • Stir beef and peppers into pasta mixture, then mix in cilantro and black olives (if using).
  • Serve.

1 lb orzo pasta
3/4-1 lb boneless skinless chicken breasts
2 tbsp oil
salt & pepper to taste
1 pint tear drop tomatoes (*cut in half)
1-2 med orange bell peppers (*diced)
1-2 yellow bell peppers (*diced)
1/2 med red onion (*diced about 1/2 cup)
15 oz can black beans (*drained)
10 oz queso fresco (*crumbled)
1/2 cups extra virgin olive oil
1 tbsp lime zest (*about 4 limes)
1/2 cup lime juice (*about 4 limes)
1/2 tsp cumin
1/2 tsp chili powder
1/2 cup chopped cilantro (*about 1/2 small bunch)
1 tsp salt
3-4 garlic cloves (*minced or crushed)

Steps:

  • Preheat oven to 350℉. Place chicken in a large baking dish & drizzle with oil. Salt & pepper to taste. Bake for 25-30 mins or until reaches internal temperature of 165℉. Let chicken rest for about 10 mins and then cube.
  • In the meantime whisk together olive oil, lime juice, zest, garlic, cumin, chili powder, garlic, salt and cilantro. Set aside.
  • Prepare veggies and set aside.
  • Bring a large pot of salted water to a boil. Once boiling cook orzo for 8-9 mins stirring occasionally. Drain immediately & place into large mixing boil. Toss with vinaigrette, veggies, beans, chicken and cheese.
  • Refrigerate or eat immediately. Tastes wonderful cold.

Orzo tossed with a zesty cilantro pesto and black beans, topped with tomatoes and avocado. This is a nut and dairy free pesto recipe, although we do include an optional cheese at the end of combining the pasta with the pesto.

2 garlic cloves
1 cup cilantro
1 tbsp lime juice
pinch red pepper flakes
⅓ cup extra virgin olive oil
12 ozs orzo pasta
1 cup chopped tomatoes
14.5 oz can black beans, drained and rinsed
1 avocado, cut into bite sized pieces
1/3 cup Mexican cheese such as cotija (optional)

Steps:

  • Begin boiling the water to cook the orzo.
  • Make the pesto: Combine the garlic cloves, cilantro, lime juice, red pepper flakes and olive oil in a food processor. Puree until the cilantro and garlic are finely chopped and everything is well mixed together. Set aside.
  • Cook the orzo according to package instructions. When the orzo pasta is done to your liking, drain and toss immediately with the cilantro pesto.
  • Add the black beans to the orzo,and stir to combine. Stir in the cheese, if you are using it. Serve the orzo, topped with a handful of tomatoes and avocado. Enjoy! this orzo with cilantro pesto is very good with a Cerasualo d'Abruzzo.

2 cups Orzo
1/4 cup chopped cilantro
1/4 cup chopped parsely
approx 24 cherry tomatoes, quartered
2 tbsp Land of Lakes spread (or something similar)
juice 1/2 lime
1/2 cup white wine
3 cloves garlic, minced
salt to taste

Steps:

  • Makes 6 one cup servings
  • saute garlic in melted butter, add lime juice, wine, cilantro, parsley, tomatoes, cooked thawed shrimp
  • Cook shrimp mixure until liquid is reduced about a third.
  • In a separate pan, cook orzo according to directions. Drain cooked orzo and add to shrimp mixture.
  • Salt to taste.

  • Turn your Instant Pot to the saute setting. When the display says HOT add in the beef. Break it up with a wooden spoon and brown it. Add in the onions and saute for 3 minutes. Add in the garlic and saute for 30 seconds. Drain off excess grease, if there is any.
  • Deglaze the pot with the chicken broth/water. Sprinkle in the orzo, green taco sauce, black beans and taco seasoning. Don’t stir.
  • Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When the time is up let the pot sit there for 5-10 minutes and then move the valve to venting. Remove the lid.
  • Stir in the tomatoes, green onions, cilantro, olives and cheddar. Season with additional taco seasoning and salt and pepper, if needed.
