I bring these to every event--they're always a huge hit. Kids love them, and moms like making them because they're lighter than your average scone. If you have trouble finding cinnamon chips at the store, you can get them online. -Kathy Monahan, Jacksonville, Florida

Number Of Ingredients 7

3 cups Biscuit Baking Mix
1/4 cup sugar
1/2 cup vanilla yogurt
1/3 cup 2% milk
1 tablespoon vanilla extract
1 cup cinnamon baking chips or semisweet chocolate chips
Cinnamon sugar or coarse sugar

Steps:

  • Preheat oven to 375°. In a large bowl, mix Biscuit Baking Mix and sugar. In another bowl, whisk yogurt, milk and vanilla; stir into dry ingredients just until moistened. Stir in chips. Turn onto a lightly floured surface; knead gently 10 times., Pat into a 9-in. circle. Sprinkle with cinnamon sugar. Cut into eight wedges. Place wedges on an ungreased baking sheet. Bake 20-25 minutes or until golden brown. Serve warm.

1-2/3 cups all-purpose flour
1/4 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 cup heavy whipping cream
1/2 cup miniature semisweet chocolate chips
1/4 cup chopped pecans, toasted
1/4 cup milk chocolate English toffee bits
1 tablespoon butter, melted
GLAZE:
1/4 cup confectioners' sugar
4-1/2 teaspoons spreadable cream cheese
2-1/4 teaspoons 2% milk
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, brown sugar, baking powder, cinnamon and salt. Stir in cream just until moistened. Stir in the chocolate chips, pecans and toffee bits. , Turn onto a floured surface; knead 10 times. Pat into an 8-in. circle; cut into six wedges. Separate wedges and transfer to a lightly greased baking sheet. Brush with butter. , Bake at 375° for 16-20 minutes or until golden brown. Combine the glaze ingredients; drizzle over scones. 1 tablespoon ground cinnamon
2 teaspoons shortening
2 teaspoons corn syrup
SCONES:
1-2/3 cups bread or all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup cold butter
1/2 cup evaporated milk
1/2 cup raisins
Additional evaporated milk

Steps:

  • In a large bowl, combine the sugar, cinnamon, shortening and corn syrup with a fork until crumbly and evenly blended. Spread onto a foil-lined baking sheet. Bake at 250° for 30-40 minutes or until melted and bubbly. Cool completely; break into small pieces. , In a large bowl, combine the flour, sugar, baking powder and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk just until moistened. Gently stir in raisins and cinnamon chips. , Turn onto a lightly floured surface. Roll to 1/2-in. thickness; cut with a floured 2-in. biscuit cutter. , Line a baking sheet with foil and grease the foil. Place scones 1 in. apart on foil. Brush tops lightly with additional milk. ¾ cup butter
3 ¼ cups all-purpose flour
⅓ cup white sugar
2 ½ teaspoons baking powder
½ pinch baking soda
½ teaspoon salt
1 cup buttermilk
1 (10 ounce) package cinnamon baking chips
2 tablespoons butter, melted
2 tablespoons white sugar

Steps:

  • Place 3/4 cup butter into the freezer for 1 hour. Cut into cubes.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine flour, 1/3 cup sugar, baking powder, baking soda, and salt in a large bowl using a whisk. Cut in very cold cubed butter with a pastry blender or using your fingers until you get coarse crumbs.
  • Create a well in the flour mixture; add buttermilk and stir gently until dough is just moistened. Fold in cinnamon chips.
  • Turn dough out onto a lightly floured surface. Knead gently until dough is no longer sticky, 10 to 12 times, and divide in half. Pat or roll each portion gently into a 7-inch circle.
