CINNAMON CHOCOLATE CAKE

- In a small saucepan, combine the butter, oil and chocolate. Cook and stir over low heat until chocolate is melted. Remove from the heat. Add the water; pour into a mixing bowl. Cool to room temperature. Beat in the eggs, sugar and vanilla. Combine the flour, cinnamon, baking soda and salt; add to the chocolate mixture alternately with buttermilk. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° until a toothpick inserted near the center comes out clean, 30-35 minutes. Remove to a wire rack. , In a small saucepan, combine the butter, milk and chocolate. Cook and stir over low heat until the chocolate is melted. Remove from the heat. Stir in confectioners' sugar and vanilla until smooth; fold in pecans. Spread over warm cake. If desired, sprinkle with additional chopped pecans.

CINNAMON SWIRL CHOCOLATE CHIP BREAD

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Combine flour, baking powder, baking soda, and salt in a large bowl.
- Combine sugar, brown sugar, and oil in a separate bowl. Stir in buttermilk, egg, and vanilla extract. Add to flour mixture and mix until combined. Fold in chocolate chips. Spoon 1/2 of the batter into the prepared loaf pan.
- Combine brown sugar and cinnamon for the topping in a small bowl. Sprinkle all but 2 tablespoons topping into the loaf pan and cover with the remaining batter. Gently drag a knife through the batter to create a swirl. Sprinkle the remaining topping on top of the loaf.
- Bake in a preheated oven until a toothpick inserted comes out clean, 50 to 60 minutes. Remove and let cool for 15 minutes. Remove from the pan to a wire rack to cool completely.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
- Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

More of a cake than bread, this is moist and full of buttercream. A little time consuming, but worth it. Served on a pretty plate and dusted with powdered sugar, it is an impressive dessert.

Steps:
- Mix chopped chocolate and boiling water together until chocolate melts. Cool completely.
- Mix flour, soda, cinnamon and salt.
- Beat brown sugar and butter together till light and fluffy. Add eggs one at a time, beating well. Add sour cream.
- Slowly add chocolate mixture and flour mixture to butter mixture. Mix till thoroughly blended. Spread into a 9 x 5 -inch loaf pan that has been well greased and floured. Smooth top evenly.
- Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Transfer to a wire rack to cool for 10 minutes.
- Loosen loaf with a metal spatula and turn out to cool completely.
- To make filling:.
- Beat together confectioners sugar, and butter till light and fluffy. Beat in cream, corn syrup and cinnamon.
- To assemble: cut a 3/4-inch slice off of each side of the cake starting with the sides. Lay slices on a piece of parchment with the baked side down and the cut side up. Spread all surfaces with filling and use it all.
- Replace sides and top and bottom. Wrap with plastic and chill for an hour. Remove wrap, place on a plate or platter and dust with confectioners sugar. Serve with fresh berries if desired.

- In a large bowl, beat butter until light and fluffy, about 1 minute. Gradually beat in 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder, baking soda and salt. Add to creamed mixture alternately with buttermilk just until mixed., Transfer half of the mixture to a 9x5-in. loaf pan coated with cooking spray. Combine cinnamon and remaining sugar. - Preheat oven to 350°F (177°C). Spray a 9×5 loaf pan with nonstick spray. I prefer a dark metal loaf pan, which seems to help brown quick breads more evenly.
- Make the cinnamon-swirl first by combining the cinnamon and sugar together in a small bowl. Set aside.
- Make the bread: Whisk the flour, baking soda, and salt together in a large bowl. Stir in the chocolate chips. Set aside. In a medium bowl, whisk the egg, brown sugar, and granulated sugar together until combined. Whisk in the buttermilk, oil, and vanilla. Slowly pour the wet ingredients into the dry ingredients and gently whisk until there are no more lumps. Avoid over-mixing.
- You’ll have about 3-3.5 cups of batter. Spread half of the batter into prepared loaf pan. Top evenly with 3/4 of your cinnamon-sugar mixture. Gently spread the remaining batter on top as best you can and sprinkle the rest of the cinnamon-sugar. Sprinkle with a couple more mini chocolate chips if desired. Using a knife, gently swirl the batter with 1 simple swirl (I usually swirl a “S” shape) from the top to the bottom of the loaf pan.
