My mother in law created this recipe and passed it on to me! It's absolutely to die for, and the yummiest way I know to prepare a pork loin. Enjoy!

2 pounds boneless pork loin roast
4 red potatoes, peeled and sliced
salt and pepper to taste
3 sweet potatoes, peeled and sliced
2 tablespoons ground cinnamon
1 tart green apple - peeled, cored, and sliced
½ cup butter, sliced
½ cup milk
½ cup water
2 cubes chicken bouillon
1 cube beef bouillon
1 tablespoon cornstarch

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place the pork roast in a medium baking dish. Season red potatoes with salt and pepper, and arrange around the roast. Place sweet potatoes and cinnamon in a resealable plastic bag, and shake to coat. Arrange sweet potatoes around the roast. Place apple over the roast and potatoes. Top with butter slices. Seal baking dish tightly with foil.
  • Cook 1 1/2 hours in the preheated oven, or until the internal temperature of the pork has reached 145 degrees F (63 degrees C).
  • In a medium saucepan over medium heat, blend the milk, water, chicken bouillon, beef bouillon, and cornstarch until the bouillon cubes are dissolved and the mixture is thickened. Serve with the pork roast and potatoes.

Cooking spray
1 1-pound pork tenderloin, all visible fat discarded
1 medium lemon, halved
1/4 cup finely snipped fresh parsley
1 1/2 teaspoons bottled minced roasted or plain garlic or 3 medium raw or roasted garlic cloves, minced
1/2 to 1 teaspoon salt-free lemon pepper
1/4 teaspoon salt
2 large sweet potatoes, halved lengthwise
2 teaspoons light tub margarine
1 1/2 teaspoons dark or light brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 325°F. Lightly spray a broiler pan with cooking spray.
  • Put the pork in the pan, tucking any thin ends under to cook evenly. Squeeze the lemon over the pork. Sprinkle with the parsley, garlic, lemon pepper, and salt. Using your finger tips, lightly press the seasonings so they adhere to the pork.
  • Wrap each potato half individually in aluminum foil. Place around the pork.
  • Bake for 50 to 55 minutes, or until the pork registers 150°F on an instant-read thermometer or is slightly pink in the very center. Transfer the pork to a cutting board. (Continue baking the potatoes.) Let stand for about 10 minutes before slicing. The pork will continue to cook during the standing time, reaching about 160°F.
  • Meanwhile, in a small bowl, stir together the margarine, brown sugar, and cinnamon until smooth.
  • Slice the pork and arrange on plates. Unwrap the potatoes and place beside the pork. Top the potatoes with the margarine mixture.

2 lbs boneless pork butt, trimmed of excess fat and gristle (shoulder can also be used)
2 1/2 teaspoons olive oil or 2 1/2 teaspoons canola oil
6 whole scallions, ends trimmed, cut into 1-1/2-inch lengths, and smashed lightly with the flat side of a knife
6 garlic cloves, smashed lightly with the flat side of a knife, peeled, and sliced thin
6 slices fresh ginger, about the size of a quarter, smashed lightly with the flat side of a knife
1 teaspoon chili paste
2 -3 cinnamon sticks
1 whole star anise, smashed or 1 teaspoon anise seed
4 cups water
1/2 cup soy sauce
1/4 cup rice wine or 1/4 cup sake
2 tablespoons sugar
4 sweet potatoes (about 2 pounds) or 4 yams, peeled and cut into 1-1/2-inch cubes (about 2 pounds)
2 tablespoons minced scallion tops (to garnish)

Steps:

  • Cut the pork into 1-1/2-inch cubes.
  • Heat the oil until very hot in a 4-quart casserole or a Dutch oven with a lid. Add half the pork pieces. Sear the outside of half the pork over high heat until brown, turning once. Remove and sear the remaining meat. Set aside.
  • Reheat the pan and oil, add the Seasonings. Stir-fry until fragrant, about 15 seconds, then add the Braising Mixture. Reduce the heat to low, cover, and let simmer for 20 minutes. Add the pork, bring the liquid to a boil, and reduce the heat to low. Let simmer, covered, for 35 to 40 minutes. Add the sweet potatoes, stir, cover, and continue cooking for about 25 minutes, or until the potatoes are tender. Serve the pork and potatoes atop a bed of blanched or steamed greens, with some of the braising mixture spooned on top and accompanied by steamed rice.
  • Note: Chinese cinnamon, or cassia, has been used by Asian doctors for thousands of years. It is considered to be especially soothing to the stomach.

3 garlic cloves, sliced
3 tablespoons olive oil
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon dried thyme
6 medium potatoes, peeled
1/2 teaspoon salt
ONION MUSHROOM GRAVY:
1 cup water
1 cup beef broth
2 medium onions, sliced
1-1/4 cups chopped fresh mushrooms
1 tablespoon butter
1 tablespoon vegetable oil
1/4 cup all-purpose flour
2 tablespoons minced fresh parsley
1/4 teaspoon pepper

Steps:

  • Cut slits in top of roast; insert garlic slices. Combine the oil, paprika, pepper and thyme; rub over roast. Place in a large resealable plastic bag; seal and refrigerate the roast overnight., Transfer roast to a shallow roasting pan. bake, uncovered, at 350° for 1-3/4 hours. Meanwhile, place potatoes and salt in a saucepan and cover with water. Bring to boil. Reduce heat; simmer, uncovered, for 15 minutes or until almost tender. Drain; cool slightly. Cut potatoes into quarters; arrange around roast., Bake 45 minutes longer or until a thermometer reads 160° and potatoes are tender, basting potatoes with drippings occasionally. Remove potatoes; keep warm. Cover roast and let stand for 15 minutes before carving., For gravy, pour drippings and loosened browned bits into a measuring cup. Skim fat, reserving 2 tablespoons drippings. Add water and broth to reserved drippings; set aside. In a large saucepan, saute onions and mushrooms in butter and oil until tender. , Stir in flour until blended. Gradually stir in broth mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in parsley and pepper. Serve with roast and potatoes.

6 garlic cloves, minced
1 tablespoon butter, melted
1 tablespoon fresh minced sage, can use ground use less
2 teaspoons fresh rosemary
4 lbs center-cut bone-in pork loin roast (rib)
4 large russet potatoes, peeled, cut into 1 inch pieces

Steps:

  • Preheat oven 375°.
  • Whisk 1/4 cup oil, garlic, butter, sage and rosemary in a small bowl to blend.
  • Place pork in large roast pan.
  • Sprinkle with salt and pepper.
  • Rub herb mixture over pork (can be made 1 day ahead. Cover and chill).
  • Cover pork loosely with foil and roast 2 hours.
  • Divide remaining 1/4 cup oil between 2 heavy skillets.
  • Heat oil over medium-high heat.
  • Divide potatoes between skillets.
  • Sprinkle with salt and pepper.
