Steps:
- Prepare waffle iron with cooking spray and heat up. In a small bowl, combine the 3 tablespoons sugar and 1/2 teaspoon cinnamon; set aside. In a mixing bowl, combine flour, baking powder, baking soda, remaining sugar and cinnamon. In another mixing bowl, combine egg whites, buttermilk, applesauce, maple syrup, vanilla, orange extract, and raisins. Mix dry ingredients with wet ingredients just until moistened. Pour enough batter to fill two-thirds of the waffle iron. Cook until crisp and golden brown. Set aside. Repeat with remaining batter. Serve waffles with hot syrup. CINNAMON RAISIN WAFFLES

- Mix all of the dry ingredients, except the raisins, in a medium sized mixing bowl. (Optional: sift the flour before mixing for fluffier waffles).
- If your plant milk is cold, pour it into a separate bowl and microwave it in 10 second intervals until it feels about room-temperature. Once it is no longer cold, whisk the other wet ingredients into the milk.
- Pour the wet ingredient mixture into the dry ingredient mixture and stir to combine, making sure to remove any large lumps of flour.
- Fold the raisins into the batter
- Set up your waffle iron based on its instructions. Once it is ready to use, scoop between 1/3 - 1/2 cup of batter into the waffle iron (this will vary based on the size of your waffle iron). Using a spatula, spread the batter out slightly on the waffle iron - leaving just a little bit of room on the edges for it to naturally spread out the rest of the way. Cook based on the waffle iron instructions*.
- Safely remove waffle from waffle iron once cooked (I like to use a spatula to gently peel the edges off of the waffle iron, and then the rest usually comes off easily!). Repeat this whole process with the remaining batter.
- Top as desired and serve! (If saving for the next day, place cooked waffles in a ziplock bag in the fridge and reheat when ready to eat).

- Make the spread: beat the cream cheese and heavy cream together in a small bowl with a hand-held mixer; beat in the cinnamon and sugar; cover and refrigerate until needed (keeps for up to 5 days).
- Make the waffles: if your raisins aren't moist and plump, place them in a heatproof bowl and pour boiling water over them; let the raisins steep for a minute, drain, turn out onto a paper towel and pat dry; set aside.
- Preheat waffle iron; if you want to hold the finished waffles until serving, preheat oven to 200°.
- Melt the butter; reserve.
- In a big bowl, whisk the flours, baking powder, baking soda, salt, and cinnamon until combined; whisk in both the sugars.
- In another bowl, beat together the buttermilk, vanilla, and eggs with a whisk until well mixed.
- Pour the liquid ingredients over the dry ingredients and whisk until just combined; fold in the raisins and melted butter into the batter.
- Lightly butter or spray the grids of your iron.; brush or spray the grids again only if subsequent waffles stick.
- Spoon out ½ to 2/3 cup of batter onto the iron; use a metal spatula or wooden spoon to spread it almost to the edge of the grids.
- Close the lid and bake until browned and set.
- Serve the waffles immediately or keep them, in single layer, on a rack in the preheated oven while you make the rest of the batch.

- Place water, milk, shortening, salt, flour, sugar and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.
- If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished.
- Take dough out after first kneading cycle has finished. Turn dough out onto a lightly floured surface and roll out into a rectangle. Spread dough with butter, brown sugar, and cinnamon. Roll dough, and divide into two parts. Place loaves in two lightly greased 9x5 inch bread pans. Cover and let rise in a warm place until doubled in size, about 1 hour.

- Mix dry ingredients in a small bowl.
- In a separate bowl, whisk eggs until well blended (I use a kitchenaid mixer); stir in the buttermilk and butter.
- Stir in the dry ingredients until well mixed, adding enough of the milk to make the batter thin enough to flow from a spoon. I use the whole 1/4 cup.
- Bake in a lightly oiled waffle iron until medium brown, about 3 minutes in mine.
- Serve hot.
