1/2 c Granulated sugar
2 Egg whites whipped
1 3/4 c Buttermilk at room temp
1/2 ts Orange extract
1 1/2 tb Baking Powder
1/2 ts Baking soda
1/4 c Applesauce at room temp
1 ts Vanilla
3 tb Granulated sugar
2 c Unbleached flour
1/2 c Raisins
2 tb Maple syrup
1 ts Cinnamon

Steps:

  • Prepare waffle iron with cooking spray and heat up. In a small bowl, combine the 3 tablespoons sugar and 1/2 teaspoon cinnamon; set aside. In a mixing bowl, combine flour, baking powder, baking soda, remaining sugar and cinnamon. In another mixing bowl, combine egg whites, buttermilk, applesauce, maple syrup, vanilla, orange extract, and raisins. Mix dry ingredients with wet ingredients just until moistened. Pour enough batter to fill two-thirds of the waffle iron. Cook until crisp and golden brown. Set aside. Repeat with remaining batter. Serve waffles with hot syrup. These waffles are perfect for a cozy morning! They are a comforting and familiar cinnamon raisin flavor, have a slight sweetness to them, and pair well with tons of different topping options. Your next delicious breakfast is right here!Note that the amount of batter per waffle and the length of time you cook each waffle may vary based on your waffle iron.

1.25 cups whole wheat pastry flour (or all purpose flour)*
3 Tbsp coconut sugar
1.5 tsp baking powder
1/4 tsp salt
1.5 tsp cinnamon
1 Tbsp arrowroot powder
1/2-3/4 cup raisins
1 cup almond or cashew milk (or another plant milk)
1 Tbsp apple cider vinegar
1/4 cup applesauce
1/2 tsp vanilla extract
Raisins or other dried fruit
Fresh apples or pears, diced
Unsweetened coconut shreds/flakes
Maple syrup or date syrup
Roasted pecans or walnuts

Steps:

  • Mix all of the dry ingredients, except the raisins, in a medium sized mixing bowl. (Optional: sift the flour before mixing for fluffier waffles).
  • If your plant milk is cold, pour it into a separate bowl and microwave it in 10 second intervals until it feels about room-temperature. Once it is no longer cold, whisk the other wet ingredients into the milk.
  • Pour the wet ingredient mixture into the dry ingredient mixture and stir to combine, making sure to remove any large lumps of flour.
  • Fold the raisins into the batter
  • Set up your waffle iron based on its instructions. Once it is ready to use, scoop between 1/3 - 1/2 cup of batter into the waffle iron (this will vary based on the size of your waffle iron). Using a spatula, spread the batter out slightly on the waffle iron - leaving just a little bit of room on the edges for it to naturally spread out the rest of the way. Cook based on the waffle iron instructions*.
  • Safely remove waffle from waffle iron once cooked (I like to use a spatula to gently peel the edges off of the waffle iron, and then the rest usually comes off easily!). Repeat this whole process with the remaining batter.
  • Top as desired and serve! (If saving for the next day, place cooked waffles in a ziplock bag in the fridge and reheat when ready to eat).

Steps:

  • In a small bowl whisk together the flour, the sugar, the baking powder, and the salt. In a bowl whisk together the egg, 2 tablespoons of the butter, 1/2 cup water, the raisins, and the cinnamon, add the flour mixture, and stir the batter until it is just combined. Heat a waffle iron until it is hot, brush it with the oil, and pour half the batter onto it. Cook the waffle according to the manufacturer's instructions, transfer it to a baking sheet, and keep it warm, uncovered, in a warm oven. Make another waffle with the remaining batter in the same manner. Serve the waffles with the syrup and the additional butter.

3/4 cup plump raisins
4 tablespoons unsalted butter
1 cup all-purpose flour
2/3 cup whole wheat flour
1 tablespoon double-acting baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 1/2 teaspoons ground cinnamon
2 tablespoons firmly packed brown sugar
2 tablespoons sugar
1 3/4 cups buttermilk
1/2 teaspoon pure vanilla extract
2 large eggs

Steps:

  • Make the spread: beat the cream cheese and heavy cream together in a small bowl with a hand-held mixer; beat in the cinnamon and sugar; cover and refrigerate until needed (keeps for up to 5 days).
  • Make the waffles: if your raisins aren't moist and plump, place them in a heatproof bowl and pour boiling water over them; let the raisins steep for a minute, drain, turn out onto a paper towel and pat dry; set aside.
  • Preheat waffle iron; if you want to hold the finished waffles until serving, preheat oven to 200°.
  • Melt the butter; reserve.
  • In a big bowl, whisk the flours, baking powder, baking soda, salt, and cinnamon until combined; whisk in both the sugars.
  • In another bowl, beat together the buttermilk, vanilla, and eggs with a whisk until well mixed.
  • Pour the liquid ingredients over the dry ingredients and whisk until just combined; fold in the raisins and melted butter into the batter.
  • Lightly butter or spray the grids of your iron.; brush or spray the grids again only if subsequent waffles stick.
  • Spoon out ½ to 2/3 cup of batter onto the iron; use a metal spatula or wooden spoon to spread it almost to the edge of the grids.
  • Close the lid and bake until browned and set.
  • Serve the waffles immediately or keep them, in single layer, on a rack in the preheated oven while you make the rest of the batch.
  • Serve topped with Velvet Cream Cheese Spread.

1 ½ cups warm water
2 tablespoons milk
2 tablespoons shortening
1 teaspoon salt
4 cups bread flour
3 tablespoons white sugar
2 teaspoons active dry yeast
1 cup raisins
2 tablespoons butter, softened
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted

Steps:

  • Place water, milk, shortening, salt, flour, sugar and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.
  • If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished.
  • Take dough out after first kneading cycle has finished. Turn dough out onto a lightly floured surface and roll out into a rectangle. Spread dough with butter, brown sugar, and cinnamon. Roll dough, and divide into two parts. Place loaves in two lightly greased 9x5 inch bread pans. Cover and let rise in a warm place until doubled in size, about 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush tops of risen loaves with melted butter and bake in preheated oven for 30 to 40 minutes, until crust is brown and loaves sound hollow when tapped.

1 1/2 cups flour
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons sugar
1 teaspoon cinnamon
1/2 teaspoon cardamom (optional)
3 eggs
1 1/2 cups buttermilk
3/4 cup butter, melted and cooled slightly
1/4 cup milk, if needed

Steps:

  • Mix dry ingredients in a small bowl.
  • In a separate bowl, whisk eggs until well blended (I use a kitchenaid mixer); stir in the buttermilk and butter.
  • Stir in the dry ingredients until well mixed, adding enough of the milk to make the batter thin enough to flow from a spoon. I use the whole 1/4 cup.
  • Bake in a lightly oiled waffle iron until medium brown, about 3 minutes in mine.
  • Serve hot.

1 teaspoon vanilla extract
1 cup buttermilk
¼ cup butter, melted
1 cup all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ tablespoon white sugar
¼ teaspoon salt
2 egg whites
1 pinch ground cinnamon

Steps:

  • Preheat your waffle iron.
  • In a medium bowl, whisk together the eggs, vanilla, buttermilk and butter until well blended. Combine the flour, baking powder, baking soda, sugar, salt and cinnamon; stir into the buttermilk mixture. In a separate bowl, whip the egg whites with an electric mixer until stiff. Fold into the batter.
  • Spoon batter onto the hot waffle iron, close, and cook until golden brown. Waffles are usually done when the steam subsides.
