CINNAMON BISCUITS
I had these for the first time at my sister-in-law's when I was staying with them as a teen. They are now a much loved tradition in my home too. Any time it snows, the kids beg me to make them. I've changed them just a bit by adding the nuts but they are good with or without them. For an Orange Cinnamon variation see recipe #112535.

Steps:
- Combine flour, baking powder and salt; cut in shortening.
- Add milk and 1 tsp. vanilla; stir with fork just until dough leaves sides of bowl.
- Roll dough out, on lightly floured surface, into a 1/4 inch thick rectangle.
- Brush top with butter (I prefer to use soft butter rather than melted).
- Combine cinnamon and sugar; sprinkle evenly over dough.
- Sprinkle with chopped pecans (or other nuts or raisins) if desired.
- Roll up, starting on long side.
- Cut into 1/2 inch thick rounds.
- Place rounds, with sides just touching, in greased 9" round pan.
- Bake at 425°F for 18-20 minutes or until golden brown.
- Remove from oven and drizzle with glaze, serve warm.
- For glaze: Combine all ingredients and beat until smooth.
CINNAMON ROLL BISCUITS

- In a large bowl, combine the flour, baking powder, salt and baking soda. Combine the buttermilk, oil and vanilla; stir into dry ingredients just until moistened (dough will be sticky)., Turn onto a well-floured surface; knead 8-10 times. Roll out dough into a 15x9-in. rectangle. Spread butter to within 1/2 in. of edges. Combine the sugar, cinnamon, cardamom and pecans if desired; sprinkle over butter. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 1-1/2-in. slices., Place 1 in. apart on a parchment paper-lined baking sheet. Bake at 400° for 20-25 minutes until lightly browned., Meanwhile, in small bowl, combine the confectioners' sugar, vanilla and enough milk to achieve a drizzling consistency. Drizzle over warm biscuits. Serve immediately.

CINNAMON BUTTERMILK BISCUITS
A cinnamon and raisin biscuit, but made in a traditional cinnamon roll shape!

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a food processor, process cinnamon chips until coarsely ground. Remove 1/2 of the chips, and continue to process the remaining chips until finely ground.
- In a large bowl, whisk together baking mixes, 1 cup coarsely ground cinnamon chips, and raisins. Make a well in center, add buttermilk, and stir just until dough comes together.
- Turn dough out onto a lightly floured, flat surface. Knead gently for 1 minute. Flatten dough to a 8x10 inch rectangle. Brush with melted butter, and sprinkle with finely ground cinnamon chips. Starting from one long side, roll up the dough. Pinch seams and ends to seal. Slice roll crosswise into 8 equal slices, and arrange in a 9x13 ungreased baking pan.
- Bake 12 minutes, until lightly golden. In a separate bowl, stir confectioners' sugar, 1 tablespoon melted butter, and water until smooth. Drizzle glaze over hot biscuits.

CINNAMON-PECAN BISCUITS WITH CINNAMON BUTTER
This takes a little effort but boy this is sure delicious. I only make this for extra, extra special occasions.

Steps:
- Stir together first 4 ingredients in a large bowl; make a well in the center, and add whipping cream, stirring just until dry ingredients are moistened.
- Turn biscuit dough out onto a sheet of wax paper, and pat dough into 3/4-inch thickness; cut with a 2 1/2-inch round cutter.
- Place biscuits in a 13x9 inch pan.
- Reshape remaining dough, and repeat procedure.
- Bake at 400 degrees for 18-20 minutes or until lightly browned.
- Remove from pan immediately.
- Serve with Cinnamon Butter.
- Cinnamon Butter: Beat butter at medium speed with and electric mixer until creamy.
- Microwave cinnamon chips and whipping cream in a glass bowl at HIGH, 1 minute, stirring once.
- Stir until blended; cool.
- Stir together butter and cinnamon mixture; cover and chill.
- Serve at room temperature.
CINNAMON FRUIT BISCUITS

BEST CINNAMON BUTTER
The first time I ever tried cinnamon butter was at an overnight camp when I was 13. Since then, I've tried countless combinations of sugar and cinnamon to match its creamy yet gritty perfection, if attainable at all. Fortunately, I think I've got it. It tastes delicious on any type of bread, toasted or not. It's fantastic for breakfast, and is super easy to prepare. Just beware that once you've tried it, it will be appearing in your kitchen much more frequently. Enjoy!

- Make sure butter is at room temperature. If not, microwave for 20 seconds, taking it out to check it every 5 seconds. You want it to be soft, not melted.
- Using the back of a spoon, mash the butter until it's smooth and creamy.
- Add the cinnamon, white sugar and brown sugar to the butter. Make sure the brown sugar is not in clumps when you add it to the butter.
- Mix well, until everything is combined. Serve chilled or at room temperature on bread or toast.

- Put oven rack in middle position and preheat oven to 400°F. Line a large baking sheet with parchment paper.
- Whisk together flour, baking powder, granulated sugar, and salt in a bowl. Blend in butter cubes with your fingertips or a pastry blender until mixture resembles coarse meal. Stir together egg and buttermilk in another bowl, then add to flour mixture, stirring with a fork until a dough forms.
- Gather dough into a ball, then turn out onto a floured surface and gently knead 7 or 8 times. Roll out dough with a floured rolling pin into a 1/2-inch-thick round and cut out as many biscuits as possible with biscuit cutter. Gather scraps and knead once, then pat out into a 1/2-inch-thick round and cut out more biscuits.
- Arrange biscuits 1 inch apart on baking sheet and brush tops and sides with melted butter. Stir together turbinado sugar and cinnamon and sprinkle over biscuits (sugar will form a crust).
- Bake until golden brown and cooked through, about 15 minutes. Transfer biscuits to a rack and cool to warm, about 10 minutes.
