New Years Eve is tomorrow, which means it's time to pop the cork and treat ourselves to one of the most festive cocktails around: the Champagne cocktail. Champagne is among my favorite things to indulge in during the holidays, and while I can definitely enjoy it on its own, I really love it when it's used as the base of a cocktail. The traditional Champagne cocktail is pretty basic, so I decided to give it a twist by adding a bit of citrus. The reason I chose to add citrus to this beautiful classic is because it pairs perfectly with the effervescent qualities of the champagne. The classic Champagne cocktail consists of a sugar cube doused in angostura bitters and topped with Champagne, so by substituting citrus bitters along with fresh citrus, the cocktail becomes even more celebratory than the original.

Number Of Ingredients 5

1 sugar cube
1 dash of citrus bitters
½ ounce of lime juice
½ ounce of orange juice
Champagne

Steps:

  • In a champagne flute or coupe drop in 1 sugar cube and add a dash of citrus bitters right on top of the cube.
  • Pour in the lime juice and orange juice and allow the sugar to dissolve a bit.
  • Top with Champagne.

When selecting the Champagne for this cocktail, we wanted something moderately dry but with a hint of sweetness. Demi-sec (a French term meaning "half dry") Champagnes and sparkling wines provide the perfect balance.

Number Of Ingredients 3

2 teaspoons Mandarine Napoléon (tangerine) liqueur or Cointreau
6 oz demi-sec Champagne or sparkling wine, chilled
Garnish: thin slices of kumquat

Steps:

  • Pour liqueur into a Champagne flute and swirl around to coat inside of glass. Top off with Champagne.

1 cup bourbon
1 cup cranberry juice
1/4 cup ginger-flavored liqueur
1/2 teaspoon orange bitters
Lime twists, if desired
2 bottles (750 ml each) champagne or sparkling wine, chilled
Fresh cranberries, if desired
Lime wedges, if desired

Steps:

  • In large pitcher, stir together bourbon, cranberry juice, liqueur and bitters. Cover; refrigerate 3 hours.
  • To serve, pour 3 tablespoons bourbon mixture into each of 12 champagne flutes. Place 1 lime twist in each flute. Pour 1/3 cup champagne into each flute. Garnish with cranberries and lime wedges.
