CITRUS BUTTER SAUCE

Another recipe I found at Bahama Breeze's Restaurant site. Posting for ZWT Caribbean region, which is served with their Breeze Wood Grilled Chicken Breast as well as seafood entrees. Sounds delicious!!

Number Of Ingredients 8

2 teaspoons olive oil
1 tablespoon shallot, minced
1/2 cup white wine
1/2 cup orange juice, Fresh squeezed
6 tablespoons butter, cold and cubed
1 tablespoon sugar (optional, I don't use it)
salt
white pepper

Steps:

  • Add the oil in a heated small sauce pan. Add the shallots and sauté for one minute.
  • Add the Orange juice and white wine and reduce by ¾.
  • Reduce the heat to low and add the butter cubes one at a time while whisking the sauce to evenly incorporate the butter; do not allow the sauce to boil as it will break.
  • Add the sugar, salt and pepper.
  • Stir to combine then strain the sauce through fine mesh strainer.
  • Serve hot and Enjoy!

This is the perfect sauce for our grilled salmon with citrus sauce.

Yield Makes 3/4 cup

Number Of Ingredients 6

1/2 cup fresh orange juice
1/4 cup fresh lime juice
2 teaspoons sugar
2 teaspoons Dijon mustard
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • In a small skillet over high heat, boil 1/2 cup fresh orange juice and 1/4 cup fresh lime juice until reduced to 1/2 cup, 8 to 12 minutes.
  • Remove from heat; whisk in 2 teaspoons sugar, 2 teaspoons Dijon mustard, and 2 tablespoons olive oil. Season with coarse salt and ground pepper.

CITRUS-GARLIC SAUCE

This fabulous citrus sauce comes together in minutes. It is an elegant addition that brightens any fish dish, or try it on chicken cutlets.

Yield makes about 1/2 cup

Number Of Ingredients 8

3 tablespoons unsalted butter
4 garlic cloves, minced
Grated zest from 1 lemon
Grated zest from 1 lime
Juice from 2 small lemons (about 4 tablespoons)
Juice from 1 lime (about 2 tablespoons)
Kosher salt to taste
3 tablespoons chopped fresh basil

Steps:

  • In a small skillet over medium heat, melt the butter. Add the garlic and cook, stirring, until fragrant, about 30 seconds.
  • Add the lemon and lime zest and juice and a pinch of salt. Cook for 1 to 2 minutes.
  • Add the basil and cook for 1 minute. Remove from the heat and serve over fish or chicken.

TROPICAL CITRUS SAUCE

1 1/2 tablespoons olive oil
2 garlic cloves
3 tablespoons fresh lime juice
3 tablespoons pineapple juice
1/2 cup cubed mango
1 tablespoon chopped fresh parsley or 1 tablespoon cilantro
1 chopped shallot
2 tablespoons butter
1 jalapeno pepper, seeded and chopped

Steps:

  • Heat olive oil over medium heat.
  • add garlic and shallots - cook for 30-40 seconds.
  • Add lime juice, pineapple juice, mango , and parsley - cook down for about 5-7 minutes.
  • In the last minute of cooking, add butter and jalapeno pepper and stir until butter is melted.
  • Serve over grilled fish or chicken.
  • Just a Note:I tried this recipe with cilantro instead of flatleaf parsley and found only minor differences. With the flatleaf parsley, I found that the sauce was mild and acted as a flavor enhancer to the fish (grouper). With the cilantro, I noticed it brought out a bright and robust flavor to the sauce and tasted quite nicely in contrast to the mild grouper. Either way, I found it very tasty!

1 teaspoon salt
1/4 cup fresh bitter orange juice or 4 tablespoons fresh lime juice

1/2 teaspoon fresh oregano, chopped
1/4 teaspoon ground cumin
1 pinch dried oregano, crushed
salt and pepper, to taste

Steps:

  • Crush together garlic cloves and salt with a mortar and pestle, put into a medium bowl.
  • Stir in bitter fresh orange juice, or lime juice, and fresh orange juice, olive oil, chopped fresh oregano, cumin, crushed dried oregano, and salt to taste.

This makes far more than is needed for a vegetable side dish, but it can be refrigerated or frozen for future use - but it can also be easily halved if desired (you only need 1-2 T per vegetable serving). It's low-fat too!

2 1/2 cups fresh orange juice or 2 1/2 cups tangerine juice
3 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
3/4 cup reduced sodium soy sauce
1 tablespoon sesame oil
1/3 cup diced peeled fresh gingerroot

Steps:

  • In a large saucepan combine citrus juices, soy, oil and ginger; Simmer for 10-15 minutes, or until mixture slightly thickens.
  • Pour sauce through a strainer into a bowl or storage container.
  • Use immediately or store in refrigerator for up to 3 or 4 days; store in the freezer up to 1 month; Reheat before serving.
  • *If thickening is desired add 1 T cornstarch per cup of cold sauce - mix in, then heat to a simmer until sauce thickens and appears translucent.
