Steps:
- Divide the meat into 12 loose balls, then form into 1/4-inch-thick patties. Fold 1 slice cheese into a small square; center it on a patty, leaving a 1/2-inch border of meat around the cheese. Top with another patty. Crimp the edges of the 2 patties together, sealing the cheese inside. Repeat with the remaining cheese and meat to make 6 cheese-stuffed patties.
- Warm the vegetable oil in a cast-iron skillet over medium-high heat. Add the onion and cook, stirring, until browned, about 10 minutes. Transfer the onion to a bowl and wipe out the skillet.
- Add the patties to the skillet, season with salt and pepper, and cook 7 to 8 minutes. Flip, then poke the middle of each patty with a toothpick to release steam; cook 7 more minutes for medium well.
- Put about 3 pickle slices on each bottom bun; top with the sauteed onion and a patty, then close with the top bun. Wait a few minutes before biting into the burger-the cheese is hot!

- Lightly mix 6 ounces ground beef chuck with a big pinch of kosher salt. Form into two equal balls, and then shape into two flat patties. Lay two slices American cheese between them and form the meat around the cheese; make an indentation in the center of the patty. Heat a cast-iron skillet over medium-high heat; sprinkle the skillet with salt. Cook the burger 4 to 5 minutes per side. Serve on a soft bun.
LUCY'S RECUPERATION FOOD
I have a golden retriever that eats everything! She often gets into things she is not supposed to, despite extreme effort on my part to shield her. She has eaten flour, tea, coffee grounds - you name it! When she does this, it makes her sick, so I feed her this for a couple of days, until her stomach settles. It is easy on the stomach, but nutritious and filling. If ever your pet is feeling a little under the weather, I recommend this.

Steps:
- Preheat the oven to 375 degrees.
- Combine all the dry ingredients together. Set aside.
- Cream the butter and sugar together, until just creamed. If you leave the stand mixer running as they are creaming, these muffins will not rise. Simply cream them until combined.
- Add the eggs, one at a time, mixing after each egg.
- Add one half of the dry ingredients, mixing well.
- Add one-third of the yogurt and combine until well mixed.
- Add one-half of the remaining dry ingredients to the mixture, and combine. Continue this, alternating the yogurt and dry ingredients, until you have mixed both of them in, completely.
- Add as many blueberries as you can.
- Oil a muffin tin well, then sprinkle a little cornstarch or white rice flour on the bottom of each cup.
- Fill each space for muffin two-thirds full. Sprinkle the raw sugar over the top and set them in the oven.
- Bake the muffins for about 35 minutes, or until the tops have browned and started to harden, and the entire house smells of warm blueberry muffins.
- If your sweetie wakes up from the smell, the muffins are done.

STEAK HOUSE JUICY LUCY
An idea from some local restaurants and added a few ingredients to this delicious burger. The steak sauce and steak seasoning really makes this combination special.

Steps:
- Preheat Grill or Grill Pan to a medium heat.
- Place the beef into a large mixing bowl and then add onion, A.1. sauce, and all of the seasonings to the meat.
- Mix the ingredients together well.
- You will then want to slice the cheese into small slices. Then make six thin even patties and then form an indentation for the cheese in the middle of three of the patties.
- Add the cheese to the three indented patties and cover with the other three remaining patties, surrounding all of the cheese with meat and clamp the edges together, you will now have three large patties instead of six with cheese in the middle of them.
- Place the patties on the grill or grill pan and cook the first side for 5 minutes.
- Flip the burger over and grill for an additional 5 minutes, you may repeat these steps to each side for a more well done burger depending on your preferences.
- Place the burgers on a sesame bun and add your favorite condiments.
