Steps:
- Rinse the wings thoroughly under cold running water and pat dry.
- In a large skillet set over medium flame, heat the oil and sauté the wings until they begin to brown, about 5 to 7 minutes per side. Remove the wings to a plate.
- Add the soy sauce, orange juice and honey to the skillet with 2 tablespoons of water and stir until combined adding more water if the glaze is too thick.
- Return the wings to the skillet, reduce the heat to medium low, and cook the wings, stirring occasionally, until they are nicely coated, another 5 to 7 minutes.

CITRUS-SOY CHICKEN WINGS
This is so yummy! I got this recipe from my husband's aunt, who makes this for parties. Note: It's not quite as labor intensive as it sounds. I guessed at the number of servings, which I really have no clue but is required. But this was always at potlucks so figure 2 lbs of wings should be at least 10 servings, depending on how many pieces you count as a serving! and unless you can't keep yourself away from them before they make it to the party! ;O)

Steps:
- Cut each chicken wing at joints to make 3 pieces. Discard tip or reserve for making chicken broth. Here's where I cheat and use those frozen party wings from Costco. Feel free to do the same thing.
- Combine the salt, pepper, ginger, egg white, and cornstarch in a large mixing bowl. Add chicken wings and marinate for 20 minutes, covered in refrigerator.
- Heat sake, orange juice, lemon juice soy sauce, sugar, and chili until sauce is reduced to 1 1/4 cup. Turn off heat and set aside.
- Heat corn oil (2 inches) in wok or deep edged frying pan to 350°F Place drumette pieces in oil and deep fry for one minute turning a couple of times. Add remaining wing pieces and cook for additional 4 minutes, turning 3-4 times or until golden brown. Remove from oil and drain on paper towels.
- Heat a wok or frying pan on medium heat until hot. Add 1 tbsp corn oil, and the garlic and sauce mixture. Stir and cook until sauce begins to bubble. Add chicken wings and stir and cook with sauce mixture until wings are well coated.

ROASTED CITRUS-SOY CHICKEN WINGS
Another recipe I found on MyGourmetConnection.com that sounds so good. Here is what is stated about the recipe: " These oven-roasted wings get plenty of flavor from a marinade of orange juice, soy sauce, sriracha and garlic. Serve by themselves, or with a little bit of sweet Thai chili sauce for dipping." Update 10/13/2013: I have now made these deliciously different wings and loved them. I still made a batch of baked buffalo wings for DH but I just ate these wings. The only change I made was to decrease the oven temp to 425 degrees, as mine seemed to be getting very caramelized/charring at 450.

- Combine the orange juice, soy sauce, garlic, sriracha, rice wine vinegar and sesame oil in a small bowl. Place the chicken wings in a self-sealing freezer bag and add the marinade. Press out all the air, seal and refrigerate for 6 to 24 hours, turning once or twice to ensure even flavor.
- Preheat the oven to 450°F Line a rimmed baking sheet with aluminum foil and spray with nonstick spray. Arrange the chicken wings in a single layer, skin side down. Discard the remaining marinade.
- Roast the wings for 15 minutes, then turn skin side up. Baste with any juices that may have accumulated in the pan and roast for an additional 10 to 15 minutes, until the skin is golden and crisp and the chicken is cooked through.
- Serve with sweet chili sauce for dipping.

- Preheat oil to about 160˚C (320˚F).
- Season both sides of the chicken wings with salt and pepper. Coat with potato starch.
- Fry the wings at 160˚C (320˚F) approximately 7 minutes.
- Heat oil to about 180˚C (350˚F). Fry the wings until golden brown, about 3 minutes. Drain them on paper towels. Set aside.
- Make the glaze. Combine all the glaze ingredients in a shallow pan and bring it to a simmer. Reduce until thick. Toss in the wings.
- Sprinkle toasted white sesame.

- Note: I had to put counts in the ingredients list for the recipe to be accepted, but this recipe works for any amount of wings.
- Cut up chicken wings into segments if necessary. Place in a suitable container for marinating.
- Mix soy sauce and lemon juice in equal parts, making enough to completely cover chicken wings in their container.
- Marinate in refrigerator overnight, but no longer than 24 hours.
- Drain wings and discard marinade.
- Arrange wings in a single layer on a baking sheet or sheet pan. Use foil if you want to save elbow grease cleaning the pan later. Depending upon the number of wings, make multiple batches.
- Place wings under preheated broiler, about 6 to 8 inches from unit.
- Broil on each side until you think you've burnt them. Really. These are best when they are very dark brown, just before they really start to burn. For my broiler, this is about 10 minutes per side.
- Be prepared to make these for every holiday party you will every attend again. Your hosts will demand it.
- Frozen chicken wing segments (thawed) seem to actually work out better than fresh. Go figure.
- Reconstituted lemon juice is fine.
SIMPLE BAKED SOY SAUCE GARLIC CHICKEN WINGS
I've been making this for years ! Have to give credit to my mom, it is her recipe. It's so simple and great for nights you just wanna have a hearty dinner and not have to slave in the kitchen.

Steps:
- Grab a big bowl.
- Place chicken wings in bowl.
- Coat wings with soy sauce, leaving a little puddle for them to marinate in on the bottom.
- press the garlic through a garlic press & scatter around (or chop finely).
- Grind about a teaspoon of black pepper on top.
- Throw in some cayenne if you're feeling daring, I just eyeball it.
- Cook some jasmine rice in the rice cooker, the chicken is great with it! But can also be made alone. I get mahatma jasmine rice at the grocery store, nice and cheap!
- Marinate for at least 2 hours, but keep in mind the longer it marinates. the tastier the wings will be. I like to prep it before bed and cook it the next day for dinner. Perfect!
- After marinating, preheat the oven @ 375 degrees & pop the wings in , after 30 minutes turn them over and let cook for another 30 minutes and voila! Dinner is served :).

- TO MAKE ONE PORTION OF SAUCE: Combine 1 cup of fresh squeezed orange juice, 1 tablespoon of soy sauce, the green onions, and garlic in a zip-lock plastic bag. Add the chicken wings and coat evenly with the mixture. Seal and marinate in the refrigerator for four hours.
- Combine remaining 1/2 cup of orange juice, 1 tablespoon soy sauce and brown sugar in a small saucepan to make the glaze. Heat the mixture to boiling, and cook till liquid is reduced by half and is the consistency of syrup; set aside.
- When ready to cook the wings, pre-heat the oven to 350°F and place on a baking pan, season with salt and pepper. NOTE: if you wish you may line the baking pan with tinfoil for easy clean-up.
- Brush the wings with the soy glaze, and bake for 30 minutes, brushing with the glaze every ten minutes till done. Take out of the oven and serve right away.

- Mix first 4 ingredients in large bowl until blended. Reserve 1/4 cup of the honey mixture; refrigerate until ready to use. Add chicken to remaining honey mixture; toss to coat. Refrigerate 1 hour to marinate.
- Preheat broiler. Remove chicken from marinade; discard marinade. Place wings on rack of broiler pan.

- Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
- Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
- Preheat an oven to 350 degrees F (175 degrees C).
- Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
- Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.
