THE ULTIMATE POTATO GRATIN

Steps:
- Preheat the oven to 375 degrees F.
- Finely shred the cabbage. Cut the bacon into 1/2-inch chunks. Place a small skillet over medium-low heat and fry the bacon, until crisp. Remove from pan with a slotted spoon and drain on paper towels. Set aside.
- Add 1 tablespoon butter to bacon fat in frying pan. When it has melted add 1/2 the garlic and give it a quick stir with a wooden spoon to soften. Add the cabbage and coat it with the butter. Slowly let it wilt. Add the bacon. Season with salt and freshly ground black pepper. Remove from heat and add most of the chives, reserving a little for the garnish.
- Generously butter the bottom and sides of a 9 by 13-inch ovenproof casserole dish. In a large bowl, combine the potatoes, 1 1/2 cups of cream, 1 cup of Parmesan, and the remaining garlic. Season with salt and freshly ground black pepper. Using your hands, place a layer of potatoes in the casserole dish. Sprinkle with Parmesan and repeat with 2 more layers. Spoon the cabbage mixture on top and spread it out evenly over the potatoes. Top it off with 2 more layers of potato and Parmesan. Pour the remaining 1 cup cream over the dish. Sprinkle with the remaining Parmesan.
- Cover dish with aluminum foil. Bake for 1 hour. Remove foil and bake for 30 minutes until golden brown. Leave for 10 minutes before serving. Garnish with fresh chives.
- *Cook's Note: Slice the potatoes immediately before using so they don't turn brown.

Steps:
- Slice the peeled potatoes into ¼ inch (½ cm) slices.
- Season the potatoes with salt and pepper, tossing them to make sure they're coated evenly.
- Press a layer of potatoes evenly into the bottom of a greased, square baking pan.
- Place half of the ham slices evenly on top of the potatoes, followed by half of the sliced cheese.
- Follow with another layer of potatoes, then the remaining ham and sliced cheese.
- Preheat oven to 350°F (180°C).
- Sprinkle the bacon and parsley evenly on top of the sliced cheese, and place one final layer of potatoes on top.
- Sprinkle the shredded cheese on top of the potatoes, then press it into an even layer.
- In a small bowl, mix the heavy cream and eggs. Pour on top of the shredded cheese.
- Bake for about 40 minutes, until the cheese is a deep golden brown.
- Cool slightly, slice, then serve!

POTATO LASAGNA WITH WILD MUSHROOMS AND HERB SAUCE

- Preheat the oven to 300 degrees.
- Peel and cut the potatoes into rectangular shapes, about 3 by 1 1/2 inches.
- Using a mandoline, a vegetable slicer or a sharp kitchen knife, slice each potato rectangle into 5 slices.
- Line a cookie sheet with parchment paper and brush the parchment with the melted butter. Spread out the potato slices on a cookie sheet. Butter another piece of parchment paper and place, buttered side down, on the potatoes. Cook in the oven until the potatoes are soft, about 10 to 15 minutes.
- Chop all the mushrooms. Heat 1 tablespoon of the butter in a saute pan and add the mushrooms. Cook over medium-low heat until they are soft. Add the finely chopped shallots and cook for 2 minutes more, or until the shallots are translucent.
- In a medium-sized saucepan, melt 2 tablespoons of butter. Add the diced celery, leeks, shallots and onion. Saute for about 5 minutes. Add the wine and, over high heat, reduce the liquid until it almost totally evaporates. Add 1 cup of water, the garlic, thyme and lemon juice and reduce it by a fourth. There should be 6 ounces of liquid. Strain through a sieve, pressing on the vegetables to release the juices. While the liquid is hot, pour it into a blender. Whir the liquid, adding 8 ounces of butter tablespoon by tablespoon. Season the sauce with salt and pepper to taste. Pour the broth back into the pan and stir in the chopped parsley and diced tomatoes.
- To serve, alternate slices of potato with mushrooms. Spoon the celery sauce over the potatoes and serve.

- Preheat oven to 400 degrees F (200 degrees C). Butter an 8x8-inch baking dish.
- Fit a food processor with shredding disk and use it to shred cheese. Transfer to a small bowl. Fit processor with slicing disk and use it to slice potatoes.
- Put potatoes in a large saucepan with half-and-half, garlic, salt, and nutmeg; stir gently to combine. Bring to a boil over medium-high heat, stirring occasionally. Cook at a gentle boil, stirring often with a heat-safe spatula to prevent sticking, until half-and-half has reduced and thickly coats potatoes, about 8 minutes.
- Spoon into prepared baking dish. Smooth top and sprinkle evenly with cheese.
- Bake in preheated oven until potatoes are tender when pierced with a knife and top is golden brown, 25 to 30 minutes. Let stand 5 to 10 minutes before serving.

- Preheat the oven to 450°; spray a 13 x 9 inch baking dish with cooking spray.
- Saute the onions in a skillet over medium-high heat with olive oil until just soft.
- Stir in the garlic, and cook another minute until just aromatic.
- Add the tomatoes, rosemary, oregano, and basil.
- Continue to cook until all moisture has evaporated, about 10 minutes.
- *Toasting the bread crumbs--in a nonstick skillet, melt 1 tablespoon butter; add the bread crumbs and combine, stirring to coat evenly while cooking; cook until golden brown and aromatic, about 5 minutes; remove from heat and let cool.
- To assemble--Layer 1/2 of the lasagna noodles in the prepared casserole dish; top with half of the sliced potatoes, and season with salt and pepper.
- Top the potatoes with half of the tomato mixture, and sprinkle with half the cheeses.
- Repeat layering, ending with cheese; sprinkle evenly with toasted bread crumbs.
- Cover the gratin with foil and bake for 30 minutes; remove the foil and bake 15-20 minutes to brown the cheese.
- Let stand 5 minutes to set the cheese before slicing and serving.

POTATO, CARAMELIZED ONION, AND GOAT CHEESE GRATIN
This is now my favorite potato gratin of all time. The caramelized onions mixed with the goat cheese gives this dish a very rich flavor. Instead of all of the prep work stated in the recipe, I just use a mandoline to slice the potatoes (with the peel on) and layer the dish with raw ingredients. - In a heavy 5- to 6-quart kettle heat oil over moderate heat until hot but not smoking and cook onions with thyme and salt and pepper to taste, stirring occasionally, until golden, about 15 minutes.
- Reduce heat to moderately low and cook, stirring frequently to keep from scorching, until golden brown.
- Remove kettle from heat.
- While onions are cooking, bring a large saucepan of salted water to a boil for potatoes.
- Peel potatoes and cut crosswise into 1/4-inch-thick slices.
- Add potatoes to boiling water and cook 5 minutes from time water returns to a boil.
- Drain potatoes well in a colander.
- Preheat oven to 425°F and lightly oil a 2- to 2 1/2-quart gratin dish or other shallow baking dish.
- Arrange half of potatoes, overlapping slightly, in dish and season generously with salt and pepper.
- Cover potatoes with onions, spreading evenly, and top with goat cheese.
- Arrange remaining potatoes, overlapping slightly, over cheese and season generously with salt and pepper.
- Dot gratin with butter.
- Gratin may be prepared up to this point 2 hours ahead and kept at room temperature, covered.
- Pour milk evenly over potatoes and bake 35 minutes, or until potatoes are tender and top is golden.
- Gratin may be made 1 day ahead and chilled, covered.
- Reheat gratin before serving.

CREAMY POTATO LASAGNA
For a new twist on lasagna, try this delicious potato lasagna. I use ham, but you could also use smoked turkey. I serve this with a salad.

- Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking dish.
- Whisk together Alfredo sauce and milk in a medium bowl. Spread 1/4 cup sauce in the bottom of the prepared baking dish. Layer 1/3 of the potatoes over sauce in the dish. Sprinkle with 1 tablespoon Parmesan cheese; salt and pepper to taste.
- Combine ham, broccoli, and 1 1/2 cups Swiss cheese in a separate medium bowl; mix well. Spread 1/3 of the ham mixture over potatoes in the baking dish. Top with another layer of potatoes, followed by ham mixture, finally topping all with remaining Swiss cheese and Parmesan cheese. Pour remaining Alfredo sauce on top.
- Cover and bake in the preheated oven for 45 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Uncover the dish and continue baking until potatoes are tender, about 25 more minutes. Let stand 10 to 15 minutes before serving.

- Peel and slice all potatoes to the width of a nickel (2 mm slicing disc makes quick work of it).
- Toss slices with garlic in a large bowl, easiest by hand.
- Oil a 9x9 baking dish or use silicone.
- Layer potatoes in 3 layers -- putting 1/3 of the cheese on each layer.
- Heat cream over medium heat and add salt and pepper. Pour over casserole.
- Gently press to be sure all is covered.
- Bake 1 hour or until potatoes are tender.
