Classic Potato Leek Soup Recipe

  1. butter
  2. leeks
  3. celery
  4. salt
  5. pepper
  6. potatoes
  7. vegetable broth
  8. milk
  9. lemon juice


  1. in a pot , melt butter over medium heat
  2. add leeks , celery , 1 / 2 teaspoons salt and 1 / 4 teaspoons pepper and cook , stirring often , for 5 minutes or until leeks are tender
  3. add potatoes , broth and 1 cup water
  4. cover and bring to a boil over high heat
  5. reduce heat to medium-low and boil gently , covered , for 15 minutes or until potatoes are soft
  6. remove from heat
  7. in a blender , in batches , or with an immersion blender , pure about half the soup until smooth , leaving half chunky
  8. return to pot , if necessary
  9. stir in milk
  10. heat over medium heat , stirring often , just until steaming
  11. stir in lemon juice and season to taste with salt and pepper
  12. cooking
  13. cut the leek in half lengthwise and rinse well
  14. separate layers and rub out any grit , shake dry , then slice
