SHORTCUT AIOLI (GARLIC MAYO) RECIPE
Garlic mayonnaise, or aioli, is one of America's most popular cold sauces. This simple aioli recipe has unlimited uses.

Steps:
- Gather the ingredients.
- Crush the garlic cloves with the flat of a knife, and remove the skin. Then mince the garlic very finely.
- Add a pinch of salt, and using the flat of the knife again, scrape and press the garlic against the cutting surface to make a paste that is as smooth as possible. It's making this paste from the fresh garlic that gives aioli its intense garlic flavor. Note that making a smooth paste is key to the success of this sauce. If you don't spend a few minutes on this step, you will be left with small bits of raw and harsh-tasting garlic, which will not do justice to the magic of aioli.
- Add the garlic to a small bowl, and whisk together with mayonnaise, lemon juice, and 1/4 teaspoon salt. Wrap and refrigerate for 30 minutes to allow the flavors to develop.

ROASTED GARLIC AIOLI
Creamy roasted garlic aioli can be made quickly with leftover roasted garlic. We love roasted garlic and tend to bake more than one at a time for convenience and to be energy efficient.

- Preheat oven to 350 degrees F (175 degrees C).
- Trim off the top of the head of garlic to expose cloves. Drizzle with olive oil. Sprinkle salt and black pepper on top. Wrap in aluminum foil.
- Bake in the preheated oven until garlic feels soft when lightly pressed, about 1 hour. Unwrap and cool, 5 to 10 minutes. Refrigerate until chilled, 30 minutes to 1 hour.
- Pull out individual garlic cloves with a sharp knife; place in a small bowl. Mash with a fork until creamy. Add mayonnaise, lemon juice, Worcestershire sauce, and cayenne; mix well until blended.
- Refrigerate until flavors combine, at least 1 hour.

- In a mortar, crush the garlic into a fine paste with the salt.
- Add the egg yolks and salt lightly again if needed.
- Mix in the olive oil very slowly until you obtain a smooth paste and the mixture is glossy.

GARLIC AïOLI
Homemade mayonnaise is one of life's perfect foods. With a hint of garlic, it's even better. Obviously, this is great on any sandwich, especially a steak or grilled fish sandwich. But it also makes a wonderful dipping sauce. I love it with shellfish, like steamers and grilled lobster. I've lived in this country for a long time now, but I still dunk my French fries in mayonnaise. That's arguably the best use for this simple sauce.

- Finely grate the zest of the lemon into a medium bowl. Add the yolk, mustard, garlic, salt, and pepper. Whisk until well blended. Continue whisking while adding the oil in a slow, steady stream to emulsify the mixture. Squeeze 1 tablespoon lemon juice into the mixture and whisk until blended. The aïoli can be covered and refrigerated overnight.
AIOLI (GARLIC MAYONNAISE)
The renowned chef Alice Waters makes her aioli in the most inefficient and old-fashioned way possible: using a mortar and pestle to mash the garlic, a fork to whip up the emulsion and no lemon juice, vinegar or any other acid at all. It was the best mayonnaise I've ever tasted, but then again, she did use a wonderfully perfumed olive oil. For this recipe, you should do the same.

- Mash the garlic to a smooth paste in a mortar with a pinch of salt; set aside 1/3 of the paste. To the rest of the garlic add 1/2 teaspoon room-temperature water, 1/4 teaspoon salt and the egg yolk, stirring well. Slowly whisk in the olive oil, a few drops at a time. As the mixture begins to thicken, begin adding the oil in a slow, steady stream. If the aioli becomes too thick, thin it with a bit of water, and continue. After all the oil has been mixed in, taste for salt and garlic, and adjust accordingly. Serve with salmon and vegetables.

Here is a base recipe for aioli which can be used as is or doctored with your own choice of flavorings. IE : Sub out 2 TBS of Chili Oil for 2 TBS of olive oil for Chili Aioli

- Combine all ingredients except for oil in a blender.
- Blend on medium-low speed until combined (about 15 seconds).
- Slowly start to stream in oil, working the blender speed up to the highest setting as the emulsion starts to thicken.
- Place in an airtight container and store in refrigerator for up to 5 days.
- Notes :.
- Traditionally, aiol is made using a mortar and pestle, hand grinding the garlic and and eggs together while adding the olive oil a few drops at a time. This yields a slightly thicker aioli and has the added benefit of allowing you to cancel your gym membership.
- Although most aioli recipes call for only yolks, when using a blender or food processor I prefer to use the whole eggs. The whites keep the aioli form thickening too quickly, give the blender blade something to grab onto and are also alkaline, which helps to inhibit bacterial growth.
