A delicious, classic chicken dish -- lightly coated chicken breasts braised with Marsala wine and mushrooms. Easy and ideal for both a quick weeknight entree AND serving to company.

¼ cup all-purpose flour for coating
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried oregano
4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
4 tablespoons butter
4 tablespoons olive oil
1 cup sliced mushrooms
½ cup Marsala wine
¼ cup cooking sherry

Steps:

  • In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
  • In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

This restaurant-style dish is the perfect comfort food and easy to make. It's a great date night dinner that you can have on your dinner table in less than 30 minutes.

10 oz boneless skinless chicken breast o (or chicken tenders)
8 oz baby bella mushrooms (or regular mushrooms)
extra virgin olive oil (to saute chicken and mushrooms)
seasoned flour to dust chicken (seasoned with sea salt and black pepper)
1 tbsp butter
⅛ tsp black pepper
¼ tsp granulated onion
1 cup chicken stock
1 cup Marsala
1 tbsp heavy cream (optional)

Steps:

  • Prepare your chicken by triming away any fat and skin. . If you are using tenders you can just use them as they are.
  • dredge the chicken in flour seasoned with salt and pepper, and add it to a hot sauté pan with enough olive oil to saute the chicken.
  • Sauté the chicken for 2-3 minutes on one side then turn it over, at this time add your mushrooms to the pan.
  • Continue to sauté the chicken, turning it as needed and letting the mushrooms cook.
  • After the mushrooms look cooked and the chicken is well seared on all sides, add in 3/4 of a cup of your Marsala ( reserve 2 ounces to finish the dish).
  • Allow the Marsala to continue cooking for 1-2 minutes
  • Add in the chicken stock and heavy cream, reduce the heat, and allow to simmer on low as the sauce reduces. Season wiht granulated onion and black pepper.
  • When the sauce has reduced about half of its original liquid, roll 1 tablespoon of butter in flour, getting a good layer of flour embedded into the butter. Now add it to the sauce, this will help thicken your sauce. (this method is called a beurre manie). Add in the remaining Marsala wine to finish the dish.
  • After the sauce has thickened and you are happy with the seasoning you can serve the Chicken Marsala to your guests. I love serving mine with mashed potatoes, roasted potatoes, rice or egg noodles.

  • Dice the onion. Then heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the olive oil is hot, add the onions and sauté until it is soft and slightly golden. Next stir in the mushrooms and garlic, season with salt and pepper, and sauté for a minute. Then add in 1/2 cup Marsala Wine. Sauté until the wine has been absorbed, then pour into a bowl and set aside.
  • Slice the chicken breasts in half from top to bottom and use a kitchen mallet to pound out the chicken breasts until they are thin and have increased in size by about 50%.
  • Next prepare the flour and egg mixture to dredge the chicken. In a bowl, beat the eggs and lemon juice together. In a second bowl, season 1 cup of flour with salt and pepper. Heat enough olive oil to coat the bottom of a skillet over medium heat. Then coat the chicken in the seasoned flour, then the egg, and then in the flour again. Brown each side of the chicken in batches by placing it in the skillet, making sure you don't overcrowd the pan. Add more olive oil to the pan as necessary. Layer the browned chicken in a greased casserole dish, and continue cooking the chicken in batches.

  • Halve the chicken breasts lengthwise. Using a meat pounder or a heavy skillet, pound the pieces until evenly thick. Season with salt and pepper. Add the 1/3 cup of flour to a plate and lightly coat each piece of chicken in flour, shaking off the excess. Set aside while the skillet heats.
  • In a heavy-bottomed skillet, heat the 3 Tbsp olive oil together with the 1 Tbsp butter over medium-high heat (or a touch higher even). When the butter is foaming, add the floured chicken pieces, adding only as many as will fit flat with an inch at least in between. (Do in batches, if necessary). Cook until the underside is golden, then flip and cook the other side as well, about 3 minutes per side. Remove to a plate.
  • Melt the remaining 2 Tbsp butter in the pan. Add the shallots and a pinch of salt and cook, stirring for about 30 seconds, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Add the mushrooms and cook until all of the mushroom liquid has evaporated and the mushrooms are golden, about 3 minutes. Sprinkle with the flour and cook, stirring, for about 30 seconds. Add the Marsala. Allow the Marsala to boil until almost completely evaporated.
  • Once the Marsala has almost completely evaporated, add the chicken broth and cook until the mixture is reduced by half, about 3 minutes. Stir in the cream. Return the chicken to the pan and allow it to sit in the simmering sauce to re-warm.
