EASY CLASSIC GOULASH
This version of classic American beef goulash makes an easy one-pot meal for the whole family. We love it.

- Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
- Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.
- Pour macaroni into beef mixture, cover the pot, and continue simmering until pasta is tender and flavors are completely blended, about 25 minutes. Discard bay leaves.

OLD FASHIONED GOULASH

- Cook the macaroni according to package directions, but shorten the cooking time by 3 minutes. Drain and set aside.
- Preheat a large pan over medium heat until hot. Add in the Ground Beef, onion and garlic. Cook for about 10 minutes until reaching 160°F, crumbling the Beef as it cooks.
- Add in the Worcestershire sauce, tomato sauce, diced tomatoes and stir to combine. Allow to simmer on medium heat for about 15 minutes.
- Add in the cooked macaroni. Season with salt, pepper and Italian seasoning.
- Stir to combine and enjoy!

CLASSIC GERMAN GOULASH
This savory braised beef stew is made with lots of onions, caraway seed, paprika and beef stock. It only takes 30 minutes of hands on prep and a few hours of braising. Serve this hearty, rich German Goulash over egg noodles, mashed or steamed potatoes for a delicious family dinner.

- Place the oven rack in the center of the oven and preheat to 325°.
- Add olive oil to a heavy pot or dutch oven and heat over medium heat. Add onions and 1/2 teaspoon of kosher salt. Cook for 15-20 minutes, stirring occasionally until the onions are very tender and golden.
- Transfer the onions to a separate dish and set aside.
- Season the beef with the remaining salt and pepper and transfer to the Dutch Oven. Cook over medium high heat for 5-10 minutes or until the beef has browned.
- Stir in the the onions, peppers, tomato, garlic, paprika, marjoram, caraway, tomato paste, beef broth and red wine to the pot. Heat to boiling.
- Place the lid on the pot, so that it's askew and steam can escape. Transfer the pot to the oven and cook for 1 1/2 hours or until the beef is tender.
- Remove the pot from the oven and stir in the sour cream. Garnish with chopped parsley and serve over buttered noodles.

TRADITIONAL GERMAN GOULASH

- Heat 1/2 tablespoon of the oil in a large saute pan over medium heat. Add the onions and cook, stirring occasionally, until golden and caramelized, 10 to 12 minutes.
- Heat the remaining 2 1/2 tablespoons canola oil in a large Dutch oven over medium-high heat and saute the stewing meat until nicely browned. Add the caramelized onions, garlic and caraway seeds. Cook for 1 minute, and then add the paprika, Montreal steak seasoning, onion powder, cayenne powder, salt and pepper. Add the green and red peppers, stir and saute until fragrant, about 2 more minutes.
- Add the tomato puree and tomato paste and stir. Add the vegetable broth and 1/2 cup water, plus more if needed, and deglaze the Dutch oven, making sure to loosen anything stuck to the bottom of the pot.
- Bring to a low simmer and cook, stirring occasionally, until the meat is very tender, about 90 minutes. Serve over Spaetzle, egg noodles or dumplings.

- Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
- Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.

- Add half the beef and brown well, about 5 minutes, stirring once or twice. Remove meat with a slotted spoon to a bowl (reserve any drained juices) and repeat with remaining beef.
- Return first batch of browned beef to the pan, add onion, garlic and spices and continue to cook, stirring often, for 5 minutes or until onions are translucent.

- In a large sauté pan, over medium flame, heat 1/2 tablespoon of the oil. Add in the chopped onions and cook, stirring now and then, until golden, caramelized, and fully fragrant – about 8 to 10 minutes should do it.
- In a large Dutch oven, over medium high flame, heat the remaining 2-1/2 tablespoons canola oil. Sauté the meat chunks until well browned all over.
- Next, add and stir in the garlic, caraway and fennel seeds, and the caramelized onions. Cook for about 1 minute, then add and stir in the onion powder, cayenne pepper, smoked paprika, Montreal steak seasoning, and salt and pepper.
- Now add and stir in the chopped sweet bell peppers; cook, stirring now and then, until softened and fragrant – about 2 minutes should do it.
- Add and stir in about 1/2 cup of water and the broth. If you think it is a little too thick, add a little more water.
- Deglaze the Dutch oven, making certain you have loosened all the yummy, thick, slightly burnt stuff that has become stuck to the bottom of the pot.
- Now, reduce the heat to just a low, but lively simmer and continue to cook. Keep stirring now and then, until the meat is very tender. This last phase can take as much as an hour and a half – two hours will even be better.
- About 10 to 12 minutes before your goulash is done cooking, heat a pot of water to boiling, and cook your dried spaetzle. When the pasta is fully tenderized, drain it through a large sieve or a colander.

- Add the eggs and the salt to the flour and give everything a stir with a wooden spoon or your electric mixer. Now slowly pour in the water while mixing vigorously until the dough has a lump-free, elastic consistency.
