Had these in New Orleans and loved them, so I tried different combos and liked this best.

1 ½ cups toasted pecans
1 ½ cups white sugar
⅜ cup butter
¾ cup brown sugar
½ cup milk
1 teaspoon vanilla extract

Steps:

  • Line a baking sheet with aluminum foil.
  • In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Drop by spoonfuls onto prepared baking sheet. Let cool completely.

1 tablespoon corn, peanut or vegetable oil
1 cup granulated sugar
1/4 cup water
1 1/4 cups whole blanched almonds or hazelnuts

Steps:

  • Rub a marble, glass or Formica surface with the oil.
  • Use a saucepan with a very heavy bottom to prepare this candy. Put the sugar and water in saucepan, and bring to boil. Cook over moderate heat, stirring constantly, about 5 minutes or to a temperature of about 250 degrees on a candy thermometer.
  • Remove syrup from heat and add nuts, stirring constantly with a wooden spoon until syrup becomes grainy. Return saucepan to heat and cook, stirring, until syrup hardens and becomes white. Continue to cook, stirring, until sugar grains melt and become liquid again. This requires time and patience. The cooking time will vary, depending on the intensity of the heat. Cook, stirring, until syrup takes on a dark, translucent, caramel color. This may require 10 to 15 minutes. Do not allow syrup to scorch or burn, or it will become bitter.
  • Immediately pour and scrape the candy onto the lightly oiled surface. Smooth over the top. Let stand until cool and totally hardened.
  • Candy may be broken into pieces or left whole; pieces may be pulverized in a food processor for use on top of ice cream or as a garnish or ingredient in such things as souffles in butter creams.

1 ½ cups brown sugar
1 ½ cups white sugar
½ teaspoon baking soda
1 cup sour cream
2 tablespoons light corn syrup
2 tablespoons butter, softened
1 teaspoon vanilla extract
2 cups chopped pecans
24 pecan halves

Steps:

  • Lightly grease the inside of a 4-quart saucepan. Line a baking sheet with waxed paper.
  • Stir the brown sugar, white sugar, baking soda, sour cream, and corn syrup together in the oiled pan; place over low heat. Cook and stir continually until the sugars are dissolved. Wipe any sugar crystals above the liquid line with a pastry brush moistened with cold water. Bring to a boil over medium-high heat. Do not stir once the sugar syrup begins to boil. Heat to 240 degrees F (115 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat; stir in the butter, vanilla, and chopped pecans.
  • Drop spoonfuls of the mixture 2 inches apart onto the prepared baking sheets. Press a pecan half into the top of each praline. Allow to cool completely. Store in an airtight container in a cool place.

Planning to try this for the holidays. I've never made pralines before! Cook time includes optional pecan-roasting minutes. Prep time is an approximation of how long it will take to get all your ingredients in the pot, and on their way to soft-ball stage.

1 1/2 cups sugar
3/4 cup light brown sugar (packed)
1/2 cup milk
3/8 cup butter
1 1/2 cups pecans (roasted) (optional)
1 teaspoon vanilla

Steps:

  • Combine all ingredients and bring to soft ball stage (230 to 240 degrees), stirring constantly.
  • Remove from heat.
  • Stir until mixture thickens, becomes creamy and cloudy, and pecans stay suspended in mixture.
  • Spoon out on aluminum foil or parchment paper.
  • Makes approximately fifteen to twenty pralines, depending on size.
  • Note: To roast pecans, bake them on a sheet pan at 275 degrees for 20 to 25 minutes until slightly brown.
