8 pounds boneless (skinless turkey breast, cut into large scaloppini (12 to 15 cutlets))
2 tablespoons kosher salt
1 cup all-purpose flour
5 large eggs (beaten)
3 1/2 cups breadcrumbs
2 teaspoons dried oregano
1 teaspoon red pepper flakes
Grapeseed or canola oil (for frying)
1 tablespoon unsalted butter (at room temperature)
Two 25-ounce jars store-bought marinara sauce
3 1/2 cups shredded mozzarella
1 1/2 cups freshly grated Parmesan
1/2 cup roughly torn fresh basil leaves

Steps:

  • This recipe originally appeared on Giada's Holiday Handbook. Episode: Giada's Italian Thanksgiving.
  • Season the scaloppini evenly with 4 1/2 teaspoons salt.
  • Place the flour in a shallow bowl, the eggs in a separate shallow bowl and the breadcrumbs in a third shallow bowl. Season the breadcrumbs with the oregano, pepper flakes and remaining 1 1/2 teaspoons salt. Working with one piece of turkey at a time, dredge each piece in the flour, followed by the egg and finished with the breadcrumbs. Place on a baking sheet.
  • Heat a large skillet over medium-high heat. Place a wire rack on a baking sheet. Add 1/4 cup of grapeseed oil to the hot skillet. Fry the turkey pieces, 2 at a time or as many as will fit in your skillet, until golden brown and crispy, about 3 minutes per side. Add more oil to the skillet as needed. Remove to the rack and continue with the remaining turkey pieces.
  • Preheat the oven to 400 degrees F. Butter an 11-by-13-inch roasting pan.
  • Spoon 1 cup of marinara on the bottom of the prepared pan. Nestle the turkey pieces in the sauce to make one layer covering the bottom of the pan, about 4 pieces. Spoon another cup of sauce on top and sprinkle with 1 cup mozzarella and 1/2 cup Parmesan. Sprinkle half of the basil over the top. Shingle another layer of turkey, sauce, cheese and basil. On the final layer, cover the top with the remaining turkey and spoon over the remaining sauce. Sprinkle with the remaining 1 1/2 cups mozzarella and 1/2 cup Parmesan. Bake until golden brown and bubbly, about 45 minutes. Allow to rest for 10 minutes before slicing and serving.

1 tablespoon chicken bouillon granules
6 cups cubed cooked turkey breast
1 cup grated Parmesan cheese
1-1/2 cups dry bread crumbs
4 teaspoons minced fresh parsley

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a Dutch oven, saute onions in 6 tablespoons butter until tender. Add mushrooms and red pepper; saute 4-5 minutes longer or until vegetables are tender. , Stir in flour and salt until blended. Gradually whisk in milk and bouillon. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in turkey and cheese; heat through. Remove from the heat. , Drain spaghetti; add to turkey mixture and mix well. Transfer to one greased 13x9-in. baking dish and one greased 11x7-in. baking dish. , Melt remaining butter; toss with bread crumbs. Sprinkle over casseroles. Bake, uncovered, at 350° for 30-35 minutes or until heated through. Sprinkle with parsley.

1/2 cup milk

1 1/2 pounds turkey meat (4 cutlets)
2 tablespoons olive oil
1 small onion (thinly sliced)
1 red bell pepper (thinly sliced)
1/2 cup mushrooms (sliced)
1 (16-ounce) jar tomato sauce
Garnish: Parmesan cheese
8 ounces mozzarella (sliced or shredded)

Steps:

  • Gather the ingredients and preheat the oven to 350 F.
  • Beat egg and milk together in a small bowl. Place breadcrumbs in a shallow dish. One at a time, dip turkey cutlets in the egg mixture then into the breadcrumbs until thoroughly coated, placing on a baking sheet as you go.
  • Heat olive oil in a nonstick skillet over medium heat. Cook cutlets in the hot oil until well browned, 3 to 4 minutes a side. Place in a shallow casserole dish.
  • Add sliced onion, red pepper, and mushrooms to the hot skillet. Cook until tender, about 5 minutes. Spoon the mixture on top of the cutlets.
  • Pour the spaghetti sauce over and sprinkle with Parmesan cheese (as much or as little as you like). Bake for about 20 minutes.
  • Top with mozzarella cheese and cook until cheese is melted and browned, about 5 minutes.
  • Serve over hot pasta and enjoy.

I was cruising thru Turkey Divan Recipes and didn't find one like the way I always make it. It's wonderful, I can't imagine it being as good any other way.

1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
1 1/2 cups chicken broth
2 tablespoons sherry wine
1/8 teaspoon nutmeg
1/2 cup whipping cream (whipped)
1 cup parmesan cheese
1 1/2 lbs fresh broccoli or 2 (10 ounce) packages frozen broccoli spears, cooked and drained
5 slices turkey breast (large slices)

Steps:

  • Melt butter in medium saucepan over medium heat. Blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in chicken broth. Heat to boiling stirring constantly.
  • Boil and stir one minute. Remove from heat. Stir in wine and nutmeg; gently fold in whipping cream and 1/2 cup of the parmesan cheese.
  • Place hot broccoli in ungreased baking dish, top with turkey slices. Pour sauce over meat. Sprinkle with remaining 1/2 cup of cheese.
  • Set oven control to broil and /or 550 degrees. Broil 3 to 5 inches from heat just until cheese is golden brown. 5-10 minutes, watch closely.

Add the garlic and cook another minute. Add the tomato paste, mix well and cook for 3-4 minutes, stirring often. You want the tomato paste to darken to a brick color.
