SUGAR COOKIES WITH CLOVERS
For a Saint Patrick's Day-themed treat, sprinkle a little luck on your sugar cookies with some decorative clovers.

- Sift flour, salt, and baking powder into a large bowl, and set aside. Put butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment; cream on high speed until fluffy. Beat in eggs.
- Reduce speed to low. Add flour mixture in two additions, and mix until well combined. Mix in vanilla. Divide the dough in half, and wrap in plastic wrap; refrigerate 30 minutes.
- Preheat oven to 350 degrees. Sift together confectioners' sugar and food coloring into a small bowl, and set aside.
- Roll out 1 piece of dough on a lightly floured work surface 1/8 inch thick. With a 2 1/2-inch cookie cutter, cut out 25 rounds. Arrange rounds on parchment-lined baking sheets 2 inches apart.
- Working with one round at a time, place clover stencil on top; using a small sieve, sprinkle surface with green sugar. Refrigerate until firm, about 15 minutes, or until ready to bake. Repeat process with remaining dough.
- Bake, one sheet at a time, until edges just start to brown, 10 to 12 minutes. Let cool completely on sheets on wire racks.
CLOVE SUGAR COOKIES
These sweet, nutty, spiced biscuits can be served after dinner, or packaged up as gifts for family and friends

- Put the butter, hazelnuts, vanilla extract and 85g of the icing sugar in a food processor and whizz to a paste. Add 1 tsp of the ground cloves and the flour, and pulse together until a dough forms.
- Heat oven to 200C/180C fan/gas 6. Line a couple of baking sheets with baking parchment. Roll the dough into walnut- sized balls and arrange on the baking sheets. Use the back of a fork to lightly squash each ball, then bake for 12-15 mins until they turn a pale biscuit colour - if they get too brown, they will become dry.
- Mix the remaining icing sugar and ground cloves, then sieve thickly over the hot biscuits. Leave to cool slightly before eating just warm, or cool.

SUGAR AND SPICE COOKIES
These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

- Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
- Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
- Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
- Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in orange zest and vanilla. In another bowl, whisk remaining ingredients; gradually beat into creamed mixture., Shape level tablespoons of dough into balls; place 2 in. apart on ungreased baking sheets. Bake 10-12 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool. Store in airtight containers.

CINNAMON CLOVE COOKIES
A twist on the usual cutout cookies. I love to make these in the fall and at Christmas time. Make sure you use fresh spices for the best flavor.

- Preheat oven to 350 degrees. Position rack in the middle of the oven.
- Line 2 large cookie sheets with parchment paper.
- In a large bowl, sift flour, baking soda, cinnamon, cloves, and salt.
- In the bowl of an electric mixer, cream the butter and sugar on medium speed until light and fluffy.
- Add the eggs and beat until incorporated. Beat in the orange zest and corn syrup.
- Add the dry ingredients in two two batches, beating until the dough is well mixed.
- With your hands shape the dough into a disk, wrap it in plastic, and chill for an hour.
- On a lightly floured board, roll out the dough 1/4 inch thick, if you like a thicker cookie then roll out thicker and adjust your cooking time. With a floured cookie cutter of your choice, cut out cookies and place them 1 1/2 inches apart on the cookie sheets. If you wish, sprinkle with crystal sugar.
- Reroll the scrapes only one time, or the dough will become tough. The more you handle the dough, the tougher it will get.
- Bake the cookies for 12 minutes, turning the cookie sheets halfway through the baking time.
- Cool the cookies on the sheet, set on racks. Store in airtight containers.
- The size of your cookie cutter will determine how many cookies you end up with.

SWEDISH SUGAR COOKIES
A tender, fragrant drop cookie (not rolled). I clipped this from a magazine many, many years ago when I went on a quest to find recipes from the countries of my various ancestors. I have no idea what magazine it was, or who submitted it or even if it's really Swedish!

- Cream together sugars, margarine and oil.
- Add eggs and vanilla.
- Blend thoroughly.
- Sift together flour, soda, cream of tartar, salt, and spices.
- Mix flour and creamed mixtures well. Chill at least 1 hour, but overnight is better.
- Pinch off bits and roll into balls the size of small walnuts.
- Roll in sugar.
- Place on lightly oiled cookie sheet.
- Flatten with bottom of glass.
- Bake at 375°F until lightly browned, 10 minutes or so.
- Do not over bake.

- In a bowl cream the shortening with the brown sugar until the mixture is light and fluffy and stir in the egg and the molasses. Into another bowl sift together the flour, the baking soda, the cinnamon, the ginger, the cloves, and the salt, add the flour mixture in batches to the shortening mixture, and blend the dough well. Chill the dough, covered, for 1 hour.
- Roll level tablespoons of the dough into balls, dip one side of each ball into the granulated sugar, and arrange the balls, sugared sides up, about 3 inches apart on greased baking sheets. Bake the cookies in batches in the middle of a preheated 375°F. oven for 10 to 12 minutes, or until they are puffed and cracked on top. Transfer the cookies with a metal spatula to racks and let them cool.
