1 lb brown sugar
1 cup water
1 lb fresh grated coconut
1/2 lime, juice of

Steps:

  • In a saucepan combine brown sugar and water.
  • Simmer gently on low heat until mixture forms a thick syrup. Have a cup of cold water ready. Drop a little of the boiling syrup into it. When the syrup can be gathered up in the fingers as a soft ball, remove the saucepan from the heat.
  • Stir in coconut and lime juice immediately.
  • Turn out on a lightly buttered platter and spread to cool.

OMG, I love this recipe. My DH and I gobbled a few pieces of it as soon as I took it out of the freezer. It is so fast and easy anyone can make it. The taste is really delicious!!! You can use a variety of powdered sweeteners in this recipe, just make sure you taste it while its still in the saucepan. That way, you can adjust the sweetness to suit your tastes.

1 cup coconut oil (liquified)
3/4 cup raw cacao (or powdered carob or coco)
2 tablespoons vanilla extract (or whatever flavour you want)
1/2 cup artificial sweetener (I used Xylitol)
3/4 cup slivered almonds (optional)

Steps:

  • Melt the coconut oil in a medium saucepan.
  • Carefully add the raw cacao, vanilla, sweetener and nuts. The oil might spit a bit when you add other ingredients to it. Note: If you want, grind the Xylitol in a coffee grinder until a fine powder.
  • Mix well to dissolve the sweetener and taste to make sure it is sweet enough.
  • Pour onto a baking sheet covered with parchment paper. My baking sheet was 8x 11 1/2" which made my bark about 1/4" thick. But you can use a smaller one if you like your bark thicker.
  • Put the pan into the freezer for about 30 minutes making sure the pan is straight so the bark will be even when it sets.
  • Check the bark before you take it out of the freezer to ensure its solid all the way through.
  • When set remove from the pan and break into pieces. Store in the fridge.
  • Bon Appetit!

One of my favorite dishes at Brazil a Gosto, chef Luiza Trajano's elegant restaurant in São Paulo, is a baked cocada (a coconut candy made of coconut and sugar cut into squares) with lemon sorbet. It is so delicious that I had to experiment with it back in my American kitchen. I have to admit I am very happy with the final result and I think you will be, too. This is an unpretentious and easy dessert to assemble. You can prepare everything in advance and just bake it on the day of serving.

8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup sugar
3 whole eggs
1/3 cup coconut milk
1/3 cup sweetened condensed milk
1 tablespoon Malibu rum
1 1/2 cups unsweetened grated coconut
2 tablespoons all-purpose flour, sifted
1 24-ounce baking dish

Steps:

  • Preheat the oven to 350˚F. Lightly grease a baking dish with some spray.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the butter and sugar until light and creamy at medium speed, about 5 minutes. Add the eggs, one at a time, and continue to mix. Scrape the sides of the bowl after each addition.
  • Add the coconut milk, sweetened condensed milk, and Malibu and continue to mix at medium speed until the batter is well blended, about 1 minute. Add the coconut and mix until it is all incorporated, although the batter will look grainy.
  • Fold the flour in with a rubber spatula. Spread the batter into the prepared baking dish. You can keep this in the refrigerator, covered with plastic wrap, up to 2 days ahead of time.
  • Bake in the oven until the top looks golden brown, the edges are set, but the center is slightly jiggly, about 20 minutes. Remove it from the oven and let it rest for 10 minutes.
  • Serve with a scoop of lemon sorbet.
