PINTO BEANS WITH MEXICAN-STYLE SEASONINGS
Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

Steps:
- Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.
- Drain beans, return to pot, and pour in fresh water to cover; add diced tomatoes, bacon, onion, chili powder, cumin, and garlic powder. Bring to a boil, reduce heat to low, and simmer for 3 hours.
- Stir cilantro and salt into bean mixture; simmer until beans are soft, about 1 more hour.

Steps:
- Combine beans and water in a large pot. Bring to a boil, reduce heat, and simmer for 3 hours. Add more water if necessary while beans are cooking.
- In a large skillet, cook bacon over medium heat until it is beginning to brown. Stir in onion, and continue cooking until onion is tender. Stir in tomato, and jalapeno, and cook for 2 to 3 minutes. Remove from heat, and stir in cilantro.
- Stir bacon and onion mixture into the beans, and continue cooking for 1 hour, or until beans are soft.

TUSCAN WHITE BEANS

- Cook 2 smashed garlic cloves and 1/4 teaspoon red pepper flakes in olive oil in a large skillet over medium-high heat, 1 minute. Add 1 chopped plum tomato and 1 sprig rosemary and cook 2 minutes. Add 2 cans drained, rinsed cannellini beans and cook, partially smashing the beans with a spoon, 5 minutes. Remove the rosemary. Stir in 1/2 cup water and some chopped parsley; season with salt. Sprinkle with parmesan and broil until golden. Drizzle with olive oil.
COCIDO MONTAñES (TIA BLANQUI'S BEANS)
My Spanish aunt (tia) is an amazing cook, and the last time we went to Spain she made this amazing, regional bean stew. She was happy to give me the recipe! You can get Spanish chorizo (do NOT use any other kind!! The dish will not taste right!!) and morcilla at specialty Spanish stores like La Tienda; they have a website from which you can order as well. Prep time includes the overnight soak on the beans. This is a low-and-slow dish; it takes a while to make, but is soooo worth it!

- Over high heat in a large, heavy-bottomed pot or Dutch oven, add all ingredients except morcilla, cabbage, potatoes and salt.
- Cover with cold water by two inches, bring to a boil, then cover and reduce heat. Simmer for 1 hour.
- Add cabbage, taste stew and add salt if needed. Simmer for another hour or until beans are tender. When they are tender, add morcilla and potatoes and cook for 10 minutes more. Remove morcilla, slice and serve in the bottom of the bowls of those who want some (me, me, me!), then ladle stew over top. Enjoy!

- Preheat the oven to 400 degrees F.
- Cook the pancetta in a heavy large oven-safe pot over medium heat until crisp, about 8 minutes. Add the onions and garlic, and saute until the onions are translucent, about 5 minutes. Mix in the beer, tomato sauce, brown sugar, vinegar, molasses, mustard, salt, and pepper. Stir in the beans. Bring to a simmer. Transfer to the oven and bake, uncovered, until the bean mixture bubbles and thickens slightly, stirring occasionally, about 45 minutes.

- Saute onions garlic and ginger on high heat until fragrant ( about 2 minutes).
- Add the drained kidney beans, ketchup and 1/2 cup of water and stir.
- I don't bother adding salt to this, as the brine that the beans were soaked in is sufficient. However if you wish you can salt to taste.
- Cover and simmer until the sauce has thickened. (About 5-10mins). It depends on how much water you put inches.
- NB. When cooking in the US and Canada I found that North American ketchups tend to be more tart and acidic than Caribbean ones.
- For an authentic caribbean flavour, add sugar to the sauce 1 tsp at a time until you get the desired sweetness.
