PUFF PASTRY CHEESE TWISTS

Puff Pastry Cheese Twists image

Provided by Food Network

Categories     appetizer

Time 55m

Yield about 30 twists

Number Of Ingredients 9

1 sheet frozen puff pastry, 1/2 (17.3-ounce) package
1/3 cup grated Parmesan
2 tablespoons extra-virgin olive oil
2 teaspoons minced garlic
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon cayenne
1 large egg
All-purpose flour, for dusting

Steps:

  • Preheat oven to 400 degrees F.
  • Line 3 large baking sheets with parchment paper. Thaw the pastry sheet at room temperature covered by a clean kitchen cloth, about 30 minutes. While the pastry is thawing, combine cheese, olive oil, garlic, oregano, salt and cayenne in a small mixing bowl. Stir well to combine. In a clean small mixing bowl, beat the egg with a fork. On a lightly floured surface, gently unfold the pastry.
  • Sprinkle the pastry lightly with flour and using a rolling pin, roll into a 14 by 10-inch rectangle. Brush the top of the pastry with a beaten egg. Cut in 1/2 lengthwise to form 2 (7 by 10-inch) rectangles. Spread the herb-cheese mixture with the back of a spoon evenly across 1 rectangle. Lay the second rectangle across the coated piece, egg side-down. With the rolling pin lightly roll the 2 sheets together to seal. With a large knife cut crosswise into strips, about 1/3-inch wide each. (Alternately, you can use a pizza wheel to cut the strips.) One at a time, grab the ends of each strip and twist in opposite directions to form a spiral. Transfer to the prepared baking sheets. Bake until light golden brown, about 10 minutes. Remove from the oven and let cool on baking sheets until cool enough to handle. Serve either warm or at room temperature.

CHEESE TWIST CHRISTMAS TREE

Cheese Twist Christmas Tree image

Wow the guests at your next holiday party with this delicious, pull-apart Christmas tree appetizer. The combination of crispy, buttery, flaky puff pastry wrapped around cheese and pesto is a stellar combination. Serve as-is or alongside some spicy tomato sauce for dipping.

Provided by Chef John

Categories     Christmas Appetizers

Time 1h15m

Yield 8

Number Of Ingredients 4

1 (14 ounce) package frozen puff pastry, thawed
2 teaspoons all-purpose flour, or as needed
⅓ cup prepared pesto sauce, divided
2 ounces Parmigiano-Reggiano cheese, divided

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line 2 baking sheets with a silicone liner (such as Silpat®).
  • Roll pastry into a 14-inch square, sprinkling with flour if necessary.
  • Cut from the bottom corners up to the center top to make a triangle. Place the triangle on a prepared baking sheet and place in the refrigerator.
  • Overlap the long edges of the 2 remaining pieces of pastry by about ½ inch to form a second triangle. Roll to flatten slightly. Place on the second prepared baking sheet and chill until needed.
  • Remove the first triangle from the refrigerator. Lift the silicone liner and pastry off the pan and onto the counter. Trim about 1 ½ inches off the bottom of the triangle and cut a 2-inch piece from that strip. Tuck that piece under the triangle to make a trunk.
  • Spread all but 1 to 2 tablespoons pesto sauce over the entire triangle, leaving ¼ inch exposed at the edges. Grate most of the Parmigiano-Reggiano cheese over the pesto. Place the second pastry triangle over top; stretch and pull it to fit, and trim off any extra dough as needed. Lightly press the edges together to seal and pat over the whole surface of the dough.
  • Use a pizza wheel to cut ¾-inch horizontal strips on one side of the tree going from the outside edge in to about ¼ to ½ inch from the center; leave the center part connected to form the trunk. As you move up the tree, it may be easier to place the pizza wheel at the trunk and cut out to the edge. Repeat on the other side, lining up the cuts with the first side.
  • Lift up each strip and twist 3 to 4 times. As you get up to the shorter pieces near the top, twist as many times as you can, but don't worry if you can't twist the strips at the very top.
  • Brush remaining pesto over the center of the tree and any other spots you feel need it. Transfer the silicone liner back onto a baking sheet. Grate remaining cheese over top.
  • Bake in the center of the preheated oven until pastry is fully cooked and well browned, 30 to 35 minutes; do not undercook.
  • Transfer to a wire rack and cool for 15 minutes before serving.

GUAVA AND CREAM CHEESE TWISTS

Guava and Cream Cheese Twists image

In Puerto Rico and other parts of the Caribbean, pastelillos (also known as pastelitos) are flaky pastry turnovers that taste like bliss when eaten fresh from the bakery, their jammy guava centers fused with creamy cheese. These cookies capture a bit of that magic in packable, sturdy sweets that can be kept for days and easily shared or shipped. Instead of being filled with perishable cream cheese, these have it blended into their buttery dough to incorporate that tangy richness. Guava paste seals into the pastry while baking, delivering a chewy fruitiness with each bite.

Provided by Genevieve Ko

Time 2h

Yield About 50 cookies

Number Of Ingredients 8

1/2 cup/113 grams unsalted butter, softened
4 ounces/116 grams cream cheese, softened
2 tablespoons granulated sugar
3/4 teaspoon fine sea salt
1 large egg, yolk and white separated
1 cup/130 grams all-purpose flour, plus more for rolling dough
11 1/3 ounces/320 grams guava paste (see Tip)
Sparkling sugar, for sprinkling (optional)

Steps:

  • Using an electric mixer on medium-high speed or a large bowl and wooden spoon, beat butter and cream cheese until creamy and smooth. With the machine running, add sugar and salt, and continue beating until a little fluffy. Add egg yolk and beat until incorporated. (Reserve egg white.) Add flour all at once and mix just until incorporated. Halve the dough, and place each half on plastic wrap. Using the plastic wrap, press each half into a 1-inch-thick rectangle. Wrap tightly and refrigerate until firm, about 2 hours.
  • When ready to bake, cut guava paste into 50 1/4-inch-thick rectangles (2 inches long, ½-inch wide). Line 2 baking sheets with parchment paper. Heat oven to 350 degrees.
  • On a generously floured surface, using a well-floured rolling pin, roll out 1 dough rectangle until roughly 15 1/2 inches long, 6 1/2 inches wide and 1/8-inch thick. Trim the edges, then cut into 24 (2 1/2-by-1 1/2-inch) rectangles. (You will have 48 rectangles from the initial rolling; the final two rectangles will come from rolled-out scraps.) Transfer to a prepared sheet, spacing 1 inch apart. If the dough has gotten too soft to handle, refrigerate until firmer but still very pliable.
  • Place a guava paste rectangle in the center of each piece of dough on a diagonal. (It should not extend past the dough.) Take the dough corner opposite the top of a guava rectangle and wrap it over the guava paste so that the point meets the opposite edge; press the dough corner gently to secure. Take the corner diagonally opposite to the folded one and fold over the other end of the guava paste, pressing the corner gently against the other edge. Repeat with the remaining dough and guava paste. Chill and reroll dough scraps. If the assembled dough is soft, and you'd like to decorate the tops, chill or freeze again.
  • For a sparkly, crunchy and sweet top, lightly brush the top of the dough with the reserved egg white and sprinkle with sparkling sugar. (These taste just as good without any topping.) Bake, 1 sheet at a time, until golden brown around the edges, 13 to 15 minutes. (The paste may ooze out.) Cool completely on the sheets on wire racks. The cookies are best the day they're made, but will keep in an airtight container for up to 5 days.

CHEESE TWISTS

Cheese Twists image

Provided by Food Network

Categories     side-dish

Time 30m

Number Of Ingredients 7

2 large egg yolks
1 large egg
1/4 cup whole milk
Store-bought puff pastry, rolled into 1 (12 by 20-inch) rectangle, about 1/8-inch thick
1/3 cup grated Parmesan cheese
Pinch salt
Pinch finely ground pepper

Steps:

  • Prepare the egg wash: Combine the yolks, whole egg, and milk in a small mixing bowl and whip with a hand whisk until well combined. Preheat the oven to 400 degrees. Flour the dough and table as needed to keep the dough from sticking to the table or the rolling pin. Place the dough on your work surface with a long side facing you. Use a pastry brush to coat the surface of the rectangle with some egg wash. Liberally sprinkle the Parmesan cheese over the rectangle, followed by the salt and pepper. Use a sharp paring knife to cut the rectangle into 1-inch-wide strips from top to bottom. Flip each strip so that the cheese is on the bottom. Twist each strip by rolling each end in opposite directions. Always remember to twist so that the topping faces out --that way you can see how they are flavored. Place the strips on a parchment paper-covered baking sheet and bake until well risen and golden brown, about 20 minutes. Cool completely on a wire rack before serving. These puff pastry items are best eaten the day they are made.

  • PREPARE CHEESE TWISTS: Unroll the two sheets of puff pastry dough onto a lightly floured cutting board or parchment paper. Each sheet should be about 10 x 12 inches (stretch a bit if needed). In a small bowl, mix together water, egg, salt and mustard powder mustard. Lightly brush this egg wash on the puff pastry sheets. Sprinkle on the cheese and thyme (if using) evenly. Press down gently with the heel of your hand (or a rolling pin) to make the cheese stick to the dough. Using a pizza cutter or knife, cut first sheet into about 12 strips. Also cut the strips in half if you want shorter twists and twice as many. Repeat with 2nd sheet of dough.

  • Preheat the oven to 400°F. Ready a baking sheet by lining with parchment, if you have it; otherwise, just get out a baking sheet, no need to grease it., Place the pastry on a well-floured work surface, and roll it into a 12" x 24" rectangle, about 1/8" thick., Brush some of the beaten egg/water over the dough, saving the remainder for later., If you're using the paprika and/or cayenne, mix with the grated cheese.
  • Sprinkle the cheese over half the pastry (12" x 12" piece of pastry)., Fold the dough without filling atop the piece with filling, to make a 12" square., Gently roll till the two halves stick together; you'll now have a rectangle about 12" x 13"., Cut the rectangle in half lengthwise to make two rectangles, each 6" x 13"., Cut each rectangle crosswise into 3/4"-wide strips; you'll cut about 17 strips from each piece of dough, about 34 strips total., Pick up a dough strip and twist each end in opposite directions until the dough is a spiraled cylinder.
  • Place it on the prepared baking sheet. Repeat with the remaining dough strips, leaving about 3/4" between them., Brush with the remaining egg wash.

  • Heat the oven to 375°F and line 2 baking sheets. Arrange a rack in the middle of the oven and heat the oven to 375°F. Line 2 baking sheets with parchment paper or silicone baking mats and set aside.
  • Dust the counter with 1/4 cup of cheese. Sprinkle a work surface with 1/4 cup of the cheese.
  • Place 1 sheet of the puff pastry on the cheese. Unfold or unroll 1 of the puff pastry sheets onto the cheese. If the pastry isn't quite thawed, don't force it.
  • Top with another 1/4 cup of cheese. Sprinkle 1/4 cup of the cheese over the puff pastry.
  • Roll out to 1/8-inch thick. Using a rolling pin, roll the pastry out until 1/8-inch thick. This presses the cheese into the pastry and also smoothes out any seams or wrinkles.
  • Top with another 1/4 cup of cheese. Sprinkle the pastry with 1/4 cup of the cheese.
  • Roll out again to 1/8-inch thick. Roll the pastry out again until 1/8-inch thick. The exact dimensions of the puff pastry don't matter. Aim for one side to be about 10 inches long to make longer puff pastry straws, or aim for 6 to 8 inches for shorter straws.
  • Cut into strips. Using a knife and cutting straight down (do not saw), cut the pastry into long strips about 1-inch wide. Again, dimensions don't really matter, but I like my long puff pastry straws to measure about 10 inches.
  • Transfer to a baking sheet and twist. Transfer each strip to one of the baking sheets, spaced an inch or so apart. As you set them down, twist the ends in opposite directions to give the straws a spiraled look.
