ROASTED SPANISH PEANUT CLUSTERS

Steps:
- Set oven to 350F
- Put the peanuts on a dry baking sheet and toast for about 10-15 minutes, or until you begin to smell their aroma. Let them cool. Skip this step if you are using roasted peanuts.
- Set up a baking sheet lined with parchment or waxed paper.
- Put the chopped chocolate in a small microwave safe bowl and microwave for one minute. Stir to melt. Microwave for an additional 30 seconds if necessary. Let the heat of the bowl and chocolate help to completely melt it as you stir, don't over microwave or the chocolate will seize up.
- When the chocolate is completely smooth, add in the peanuts and give a quick stir to coat them.
- Use a tablespoon to make little piles of the chocolate on the lined baking sheet. Let them sit until set at room temperature, or you can put them in the fridge for quicker setting.
- I like to store these in the fridge.
SUGAR SPANISH PEANUTS
Spanish peanuts coated in a hard sugar great for snacking! For added kick you can add cayenne pepper to peanuts while cooking. Peanuts will be very hot do not handle with bare hands!

Steps:
- Line a baking sheet with a plain paper bag or parchment paper.
- Mix peanuts, sugar, and water together using a wooden spoon in a large pot over medium-low heat; cook, stirring constantly, until liquid is evaporated and peanuts are coated, 20 to 30 minutes. Carefully pour coated peanuts onto the prepared baking sheet to cool completely.

CLASSIC COCKTAIL PEANUTS
Peanuts spiced with paprika, ground mustard and cinnamon make the perfect snack for cocktails.

Steps:
- Mix together the sugar, paprika, thyme, mustard, cinnamon, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in a small bowl and set aside.
- Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
- Put the egg white in a large bowl and whisk until frothy. Add the peanuts and toss to coat in the egg white. Add the spice blend and toss again to coat.
- Spread the nut mixture evenly out onto the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then transfer to a large bowl.
