BLUEBERRY BANANA COCONUT FLAX MUFFINS
When the local library ladies asked me to send them the recipe for the muffins that I'd brought to story time, I realized I'd created something special. They were enjoyed by the kids and adults alike. Delicious and wholesome, the coconut, banana, and flax add a little something extra to the boring old blueberry muffin.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 24 muffin cups or line with paper muffin liners.
- Whisk together flour, oats, flax, sugar, coconut, cinnamon, baking powder, baking soda, and salt in a bowl.
- Whisk together bananas, sour cream, applesauce, melted butter, eggs, and vanilla in a large bowl. Stir flour mixture into banana mixture just until all dry ingredients are moistened; fold in blueberries. Fill muffin cups 2/3 full.
- Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 20 minutes.

Steps:
- Preheat oven to 375°. Line muffin cups with paper muffin liners.
- Whisk together flour, baking powder, and salt in a bowl. Whisk together bananas, butter, sugar, egg, vanilla, and 1/2 cup coconut in a large bowl until combined well, then fold in flour mixture until flour is just moistened.
- Divide batter among lined muffin cups and sprinkle with remaining 1/4 cup coconut.
- Bake until muffins are puffed and golden, about 25 minutes.
- Transfer muffins to a rack and cool slightly.
COCONUT BANANA BREAD MUFFINS
Steps:
- Preheat oven to 350 degrees.
- Spray your mini muffin tin with non stick cooking spray.
- Mash your bananas, and add your applesauce, milk, egg, salt, and vanilla until fully combined.
- Mix in your sugar, baking soda and baking powder.
- Add your flour and mix until it is fully combined.
- Stir in your coconut.
- Add a spoonful of batter into each hole, of the muffin tin. Don't overfill it, but just fill it until it almost reaches the top of the hole.
- Bake for 15 minutes, or until the edges become golden, then remove from the oven.
- Let cool, and enjoy.

- Whisk together the flour, baking powder, baking soda and salt in a large bowl. Cream butter, eggs, sugar and vanilla with mixer. Combine with flour mixture and continue mixing while adding buttermilk and mashed bananas. Fold in 1/2 cup of the blueberries with a spoon.
- Spray a 12 cup muffin pan with cooking spray, fill cups with batter. Sprinkle remaining 1/2 cup blueberries and the shredded coconut over each muffin. Muffin cups will be full. Bake in preheated 400 degree oven for 25 minutes watching to make sure coconut is brown and does not burn. Some ovens get hotter than others. My muffins are usually done and the coconut is perfectly toasted in 20 to 25 minutes. Makes 12 large muffins.
