FRIED COCONUT BANANAS

Steps:
- Heat the sugar in a small frying pan. When melted, add the bananas and caramelise on each side for 3-4 mins. Lift out and set aside.
- Tip the coconut milk into the pan with a pinch of salt, stir into the sugar and bubble until syrupy. Divide between 2 bowls, top with the caramelised bananas, then add a scoop of ice cream and scatter with toasted coconut.

- In a medium saucepan over medium heat, stir together milk and sugar until smooth. Heat, without stirring, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and stir in coconut and vanilla. Let cool slightly.
- Drop by rounded spoonfuls onto waxed paper lined sheets and let cool completely.

Steps:
- Take a deep bottomed pan, keep it on medium flame and heat water in it. Add the grated coconut in the pan and let the ingredients boil for 10 minutes and then stir in sugar.
- Continue whirl the mixture until the coconut in the mixture becomes rigid in texture. This process will take around 25 to 30 minutes. Once done remove the pan from the flame.
- Add cinnamon powder, baking powder and vanilla extract in the prepared mixture. Mix all the ingredients thoroughly.
- Take a clean tray or plate and gently pour prepared mixture on it. Allow the mixture to cool down and once the candy becomes rigid, cut pieces and serve.

BANANA FRITTERS
Steps:
- Heat canola oil in a sauce pan to 375ºF. Adjust the amount of canola oil based on the size of the saucepan. You will want at least 3 inches of oil.
- Meanwhile, peel and cut bananas. Cut each banana into 3 sections
- In a medium bowl, add flour, baking powder, salt, and sugar and mix to combine.
- Next, add the milk, egg, vanilla, and butter. Whisk until the batter is smooth. Pour batter into a mason jar (or tall glass).
- Pierce the center of each banana with a popsicle stick. Dip the banana into the pancake batter and hold it above the jar to allow excess batter to drip off. Gently place the banana into the hot oil and fry for 5-6 minutes, flipping if necessary. Remove from oil and place on a paper towel lined plate to remove excess oil.
- Sprinkle each with powdered sugar and serve with maple syrup to dip. Enjoy!
