COCONUT CHIA PUDDING
A coconutty chia pudding that uses only a handful of ingredients and one bowl to make!

Steps:
- Mix all the ingredients together in a bowl.
- Let sit on the counter for 10 minutes, giving it a stir every 2-3 minutes.
- Cover and place in the fridge to firm up for 1-2 hours.
- Remove and enjoy.

CHIA PUDDING WITH COCONUT MILK
Steps:
- Combine all ingredients. Combine coconut milk and chia seeds in a jar and stir thoroughly. Mix in vanilla if using. Allow for 2-3 minutes for the mixture to settle before mixing thoroughly again until no clumps are visible.
- Chill. Cover the jar and place it in the refrigerator for at least 1-2 hours or overnight to thicken.
- Serving suggestions. Serve chilled and enjoy as is or with sweetener of your choice and your favorite toppings/flavors.
COCONUT-CHIA PUDDING BREAKFAST BOWL
Chia seeds, fruit and nuts combine to make a breakfast bowl with a healthy dose of omega-3 fatty acids (thanks, chia) and fiber (thanks again to chia, plus the fruit and nuts). Coconut milk is high in the saturated fat lauric acid, which may help boost immunity, so it's fine in moderation - especially in this super-satisfying chia pudding that's reminiscent of tapioca. And who doesn't love dessert for breakfast?

- Stir together the coconut milk, chia seeds and maple syrup in a cereal bowl. Refrigerate overnight, covered, to allow the seeds to plump and the mixture to thicken into a loose pudding.
- Uncover the pudding, and arrange the pineapples, kiwis, raspberries, almonds and coconut flakes in neat piles on top of the pudding. Then take a photo!

CHIA COCONUT PUDDING WITH COCONUT MILK

- Place chia seeds in a bowl.
- Whisk coconut milk, unsweetened coconut milk, agave nectar, vanilla extract, cinnamon, and salt together in a bowl; pour over chia seeds and stir well. Allow coconut milk-chia seed mixture to soak until thickened, at least 20 minutes, or cover bowl with plastic wrap and refrigerate overnight.
- Stir pudding and top with strawberries.

- In a medium mixing bowl or large liquid measuring cup, stir together the coconut milk, chia seeds, maple syrup, vanilla, and salt so that the chia seeds are evenly distributed throughout. I find a fork works well for this. Cover and refrigerate overnight. If you think of it, give the mixture one more stir before bed. If you forget, don’t stress over it.
- In the morning, stir once more to evenly combine the seeds throughout. Taste and add more maple syrup if you'd like it a bit sweeter. Portion into your bowl, then add toppings of choice. Enjoy!
