2 cups almond flour (not almond meal)
1/2 teaspoon baking soda
1/4 teaspoon kosher or sea salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup coconut sugar
1 large egg, whisked
2 teaspoons pure vanilla extract
1 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment.
  • Place the almond flour, baking soda and salt in a food processor and pulse until combined.
  • Add the butter, coconut sugar, egg and vanilla and pulse until thoroughly combined, about 1 minute. Stir in the chocolate chips.
  • Spoon the cookie dough onto the prepared baking sheet in 2-tablespoon portions, spacing them apart. Use the palm of your hand to gently press the cookies down and flatten slightly. Bake until golden brown, 8 to 10 minutes. Transfer the cookies to a wire rack to cool. Repeat with the remaining cookie dough.

1 cup almond flour (almond meal may be used)
1/4 cup coconut flour
1/4 teaspoon baking soda
1 pinch salt
1/4 cup coconut oil, melted
1/4 cup honey (or other liquid sweetener)
1 teaspoon vanilla
2 eggs
1/2 cup unsweetened dried shredded coconut (sweetened can be used)
1/2 cup chocolate chips

Steps:

  • Wisk dry ingredients together braking up clumps.
  • Add wet ingredients and stir with a spoon.
  • Stir in coconut and chocolate chips.
  • Put into a parchment lined 8 x 8 in baking dish and bake at 350 for 15-20 minutes. It's done when its just starting to get golden around the edges.
  • I've ip used milk and semisweet chocolate here, both are great.
