1 ¼ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup butter
½ cup packed brown sugar
½ cup white sugar
1 egg
½ teaspoon vanilla extract
1 ⅓ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Combine the flour, baking soda, and salt; set aside.
  • In a medium bowl, cream the butter, brown sugar, and white sugar until smooth. Beat in the egg and vanilla until light and fluffy. Gradually blend in the flour mixture, then mix in the coconut. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Cookies should be about 3 inches apart.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted. Cool on wire racks.

1/2 cup flour
1/8 teaspoon salt
1 teaspoon vanilla or 1 teaspoon almond extract
1 egg
1/2 cup nuts, chopped (your favorite)
1/2 cup coconut

Steps:

  • Preheat in 350 degree oven.
  • Cream butter and 1/4 cup sugar till light and fluffy.
  • Stir in 1/2 cup flour.
  • Put in greased 8 X 8"pan and bake at 350 degrees for 10 minutes.
  • (You may have to press it out to a thin layer.) Meanwhile, mix remaining 1/2 cup sugar, 2 tbsps.

  • Bake 20 to 25 minutes or till golden.

1/2 cup butter or 1/2 cup margarine, softened
1 cup flour
1 tablespoon brown sugar
2 eggs, beaten
1 1/2 cups brown sugar, firmly packed
1/2 teaspoon vanilla
1 cup coconut
1/2 cup chopped nuts
1/2 teaspoon baking powder

Steps:

  • Combine the first three ingredients and pack the mixture into a buttered 8 inch square pan.
  • Bake at 350 degrees for 15 minutes.
  • Combine ALL remaining ingredients and pour over baked layer.
  • Return to oven and bake 30 minutes longer.
  • Cool completely and cut into squares.

ICING:
2 cups confectioners' sugar
1/4 cup baking cocoa
5 tablespoons evaporated milk

Steps:

  • In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine flour, cocoa and walnuts; add to the creamed mixture. Spread into a greased 13x9-in. baking pan. Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. , Combine condensed milk and coconut; carefully spread over the hot chocolate layer. 1 cup dried bread crumbs
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut
1 ⅔ cups sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.

3 cups Oreo cookie crumbs
2 cups sweetened shredded coconut
1/2 cup cream of coconut
FILLING:
1/3 cup butter, softened
3 tablespoons cream of coconut
1/4 teaspoon coconut extract
3 cups confectioners' sugar
1 to 2 tablespoons 2% milk
TOPPING:
1-1/2 cups semisweet chocolate chips
4 teaspoons canola oil
3 Mounds candy bars (1-3/4 ounces each), coarsely chopped, optional

Steps:

  • Microwave butter on high until melted; stir until smooth. Stir in cookie crumbs, coconut and cream of coconut until blended (mixture will be wet). Spread onto bottom of an ungreased 13x9-in. baking pan. Refrigerate until set, about 30 minutes., For filling, beat butter, cream of coconut and extract until smooth.
