PUREED RASPBERRIES WITH CHAMPAGNE



Pureed Raspberries With Champagne image

Great at any brunch or a sunny spring morning! Found this on napastyle.com and this is the way I used to make years ago.

1/2 pint fresh raspberry
1 tablespoon superfine sugar
1 lemon
champagne or sparkling wine

Steps:

  • Puree raspberries with superfine sugar and a squeeze of lemon.
  • Puree until smooth and adjust the consistency with a little water until the puree coats a spoon.
  • Strain through a sieve with the handle of a rubber spatula.
  • Finish by gently pressing the puree through the sieve with the blade of the spatula.
  • Doing this will keep the small raspberry seeds from clogging the strainer.
  • Spoon a couple of teapoons of the raspberry puree in the bottom of a champagne flute.
  • Gently fill the glass with champagne.
  • Then serve!
  • HINT:.
  • *Another way to serve this is to fill the glass halfway first; then stir the puree with the champagne to blend. Finish with champagne to fill the glass.
  • **Use with any berries of your choice or perhaps currants.

2 1/2-pint baskets fresh raspberries
2 tablespoons sugar
1/2 cup plus 2 tablespoons raspberry liqueur
1/4 cup cognac or other brandy
8 sugar cubes
1 750-ml bottled chilled brut champagne
Fresh raspberries
Lemon peel strips

Steps:

  • Combine 2 baskets raspberries and 2 tablespoons sugar in medium bowl. Mash berries lightly with fork. Let stand 15 minutes. Mix in liqueur and brandy. Pour into jar. Cover and let stand in dark cupboard 3 days. Strain raspberry mixture, pressing on solids with spoon to extract as much liquid as possible. (Can be made 1 month ahead. Cover; chill.)
  • Place 1 sugar cube in each of eight 6-ounce champagne flutes. Pour 2 tablespoons raspberry mixture over each sugar cube. Pour champagne over to fill glasses. Garnish each with raspberries and lemon peel.

Recipe I found in US magazine, and want to try. By Padma Lakshmi, author of Tangy Tart Hot & Sweet. Seems easy, and I'm going to try it with a sparkling juice.

6 strawberries, diced
8 strawberries, whole, beautiful for garnish
6 tablespoons raspberry sorbet
15 mint leaves, torn apart
1 (24 ounce) bottle Brut champagne or 1 (24 ounce) bottle prosecco

Steps:

  • Slice the whole strawberries vertically, just halfway up to the crown. Set aside to use as garnish.
  • Just before serving, place a tablespoon of sorbet in the bottom of a champagne flute. Place the mint leaves and some chopped strawberries in the glass and pour in the champagne, being careful not to full it so much that it froths over.
  • Garnish each glass (makes 4-6 with a sliced strawberry and serve immediately.
  • *I had to enter a size for the bottle of champagne, but I'm not sure how much is in a bottle. Just use a standard size bottle of champagne.

  • If you can't purchase fresh raspberry juice, make your own by blending fresh raspberries with water and sugar and straining to remove seeds. Fill ice cube trays with raspberry juice, garnishing each with a lemon twist and freeze until solid. To serve, place one raspberry cube in a champagne flute and fill with champagne.

  • Add the raspberries, remove from the heat, and cover; let stand for 10 minutes.
  • Pass the mixture through a food mill with a fine disk, or press it firmly through a mesh strainer with a flexible rubber spatula; discard the seeds.
  • Chill the mixture thoroughly, then freeze it in your ice cream maker according to manufacturer's directions.

sugar (made by leaving a vanilla bean stick in your sugar over a long period of time, you need enough to co)
2 tablespoons Chambord raspberry liquor (raspberry liquor)
1 tablespoon Chambord raspberry liquor
2 -3 raspberries
enough champagne, to fill the rest of the glass

Steps:

  • Place the sugar in a small dish.
  • Place the 1 tbsp chambord in a small dish.
  • Dip rim of a flute glass (or other tall thin glass) into chambord then into sugar.
  • Let dry completely.
  • Place a few raspberries in bottom of glass.
  • Fill with 2 tbsps of chambord.
  • Fill rest of glass to top with champagne.
