1/2 cup confectioners' sugar
1 (14 ounce) can sweetened condensed milk
1 (3 ounce) package instant coconut cream pudding mix
1 (12 ounce) carton frozen whipped topping, thawed,divided
1 1/2 lbs poundcake, cut into 1 inch cubes
1 quart blueberries, fresh or frozen,thawed
1 quart fresh strawberries, cut in half
1 cup coconut, divided
additional blueberries (optional)
additional strawberry (optional)
1/4 cup coconut, cooked to light brown (optional)

Steps:

  • In a mixing bowl, beat cream cheese and confectioners' sugar.
  • Add milk and pudding mix; mix well.
  • Fold in 1-1/2 cups of whipped topping.
  • Place half of the cake cubes in a 4-quart glass bowl.
  • Layer with half of the berries, coconut, and pudding mix.
  • Cover with remaining cake cubes.
  • Layer with the remaining berries, coconut, and pudding mixture.
  • Spread remaining whipped topping over top.
  • Garnish with additional berries and lightly brownish coconut if desired.

1 (18 1/2 ounce) box yellow cake mix
1 (3 1/2 ounce) package instant vanilla pudding
1 1/3 cups water
1/4 cup vegetable oil
4 large eggs
1/2 cup sweetened flaked coconut
1 cup chopped walnuts (optional)
2 3/4 cups sweetened flaked coconut
4 tablespoons butter
1 (8 ounce) package cream cheese
3 1/2 cups sifted confectioners' sugar
2 teaspoons milk
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Combine cake mix, pudding mix, water oil and eggs in a large mixing bowl.
  • Blend with electric mixer at medium speed for 4 minutes.
  • Stir in 1/2 cup coconut and nuts.
  • Pour into 3 greased and floured 9-inch pans.
  • Bake 35 minutes.
  • Frosting: Saute 2 3/4 cups coconut in 2 tablespoons butter until golden brown.
  • Remove from heat and spread onto paper towels to drain.
  • Cream 2 tablespoons butter with cream cheese.
  • Add confectioner's sugar and milk in small amounts, beating well between each.
  • Blend in vanilla.
  • Stir in 2 cups sauteed coconut.
  • Frost between cake layers, top, and sides.
  • Garnish with remaining sauteed coconut.

1/2 cup butter, melted
1 cup all-purpose flour
1-1/4 cups sweetened shredded coconut
1/4 cup packed brown sugar
1 cup slivered almonds
2-2/3 cups cold milk
1/2 teaspoon coconut extract
2 packages (3.4 ounces each) instant vanilla pudding mix
2 cups whipped topping
Fresh strawberries, optional

Steps:

  • In a large bowl, combine the first five ingredients; press lightly into a greased 13-in. x 9-in. baking dish. Bake at 350° for 25-30 minutes or until golden brown, stirring every 10 minutes to form coarse crumbs. Cool. , Divide crumb mixture in half; press half into the same baking pan. Nonstick vegetable oil spray
2 3/4 cups cake flour plus more for pans
2 1/2 cups unsweetened shredded coconut (not reduced-fat)
1 tablespoon baking powder
2 teaspoons kosher salt
2 3/4 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
5 large eggs
1/2 cup coconut oil, warmed to melt
1 cup buttermilk
Frosting and assembly:
4 cups unsweetened coconut chips
2 8-ounce packages cream cheese, room temperature
1 1/2 cups (3 sticks) unsalted butter, room temperature
1 1/2 tablespoons plus 1/4 cup Southern Comfort
1/2 teaspoon kosher salt
5 cups powdered sugar

Steps:

  • For cake:
  • Arrange racks in top and bottom thirds of oven; preheat to 350°F. Coat cake pans with nonstick spray; dust with flour. Whisk 2 3/4 cups flour and next 3 ingredients in a medium bowl. Using an electric mixer, beat sugar and butter at medium speed, occasionally scraping down sides of bowl, until smooth, 3-4 minutes. Add eggs one at a time, beating to blend between additions. Beat until light and fluffy, 2-3 minutes. Gradually beat in oil. Beat in dry ingredients at low speed in 3 additions, alternating with buttermilk in 2 additions, beginning and ending with dry ingredients. Divide among four 9" cake pans (about 2 generous cups batter per pan); smooth tops with a spatula.
  • Bake until a tester inserted into center of cakes comes out clean, 22-27 minutes. Transfer pans to wire racks; let cool in pans for 5 minutes. Invert cakes onto racks, remove pans, and let cakes cool completely.
  • For frosting and assembly:
  • Preheat oven to 350°F. Place coconut chips in a single layer on a rimmed baking sheet lined with parchment paper. Toast until some of the chips are golden brown (some will remain white), 5-7 minutes; let cool completely. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.
  • Using an electric mixer, beat cream cheese and butter on high speed, occasionally scraping down sides of bowl, until smooth and creamy, 2-3 minutes. Add 1 1/2 tablespoons Southern Comfort and salt; beat to blend, about 1 minute longer. Add sugar; beat on low speed to blend. Increase speed to high; beat until fluffy, 5-6 minutes.
  • Using a long serrated knife, cut each cake in half horizontally. Place 1 layer, cut side up, on a cake stand or plate. Lightly brush with about 1/2 tablespoon of Southern Comfort. Spread 1/2 cup frosting over. Repeat with remaining 7 layers, Southern Comfort, and frosting. Chill cake for 30 minutes. Leave remaining frosting at room temperature.
  • Cover sides of chilled cake with frosting. Cover cake loosely with foil and chill overnight. DO AHEAD: Can be made 2 days ahead. Keep chilled. Let cake stand at room temperature for at least 30 minutes.
  • Gently pat handfuls of toasted coconut chips over sides and top of cake and serve.

Steps:

  • Preheat oven to 350°. Line bottoms of two greased 9-in. round baking pans with parchment or waxed paper; grease paper., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, mix flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 22-27 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a small bowl, mix filling ingredients until blended. Using a long serrated knife, cut each cake layer horizontally in half. Place one cake layer on a serving plate. Add vanilla; beat on high until stiff glossy peaks form, about 7 minutes., Spread over top and sides of cake. If desired, sprinkle with additional coconut. Refrigerate, covered, until serving.

2 cups sweetened shredded coconut flakes
2 Coconut Cake
Robert Carter's Simple Syrup
Coconut Filling
Coconut Cake Frosting

Steps:

  • Preheat oven to 375 degrees. Spread coconut flakes in an even layer on a parchment paper-lined baking sheet. Bake until golden, 5 to 7 minutes; set aside to cool.
  • Using a serrated knife, trim tops of cakes to make level; discard trimmings. Cut each cake into 3 even layers. Place four strips of parchment paper around perimeter of a serving plate or lazy Susan.
  • Place one layer on the cake plate. Brush with about one-fifth of the simple syrup. Spread over 2 cups of filling. Place a second layer on top. Repeat process with the next four layers and top with last remaining layer.
  • Spread top and sides of cake with frosting, keeping in mind you may not need to use all of it. Press toasted coconut into sides of cake; remove parchment paper strips. Chill cake at least 5 hours and up to 5 days. Slice immediately; bring to room temperature before serving.

Steps:

  • First, crush the biscuits or crackers into a fine meal in a bowl.
  • To this, add sweetened condensed milk and mix well until the batter becomes a sticky consistency.
  • Take two tablespoons of batter and roll into a ball.
  • In a separate bowl, empty the packet of fine desiccated coconut and coat the ball in the coconut flakes.
  • Repeat with the rest of the mixture until done.
  • Once the balls are well-coated with the coconut, place in a container and refrigerate for 2-3 hours.
  • Retrieve and serve.
