COCONUT GUMDROP COOKIES

Buttery cookies with coconut and fruity, chewy gumdrops. I remember Mom making these fun cookies quite often when I was a kid!

Number Of Ingredients 12

2 c. all-purpose flour, divided
1-1/2 c. chopped gumdrops, divided - aim for 1/4" to 3/8" pieces
1 c. unsalted butter, at room temperature
1 c. packed brown sugar
1 c. sugar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. kosher salt
2 large eggs, slightly beaten
1 c. unsweetened flake coconut
1-1/2 c. old fashioned oats
1 tsp. pure vanilla extract

Steps:

  • Preheat oven to 350° F. Very, very lightly spray two baking sheets with non-stick spray and set aside.
  • In a small bowl, toss 1/2 cup of the flour with 1 cup of the chopped gumdrops to evenly coat. Break apart any pieces that want to stick together to coat fully with flour. Set aside.
  • In the bowl of a stand mixer, cream butter on medium high speed for 2 minutes. Add brown sugar and sugar, and beat to combine.
  • In a medium bowl, sift together remaining 1-1/2 cups of flour, baking soda, baking powder, and salt. With mixer on low, alternate adding flour mixture and beaten eggs in two separate additions each. Beat just until incorporated each time. Add coconut, oats, and vanilla, and mix until incorporated. With a spatula, fold in the gumdrop pieces that have been coated with flour.
  • With a medium scoop (mine is 1-5/8″ in diameter), packed tightly with cookie dough, drop dough onto a prepared pan leaving 2" between each one. Or portion out about 2 tablespoons of dough and roll slightly to form a ball. Press in 2 to 4 more of the reserved gumdrop pieces into each dough ball, using more if desired. Bake for 11 to 12 minutes, or until edges are set and lightly golden brown. Do not over bake.
  • Remove from oven and let cookies rest on pan for 2 minutes before transferring them to a wire rack to cool completely. These cookies freeze very well.

Nonstick cooking spray
1 cup sugar
1 cup light-colored corn syrup
0.5 cup unsweetened coconut milk
0.25 cup water
1 ounce powdered fruit pectin
0.5 teaspoon baking soda
1 Coconut Sugar, recipe below
0.5 cup toasted coconut
0.25 cup granulated sugar

Steps:

  • Line a 8x4x2-inch loaf pan with foil, extending foil over edges of the pan. Spray foil with nonstick cooking spray; set aside.
  • In a 1-1/2-quart heavy saucepan combine the 1 cup sugar and the corn syrup. Cook over medium-high heat to boiling, stirring constantly with a wooden spoon for 3 minutes to dissolve sugar. Avoid splashing mixture on sides of pan (see How to Avoid Gritty Candy, below). Carefully clip candy thermometer to side of pan.
  • Cook over medium heat (mixture should boil at a moderate, steady rate over the entire surface), stirring occasionally, until the thermometer registers 280 degree F, (soft-crack stage) about 7 minutes.
  • Meanwhile, in a heavy 2-quart saucepan combine coconut milk, water, pectin, and baking soda. (Mixture will be foamy.) Bring to boiling over medium heat, stirring constantly. This should take about 2 minutes. Remove saucepan from heat; set saucepan aside.
  • When sugar mixture in first saucepan has reached soft-crack stage, remove the saucepan from heat; remove candy thermometer. Return pectin mixture to boiling. Gradually pour the hot sugar mixture in a thin stream into the boiling pectin mixture, stirring constantly (this step should take 1 to 2 minutes). Cook, stirring constantly, 1 minute more.
  • Remove saucepan from heat. Pour candy mixture into prepared pan. Let stand about 2 hours or until firm.
  • When firm, use foil to lift candy out of pan. Use a wet knife to cut candy into about 3/4-inch squares. Roll squares in Coconut Sugar. Store loosely covered. Makes about 45 pieces. Coconut Sugar
  • Place 1/2 cup toasted coconut in a food processor. Cover and process until very finely ground. Add 1/4 cup granulated sugar. Store in an airtight container. Makes 1/2 cup.

1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 375 degrees.
  • In a large bowl, sift together the flour, salt, baking powder and baking soda, set aside.
  • In a separate bowl, cream butter, eggs, white sugar, brown sugar and vanilla.
  • Using a mixer, slowly incorporate the flour mixture in a couple of batches into the creamed mixture until completely mixed.
  • Stir in the coconut, oatmeal and gumdrops.
  • Drop dough onto ungreased cookie sheet.
  • Optional: Dot the top of the cookie dough with additional gumdrop pieces before baking.
  • Remove from oven, allow to rest on baking sheet for five minutes before removing and placing on wire rack.

Steps:

  • Take about 1 heaping tablespoon of dough and roll into a ball.
  • Place on a greased or parchment lined cookie sheet about 6 inches apart.
