LIME AND COCONUT CAULIFLOWER RICE
Sweet and zingy, this Thai inspired lime and coconut cauliflower rice is a delicious low carb vegan side dish that is ready to serve in 10 minutes.

Steps:
- Heat a large skillet on a medium heat.
- Add in the cauliflower rice, a few pinches of salt and pepper, lime zest and juice and the coconut milk.
- Mix together using a spoon and cook for 3 to 5 minutes, stirring occasionally, until soft.
- Stir in the coconut flakes.
- Garnish and serve.

- In a food processor, pulse the cauliflower until it reaches your desired "rice" consistency.
- In a large skillet over medium heat, heat oil, then add cauliflower rice and let cook for 5 minutes., stirring occasionally.
- Add coconut milk, lime juice and lime zest, combine well and allow to cook until the liquid has evaporated.
- Garnish with cilantro.
- Enjoy!

- Cut the cauliflower into florets. Add to a food processor in batches, and pulse briefly until a rice like texture forms. Do not over pulse!
- Spread out the cauliflower rice over the sheet pan and add in the shredded coconut. Toss with melted coconut oil, and sea salt. Transfer to the oven.
- Roast for 20-22 minutes, or until lightly golden. Toss with lime juice and zest, and salt to taste. Serve hot!
